The upper scale is chosen for an eccentric retaining bolt, where the blade can be placed in a 0 position or 6 mm outwards on the cutterhead disk. Accordingly, the lower scale is provided for an eccentric retaining bolt, in which the knife can be arranged offset in the 0 position or 3 mm outwards. In the present case, these are knives that have never been limited in length. Accordingly, the line on the bolt corresponds to the scale 0. The cutter head disk consists of a metallic core 16, which is encased with a plastic ring 17. In the present case, the plastic ring shrunk onto the metallic core. Dementsprechend wurden die Exzenterbolzen von ihrer 0-Stellung in die 6 mm-Stellung gedreht, um zu gewährleisten, dass der Abstand zwischen Messerspitze und Kutterschüssel konstant bleibt. Diese Drehung der Exzenterscheibe kann auch anhand der Skalierung erkannt werden, weil sich der Strich auf dem Bolzen 7 nicht mehr in der 0-, sondern in der 6 mm-Stellung befindet. Der Fachmann erkennt, dass die Skalierung zum einen erlaubt zu überprüfen, ob das Messer auf dem richtigen Bolzen sitzt und ob bei korrekt sitzenden Bolzen ein gekürztes oder ein Messer in Originallänge aufgesetzt werden muss. Die Schablone 12 kann um die Schraube 14 in und gegen den Uhrzeigersinn um jeweils 90° gedreht und in der entsprechenden Lage fixiert werden. Je nach Größe des Kutters kann die Schablone 12 nebst ihrer Fixierung auch noch in der durch den Doppelpfeil 15 dargestellten Richtung verschoben werden. In der oberen Darstellung ist ein Originalmesser, dessen Spitze noch nicht eingekürzt worden ist, auf der Vorrichtung eingespannt. Dementsprechend befindet sich die Schablone in 0-Stellung, die auch der Anordnung gemäß Figur 2 entspricht. Die untere Darstellung verdeutlicht die Situation, nachdem das Messer eingekürzt worden ist. Mittels der Schablone wurde ermittelt, dass das Messer um 6 mm gekürzt worden ist und der Betreiber weiß, dass die Exzenterbolzen in eine entsprechende Stellung gebracht werden müssen. Claims (4)

  1. Knife (8) having at least one means (4) with which the knife can be attached to a knife head disc (1) and an aperture (5) which is provided offset from the centre axis (3) of the knife (8) and accommodates a projection (2) arranged in the knife head disc (1), the aperture (5) being an elongated hole which preferably accommodates a pin (7), characterized in that the elongated hole (5) has a scale (6).
  2. Knife head comprising at least one knife head disc (1) for a meat cutter and at least one knife (8) according to Claim 1, said knife (8) being attached to the knife head disc (1), eccentric retaining pins (18) of the knife head disc being inserted into the holes (4) of the knife, and the elongated holes (5) of the knives accommodating pins (7) of the knife head disc, the pins not being arranged on one of its axes of symmetry but rather so as to be offset from a centre axis (3) of the knife (8).
  3. Knife head according to Claim 2, characterized in that the correct position of the eccentric pins (18) can be detected with reference to the scale (6).
  4. Knife head according to one of the preceding claims, characterized in that the knife head disc has a preferably metallic core (16) for accommodating the drive shaft, and the core (16) is enclosed by a casing (17), preferably a plastic casing, the casing (17) being shrunk onto the core (16).
