Abstract
A process is described whereby a fluid product such as milk undergoes heat treatment. The product is preheated in a regenerative heat exchanger, brought to a predetermined temp. in a hot water heater (indirect steam heater) and then passed through a steam injection point at which it is brought to the sterilisation temp. The temp. of the product is then maintained in a dwell loop before it is shock cooled in a flash vessel. The vapour from the flash vessel is drawn off via a water cooler by a vacuum/condensate pump and the product passes through the regenerative heat exchanger where a portion of its heat is recovered by the incoming cold product. The system allows flexibility in the choice of the temp. at which the direct steam injection commences and permits more than 50% of the energy used to be recovered in the regenerative heat exchanger. By varying the flash vapour draw-off, the product may be concentrated or diluted.
