- Four à vapeur combiné selon l'une quelconque des revendications 1 à 11, caractérisé par une soufflerie (26), montée en dehors de l'enceinte de cuisson (12) et raccordée du côté entrée et du côté sortie à l'enceinte de cuisson (12) par l'intermédiaire d'orifices (27, 27a) ménagés dans l'une des parois (16).
- Four à vapeur combiné selon l'une quelconque des revendications 1 à 12, caractérisé en ce que le générateur de vapeur (24) est monté en dehors de l'enceinte de cuisson (12) et est raccordé à l'enceinte de cuisson (12) du côté sortie de vapeur.
- Four à vapeur combiné selon la revendication 4 ou 10, caractérisé en ce qu'au moins une couche ferromagnétique, dont la température de Curie peut être exploitée pour la commande de la température, est stratifiée dans ou sur le matériau > métallique multicouche.
