Abstract

The invention relates to a process for grain formation in the crystallisation of a concentrated sugar solution to a massecuite by addition of seed sugar which is formed from the crystallised massecuite. For this purpose, a portion of the crystallised massecuite is comminuted and added as seed to the crystallisation in-line in a closed system.

Die Erfindung betrifft ein Verfahren zur Kornbildung bei der Kristallisiation eines Zuckerdicksaftes zu einer Füllmasse durch Zugabe von Impfzucker eines zerkleinerten feinen Zuckers.The invention relates to a process for grain formation in the crystallization of a thick sugar juice into a filling mass by adding inoculated sugar of a comminuted fine sugar.

Bei der Kristallisation werden Klären, Dicksäfte sowie Abläufe der nachfolgenden Abbaustufen verkocht. Nach dem Einziehen der zu verkochenden Saccharoselösungen in den Kochapparat wird bis zu einer für die Kornbildung erforderlichen Übersättigung eingedickt.
