- b) jeder Messersatz weist eine axiale Förderkomponente auf;
- c) die Messersätze rotieren mit Drehzahlen zwischen 500 und 3000 U/min;
- d) die Messersätze sind in ihrer Konfiguration sowie in ihrem axialen Abstand voneinander so ausgebildet, daß gefrorene Fleischstücke mit einer Kantenlänge von 250 x 250 x 250 mm unter geringstmöglicher Wärmeaufnahme mit einem geringstmöglichen Emulgieranteil auf eine Körnung von 2 bis 8 mm geschnitten werden (Fleischkörnung);
- e) das Schneidgehäuse weist in seinem tiefsten Bereich eine nach unten offene Austragöffnung für einen kontinuierlichen Fleischkörnung-Austrag unter Schwerkrafteinwirkung auf;
- f) dem Schneidgehäuse ist in axialer Richtung gesehen eine kontinuierlich arbeitende Zufuhreinrichtung für die Fleischstücke vorgeschaltet, die den Fleischstücken eine gegen die Umlaufebene des ersten Messersatzes gerichtete Förderkomponente verleiht.

Die erfindungsgemäße Vorrichtung läßt sich aufgrund ihrer einfachen Konzeption sehr schnell durch Messertausch und Drehzahländerung an die Endprodukt-Wünsche des Kunden anpassen. Die Maschine ist einfach im Aufbau und daher nur wenig anfällig. Sie entspricht den Hygieneanforderungen in der Nahrungsmittelverarbeitung, läßt sich in vorhandene Linien gut integrieren, ist kompakt in ihren Abmessungen und kann auch parallel oder - wenn sehr hohe Zerkleinerungsgrade gefordert sind - in Tandem angeordnet werden. Die Konzeption ist besonders für hohe Durchsatzleistungen von z. B. 40.000 kg pro Stunde geeignet, läßt aber auch sehr viel geringere Leistungen von z. B. nur 1000 kg/h zu.
