Pour préparer le plat, la ménagère peut simplement ajouter aux ingrédients déshydratés la quantité nécessaire de liquide, par exemple de lait et d'oeuf, de préférence mélangés au préalable, puis cuire le produit au four. Les barquettes métalliques conviennent parfaitement pour les fours classiques à convection ou rayonnement infra-rouge, mais présentent de sérieux inconvénients vis-à-vis des fours à micro-ondes.
- Le rapide essor de la vente des fours à micro-ondes aux ménages et le développement de la restauration industrielle ont modifié les conditions de fabrication des plats préparés, amenant des avantages aussi bien que des problèmes. Les avantages sont évidents et liés au réchauffement rapide par les micro-ondes, ce qui rend par exemple les produits surgelés d'un usage encore plus commode.
- Il y a plusieurs problèmes :
- La barquette métallique traditionnelle est opaque au rayonnement micro-ondes et ne convient pas dans les fours à micro-ondes car il peut y avoir formation d'arc dans la cavité du four, ce qui peut endommager les parois du four, ou retour de rayonnement vers le magnétron, ce qui peut l'endommager si la protection est insuffisante, par exemple dans les fours de conception relativement ancienne.
- La cuisson de certains produits est très inégale parce que les métaux en feuille conductrice ne sont pas transparents aux micro-ondes et le chauffage intervient depuis le haut vers le bas. En conséquence, la couche supérieure subit préférentiellement l'action de l'onde, par ailleurs faiblement pénétrante, avec une production de chaleur excessive et évaporation de l'eau. Cela conduit, en particulier pour les produits surgelés, à une cuisson inhomogène avec une couche du dessous froide et également encore congelée tandis que la couche supérieure est desséchée, voire brûlée. Dans le cas spécifique de préparation d'un flan, l'utilisation de four à micro-ondes conduit à un mouvement du produit préjudiciable à une coagulation correcte du flan. Celui-ci n'est pas lisse mais sa texture ressemble plutôt à celle des oeufs brouillés.
- La cuisson est non seulement hétérogène mais fortement ralentie. - Certains travaux de développement dans l'industrie de l'emballage en liaison avec la cuisson par micro-ondes ont traité le problème de la cuisson sélective de repas à composants multiples dans lesquels les composants individuels du repas requièrent des quantités différentes d'énergie micro-ondes.
- Par exemple, le brevet des Etats-Unis No. 3.865.301 décrit un récipient comportant des ouvertures, adapté à plusieurs ingrédients d'un produit alimentaire de type sandwich, qui doivent être chauffés ou cuits à des degrés différents, lequel récipient est opaque au rayonnement micro-ondes à l'exclusion de fenêtres transparentes au rayonnement.
- Le brevet des Etats-Unis No. 4.081.646 illustre une barquette constituée d'un matériau transparent aux micro-ondes et comportant plusieurs compartiments, un couvercle formé dans un matériau transparent aux micro-ondes et adapté à la barquette et une boîte avec ouvertures ayant des parois opaques aux micro-ondes et des ouvertures à des emplacements pré-déterminés, dans laquelle la barquette et le couvercle sont insérés, de sorte qu'on obtienne ainsi un contrôle de la quantité de rayonnement reçu par chacun des composants individuels du repas.
- D'autres travaux ont porté sur la réalisation de barquettes qui sont sensées permettre à la fois une régénération ou cuisson homogène et la protection des matériaux par exemple le carton ou les matières plastiques dans les fours ménagers ou à micro-ondes équipés de grils à infra-rouges. Par exemple, le brevet des Etats-Unis No. 4.351.997 concerne une barquette en matériau transparent au rayonnement micro-ondes dont la surface intérieure de la paroi latérale ou des coins et la partie supérieure de celle ci constituant le bord horizontal sont recouvertes d'un matériau métallique opaque au rayonnement micro-ondes. La réalisation d'une telle barquette est compliquée.
- Enfin, le brevet des Etats-Unis No. 4.439.656 se rapporte à un ustensile en matériau transparent aux micro-ondes dans lequel on place une barquette métallique et qui, une fois rempli d'eau, permet la protection du four à micro-ondes ainsi que le chauffage uniforme d'un aliment. Le consommateur ne dispose pas toujours d'un tel ustensile vendu indépendamment de l'aliment. De plus un tel ustensile ne peut pas être adapté à toutes les formes de barquettes, si bien qu'il en faudrait plusieurs.
- L'invention permet de résoudre les problèmes liés aux dispositifs connus par un moyen simple, vendu conjointement à l'aliment et constituant une partie de son emballage.
- L'emballage selon l'invention est caractérisé par le fait que le couvercle est en un matériau transparent aux micro-ondes, que ledit couvercle constitue un réceptacle pour un fluide absorbant les micro-ondes, de manière à entourer la barquette du dit fluide lors du réchauffage ou de la cuisson, une fois le couvercle retourné et la barquette placée à l'intérieur.
- Selon l'invention, une barquette peut être aussi bien en forme de tronc de pyramide à base rectangulaire ou carrée, que tronconique à base circulaire ou ovale.
- La description qui suit permet de mieux comprendre l'invention par référence aux dessins qui en illustrent des formes d'exécution préférées.
- Dans les dessins :
- la figure 1 est une vue avec demi-coupe d'une barquette à base rectangulaire avec couvercle avant étuyage,
- la figure 2 est une coupe longitudinale de la barquette avec couvercle de la figure 1 dans un étui,
- la figure 3 est un schéma d'utilisation du couvercle de la figure 1 pour la préparation d'un aliment, en vue de sa consommation,
- la figure 4 est une vue de dessous du couvercle de la figure 1
- la figure 5 est une perspective en coupe selon AA de la figure 4
- la figure 6 est une vue partielle avec demi-coupe selon AA de la figure 7 d'une barquette à base ronde avec son couvercle,
- la figure 7 est une vue de dessous du couvercle selon la figure 6 et
- la figure 8 est une perspective d'une variante de couvercle pour une barquette à base rectangulaire.
- Aux dessins, la barquette 1, en aluminium, le cas échéant laqué extérieurement, contenant l'aliment congelé 2 est munie d'un couvercle 3, en matériau transparent au micro-ondes. Le couvercle 3 peut être fabriqué par pliage ou formage par exemple de carton recouvert d'une couche de matière plastique sur sa face interne. Il peut être obtenu par injection ou thermoformage d'une matière plastique ou d'un matériau composite carton et matière plastique. La matière plastique est de préférence du téréphtalate de polyéthylène ou de polybutylène, une polyoléfine, par exemple du polybutylène, du polyméthylpentène, du polypropylène ou du polyéthylène haute densité, du polyétherimide, du polystyrène, du polychlorure de vinyle, du polycarbonate, ou des combinaisons appropriées de ces matériaux.
- Le couvercle comprend une face 4 dont les contours arrondis sont adaptés à ceux du bord supérieur 5 de la barquette et une paroi latérale continue 6 reliée à la face 4. Dans le mode de réalisation représenté, cette paroi latérale suit en son début la paroi latérale 7 de la barquette, donc est légèrement rentrante. Cette configuration permet l'encliquettage du couvercle sur la barquette. Le début de la paroi latérale peut également être sensiblement perpendiculaire à la face 4. La paroi latérale se prolonge par une jupe évasée jusqu'au niveau du fond de la barquette. Cette jupe définit un volume enveloppant suffisant pour éviter la formation d'arcs électriques indésirables dans le cas où la barquette métallique serait proche d'autres objets métalliques tels que par exemple la paroi du four ou une autre barquette, lors de la préparation, comme il sera expliqué plus loin. Dans le mode de réalisation particulier représenté, la paroi latérale 6 comporte une ligne de rillage 8 ou de perforations au niveau du changement de direction de la paroi. La paroi 6 comporte des prédécoupes 9 ou des lignes de perforation aux angles à partir de la ligne de rillage 8. Ainsi prédécoupée, l'extrémité de la paroi définit des oreilles de préhension latérales 10 servant en même temps de languettes souples pour maintenir la barquette dans l'étui en carton 11, ce qui diminue les risques de déformation lors de la manutention.
- Le couvercle 3 est pourvu de reliefs saillants qui constituent des plots 12 d'espacement de fond et des plots de centrage 13 pour la barquette. Dans une variante non représentée, une feuille de papier gaufré capable d'absorber l'eau est insérée entre les plots 12 contre le fond du couvercle. Son épaisseur est telle qu'elle arrive au niveau supérieur des plots 12.
- Lorsque l'on veut chauffer ou cuire l'aliment dans un four à micro-ondes, on enlève le couvercle et on le retourne. On verse ensuite de l'eau dans le fond (a), jusqu'au niveau supérieur des plots 12, par exemple 20 à 200 ml, puis on place la barquette (b) entre les plots 13 et on dispose l'ensemble dans le four. Le couvercle définit un espace enveloppant la barquette et joue alors le rôle de bain-marie. Une fois le chauffage ou la cuisson terminée, les languettes souples peuvent avantageusement servir d'oreilles de préhension pour sortir l'aliment du four. La ligne de rillage 8 permet de plier les languettes vers l'extérieur pour faciliter la préhension sans risque de brûlures. Dans le cas où une feuille absorbante est disposée contre le fond du couvercle, il n'y a pas de risque de renverser de l'eau brûlante lorsqu'on sort le plat du four.
- Si l'on utilise un four à convection ou à infra-rouges on enlève simplement le couvercle et on place la barquette dans le four.
- Comme représenté aux figures 6 et 7, le couvercle 14 d'une barquette 15 à base ronde comprend un fond 16 de diamètre adapté à celui du bord supérieur de la barquette. La barquette contient une croûte précuite 17 et un sachet 18 contenant un mélange déshydraté constituant la garniture. La barquette contenant le fond de pâte, le sachet et son couvercle sont placés dans un étui en carton 19. L'étui 19 peut en variante être remplacé par un sachet, par exemple en polyéthylène.
- Le couvercle comprend une face latérale continue 20 et un bord 21, face latérale et bord définissant, en deux points diamètralement opposés des oreilles de préhension 22 et ménageant des conduits d'écoulement 23 pour l'eau destinée à y être versée comme expliqué ci-après. Le couvercle 14 est pourvu vers la partie médiane du fond de plots d'espacement de fond 24 en forme d'arcs et d'encoches 25 de hauteur supérieure à celle des plots au niveau de la paroi latérale destinées au centrage de la barquette.
- L'utilisation du couvercle est comme décrit précédemment en liaison avec la figure 3, à la différence près qu'il y a une opération supplémentaire de préparation séparée de la garniture: après ouverture du sachet, on verse son contenu dans un bol avec un oeuf et du lait froid, puis on mélange. Une fois le couvercle retourné, on verse de l'eau jusqu'au niveau supérieur des plots 24, de préférence par un conduit 23, puis on place la barquette contenant la croûte précuite entre les encoches 25 et on verse le mélange constitutif de la garniture dans la barquette, puis on dispose l'ensemble dans un four à micro-ondes.
- Le principe peut bien évidemment être appliqué aux barquettes comportant des compartiments multiples. Dans ce cas, le couvercle couvre la totalité des compartiments et peut, une fois retourné, servir de bain-marie pour cuire ou chauffer l'ensemble des aliments contenus dans les différents compartiments.
- A la figure 8, le couvercle 26 est constitué d'un carton 27 étanchéifié sur la face intérieure, par exemple par imprégnation de polyéthylène. Le carton 27 est enroulé autour d'un matelas de papier gaufré absorbant 28. Sur la face supérieure du couvercle sont prédécoupées dans le carton des pattes 29 disposées aux angles. Cette variante est appropriée au réchauffement et à la cuisson des plats préparés surgelés en barquette d'aluminium. L'aluminium peut le cas échéant être laqué extérieurement.
- Pour préparer le plat, on relève les pattes 29, on verse la quantité d'eau qui peut être absorbée par la feuille 28, puis on place la barquette entre les pattes. On met ensuite le plat dans le four à micro-ondes. Lors du réchauffement ou de la cuisson, la vapeur générée à partir de l'eau absorbée entoure la barquette et permet un réchauffement ou une cuisson homogène.
- Les exemples comparatifs 1 à 3 ci-après illustrent les performances de l'emballage selon l'invention (1), figure 1, le couvercle étant retourné, rempli de la quantité d'eau indiquée et la barquette contenant l'aliment étant placée à l'intérieur comme indiqué précédemment, comparées à celles (2) de la barquette en aluminium contenant l'aliment et (3) d'un plat en verre spécial pour fours à micro-ondes dans lequel on place l'aliment une fois démoulé, lors du chauffage pendant 12 min. de différents plats cuisinés congelés au moyen d'un four à micro-ondes Kenwood A414 (460 watts restitués) à plateau tournant. Dans le cas (3), le produit est démoulé, puis placé dans l'ustensile en verre soit après avoir été entreposé 15 min à - 20°C, soit 15 min à + 20°C,soit directement. Cette opération supplémentaire est destinée à étudier l'incidence de l'inertie thermique de la barquette sur le chauffage de l'aliment. On mesure les températures le plus vite possible une fois le traitement dans le four terminé.
- Dans l'exemple comparatif 4 ci-après, on compare les performances de l'emballage selon l'invention (1), figure 6, à celles de la barquette en aluminium contenant l'aliment (2) dans l'élaboration d'une quiche avec garniture du flan. La barquette a un volume d'environ 500 cm³.
- Dans le cas (1), on verse le mélange des ingrédients déshydratés de la garniture, 200 cm³ de lait froid et un oeuf entier battu dans la barquette contenant une croûte de pâte précuite de manière à remplir la croûte environ aux 2/3.
- Dans le cas (2) on verse la quantité d'eau indiquée dans le couvercle de polyéthylène haute densité retourné, on place la barquette contenant la croûte, puis le mélange constituant la garniture.

- On constate à la lecture des résultats du tableau 1 que l'emballage selon l'invention (1) permet une meilleure homogénéité de températures que dans le cas du produit démoulé placé dans un plat spécial (3) alors que les températures ne sont pas du tout homogènes dans (2).
- L'évaporation de l'eau du produit est moindre dans (1) que dans (2) et (3), et ceci est particulièrement sensible lorsque la quantité d'eau ajoutée est plus grande.
- Les qualités organoleptiques sont sensiblement meilleures pour (1) que pour (3) alors que celles-ci sont insuffisantes dans le cas de (2).

Le fait que l'eau ajoutée soit froide ou chaude n'a pas d'influence majeure sur le résultat. L'homogénéité est légèrement meilleure avec de l'eau froide.
- La texture et l'aspect selon (2) sont totalement inacceptables.

- L'emballage selon l'invention permet la réalisation de produits qui seraient impossibles à préparer sans lui dans un four à micro-ondes. On constate en effet que, dans la préparation des flancs selon (1), une montée en température à pleine puissance est beaucoup trop rapide et provoque l'ébullition de la garniture avant sa coagulation. Le résultat est la formation d'une texture du type oeufs brouillés totalement inacceptable. L'utilisation d'une puissance réduite, obtenue classiquement dans les fours ménagers du commerce par émission séquentielle des ondes, ne permettrait pas de remédier à ce défaut car elle conduirait à un mouvement de la garniture préjudiciable à une coagulation correcte du flan: on obtiendrait également une texture d'oeufs brouillés.
- Par contre, l'addition d'une quantité suffisante d'eau dans le couvercle retourné, selon (2), permet d'accroître la charge dans l'enceinte micro-ondes pour une quantité fixée d'aliment. Cela régularise la vitesse de montée en température à pleine puissance. Cela permet une meilleure répartition de l'énergie dans l'espace. La couche d'eau est mobile et assure un transfert radial de chaleur, rapide en comparaison du transfert lent dans le milieu plus visqueux de la garniture. L'effet obtenu est une température uniforme conduisant à une coagulation correcte du flan avant que la garniture n'entre en ébullition. La dérivation par l'eau du bain-marie d'une partie de l'énergie micro-ondes en chaleur conventionnelle permet enfin le chauffage de la croûte précuite qui, parce qu'elle est sèche,est peu sensible aux radiations micro-ondes.
