Abstract

Die Erfindung betrifft ein Verfahren und eine Anlage zur industriellen Gewinnung von Saft aus Zuckerrüben, bei dem die zuvor gewaschenen Zuckerrüben zerkleinert werden und dann in Saft und einen festen Teil getrennt werden. Es ist die Aufgabe der Erfindung, mit einfachen Mitteln den Prozeß der Saftherstellung bei kontinuierlichem Verfahrensablauf so zu gestalten, daß die Saftgewinnung energetisch wesentlich günstiger abläuft und Abfallprodukte wieder vermehrt der tierischen Ernährung zugeführt werden können, und den Prozeß so auszuführen, daß die mit den Zuckerrüben in den Prozeß eingeschleppten Bakterien nicht wirksam werden können. Die Erfindung besteht darin, daß die Zerkleinerung der Zuckerrüben bei normaler Außentemperatur während der Rübenkampagne durch einen Mahl- oder Reibevorgang erfolgt, bei dem die Zellen mechanisch aufgeschlossen, aber nicht völlig auseinandergerissen werden, daß man dann die gemahlene Rübenmasse bei derselben Temperatur in einer Zentrifuge in einen flüssigen Anteil und einen festen Anteil trennt, daß man anschließend den festen Anteil einem weiteren Mahlvorgang in einer Mühle unterwirft, bei dem die Zellen weiter aufgeschlossen werden, und dann das Mahlprodukt bei derselben Temperatur in einer weiteren Trennvorrichtung wieder in einen füssigen und einen festen Teil trennt, daß man den erhaltenen kalten Saft nun schnell auf etwa 90° kurzzeitig erhitzt und ihm dann in geringer Menge ein Ausfällmittel beimischt und so das im Saft befindliche Eiweiß ausfällt und dann separiert, und daß man den erhaltenen reinen Saft nun zu Zuckerprodukten weiterverarbeitet.
