Abstract
La présente invention concerne un procédé permettant de soumettre un liquide à un bref traitement thermique en mélangeant de la vapeur dans ce liquide, puis en le soumettant à un refroidissement instantané en atmosphère déprimée. On obtient une durée très courte et facilement ajustable de maintien en température élevée grâce à une augmentation réglable de la quantité de vapeur injectée dans le liquide atteignant des valeurs dépassant celles avec lesquelles se produit une condensation au contact du liquide. Le procédé convient au traitement thermique, notamment la stérilisation, de matériaux sensibles à la chaleur, y compris les produits alimentaires de viscosité élevée.
