Description
Die Erfindung betrifft ein Verfahren zur Kornbildung bei der Kristallisiation eines Zuckerdicksaftes zu einer Füllmasse durch Zugabe von Impfzucker eines zerkleinerten feinen Zuckers.The invention relates to a process for grain formation in the crystallization of a thick sugar juice into a filling mass by adding inoculated sugar of a comminuted fine sugar.
Bei der Kristallisation werden Klären, Dicksäfte sowie Abläufe der nachfolgenden Abbaustufen verkocht. Nach dem Einziehen der zu verkochenden Saccharoselösungen in den Kochapparat wird bis zu einer für die Kornbildung erforderlichen Übersättigung eingedickt. Die Kornbildung wird durch Impfen des Zuckersaftes am jeweils günstigsten Übersättigungspunktes eingeleitet.During the crystallization process, clarifications, thick juices and the processes of the subsequent degradation stages are boiled. Auch in einer Rotor-Stator-Maschine läßt sich der Anfall von Feinkorn nicht vermeiden. Um das Feinkorn auszuschließen, wird den Impfkristallen vor der Zuführung in die Kristallisation ein Anteil Dünnsaft zugeführt. Dieser ist in der Lage das Feinkorn aufzulösen, ohne das Grobkorn wesentlich anzulösen. Damit ist sichergestellt, daß der Kristallisation ein Impfzucker mit gleichmäßigem Kornanteil zugeführt wird.The occurrence of fine grain cannot be avoided even in a rotor-stator machine. Sie besteht aus einem Gehäuse mit darin umlaufendem kegelstumpfförmigen Rotor, dessen Mantelfläche mit koaxialen Ringen gestaffelten Durchmessers ausgestattet ist, die jeweils auf Lücke stehen mit gleichartigen Ringen an der dem Rotor gegenüberliegenden Gehäusewand. Die groben Kristalle der Füllmasse werden innerhalb des Scherfeldes des Homogenisierers in Turbulenz mit dem Dicksaft vermischt und zerkleinert.The withdrawn part of the filling compound is advantageously introduced into the shear field of a homogenizing machine. Einem Verdampfer 1 wird zur Kristallisation von Saccharose über eine Leitung 2 ein aus der nicht dargestellten Vorstufe kommender Dicksaft zugeführt. Die kristallisierte Füllmasse wird mittels einer Leitung 3 abgezogen. Für die Kristallbildung verden Impfkristalle benötigt. Zur Bildung der Impfkristalle wird aus der Leitung 3 mittels einer Leitung 4 ein Teil Füllmasse abgezogen und einer Rotor-Stator-Maschine 5 zugegeben. Hier verden die groben Kristalle der Füllmasse zu Impfkristallen zerkleinert, die mittels der Leitung 6 dem Verdampfer 1 zugegeben werden. Zur Verbesserung der Zerkleinerungsarbeit wird der Rotor-Stator-Maschine 5 über eine Leitung 7 ein Teil Dicksaft zugegeben. Fernerhin wird den Impfkristallen über Leitung 8 ein Teil Dünnsaft zugegeben, um vorhandenes Feinkorn aufzulösen.An
