Abstract

A cutter for cutting and mixing food products, preferably for sausage production, has a machine stand with a main and extension part, a cutter bowl which is rotatably driven about a vertical axis being arranged on the extension part for the purpose of receiving the cut material. Arranged essentially horizontally over the cutter bowl there is a knife shaft with cutter knives whose cutting points pass closely by the inner surface of the cutter bowl, the said inner surface being in the shape of an annular recess. In order to be able to produce a cutter of this kind with as a large an oscillation and noise attenuation as possible as well as with low production costs and as far as possible without metal cutting processing, in which case the weight is also reduced and the resistance to corrosion improved, the machine stand is produced separately from a main stand part (1) and from a stand extension part (7) which are subsequently connected directly to one another by flanges, both the main stand part (1) and the stand extension part (7) consisting of a reaction resin concrete cast (Fig. 1). <IMAGE>

Description

The invention relates to a cutter according to the preamble of claim 1.

Cutters for cutting and mixing foodstuffs, which are preferably used for sausage production, conventionally have an annular bowl-shaped cutter bowl which is rotatably driven about their vertical axis and which holds the material to be cut. Above this, knives are arranged at the end of a horizontally arranged knife shaft, the cutting tips of which dipping into the mass to be treated pass closely past the inner ring-shaped inner surface of the cutter bowl. An example of such a cutter is described in detail in EP-A-41 038; in it, among other things, the bowl is covered by a bowl cover that is adapted to the cutter knives.

The machine stand is usually made in one piece and consists of machined gray cast iron or sheet steel. The cutter must be given a special anti-corrosion coating due to the conditions of use in butchers' shops. When welded from sheet steel The vibration and noise damping, which is significantly worse than that of gray cast iron, is disadvantageous to stands. On the other hand, gray cast iron stands with a cover made of stainless steel sheet have proven their worth.

However, the above-mentioned stand designs are expensive, which is particularly disadvantageous for small cutters because the stand makes up a significant proportion of the total production costs. This also contributes to the fact that the usual arrangement of the main motor and also the bowl storage with bowl drive within the stand requires a complicated shape for this, which is why the processing must be carried out on a boring and milling machine.

The production of the bowl lid as a welded construction from rustproof stainless steel sheet is also complex, although this is hygienically perfect. Such covers have only a very low level of noise and vibration damping and therefore contribute considerably to noise generation during operation. Furthermore, they are thermally conductive and as a result are in rapid heat exchange with the environment. For reasons of weight and price, a cast steel lid cannot be used. Bowl lids made of a suitable cast aluminum alloy are probably cheaper to manufacture, but this material is only partially resistant to corrosion. Furthermore, the vibration and noise damping is unsatisfactory.

The latter also applies to the known designs of the cutter as a complete machine. Studies have shown that even with considerable technical expenditure, the noise emission from cutters according to the prior art can be reduced only insignificantly.

It is an important object of the invention to improve a cutter of the type mentioned at the outset in such a way that it has the greatest possible vibration and noise damping, but can nevertheless be produced at low production costs, as far as possible without machining. The outer surfaces should be corrosion-resistant. Furthermore, the bowl lid should also be significantly improved, especially with regard to sound and heat insulation, weight and corrosion resistance, without its function being impaired in any other way.

Ausgestaltungen sind Gegenstand der Ansprüche 2 bis 21.Main features of the invention are set out in the characterizing part of claim 1. Refinements are the subject of claims 2 to 21.

According to the invention, the main part of the stand and the outrigger part of the stand are made of cast resin concrete. They are made up of separate parts that are flanged together. As the main components are consequently corrosion-resistant on the outside and inside, they do not require any further surface protection or any subsequent processing. This results in considerable cost savings. Reactive resin concrete has a very good vibration and noise damping behavior, which is up to 6.5 times better than with gray cast iron, although gray cast iron is already about the same factor cheaper than steel sheet. Therefore, the Invention also makes a significant contribution to reducing the operating noise of cutters.

The development according to claims 2 to 6 provides that support and fastening parts are firmly embedded in the reactive resin concrete, so that an extraordinarily high stability is guaranteed. According to claim 7, the cavity of the bearing arm can be poured with reactive resin concrete to improve the vibration behavior.

Particular simplicity of construction is achieved with short assembly times by the measures of claims 8 to 12, according to which the main motor and geared motors can be flanged. This also favors maintenance. A special freewheel design is specified in claim 13.

According to claim 14, the bowl lid is made of cast resin concrete. This material brings about a very significant improvement because the reaction resin concrete also achieves a high level of vibration and noise damping on or in the bowl lid, so that the noise emission is significantly reduced. Good thermal insulation from the surroundings is also guaranteed.

In the claims 15 to 19 arrangement and design of a reinforcement are specified, through which one achieves high strength with low weight. It is particularly important that the reinforcement according to claims 15 and 16 is located in a wall area close to or above the sphere of action of the cutter knife, especially according to claim 17 where there are strong bends, There are kinks or the like. Claim 18 provides for a special reinforcement of an edge region. According to claim 19, the reinforcement can have grids, nets, fabrics, nonwovens and the like, in particular made of non-metallic materials such as glass and / or carbon fibers, but also in the form of metal grids, meshes, woven fabrics or similar metallic inserts. In all cases, painting the bowl lid or any other surface treatment is not necessary. If desired, the reaction resin concrete can be colored in the mass or provided with a layer called gel coating.

A material consisting of 4 to 15% by weight of reactive resin as a binder and from 96 to 85% by weight of a mixture of minerals and / or synthetic additives is particularly suitable, preferably of approximately 8% by weight of epoxy resin and 92% by weight .% of a mixture of quartz powder and quartz sand or gravel, optionally with additives according to claim 21, namely diatomaceous earth for increased thermal insulation. When using expanded clay granulate or pearls, a light reaction resin concrete with a density substantially below 2.3 g / dm³ is obtained with a closed structure.

The stand boom part 7 has a cavity 9 open at the top, the upper end of which forms a flange 10, on which a geared motor 11 is arranged so as to hang into the cavity 9. The gear motor 11 has a support plate for a cutter bowl 13 on a shaft stub projecting upwards. A bearing arm 14 with a spout 15 is located horizontally above the cutter bowl 13. The bearing arm 14 is firmly embedded with a flange part 16 in the stand main part 1. A knife shaft 17 in the bearing arm 14 is supported near its front end by a roller bearing 18 and carries a knife head with cutter knives 20. At the opposite end, the knife shaft 16 is also supported by a roller bearing and provided with a pulley 21. This is part of a belt drive 22 which runs over a motor pulley 23. Details of the arrangement can be seen from FIGS. 3 and 4. In order to be able to bring the knife shaft 17 to a standstill quickly, a brake 24 (FIG. 1) is also provided.

The cutter bowl 13 is overlapped by a bowl cover 25 (FIGS. 1 and 2). This is held by a bearing part 26 which is pivotally arranged on a support arm 27, one end of which is firmly embedded in the stand main part 1. A protective apron 28 is present at least in front of the cutter bowl 13. A control box 29 is provided on the main stand part 1 for controlling and operating the drive.

The somewhat modified embodiment of FIG. 3 shows a bearing arm 30 which is fastened by means of screws 32 to an anchor flange 31 which is firmly embedded in the stator main part 1 at the top by means of screws 32. Accordingly, an anchor flange 33 can be provided in the lower region of the main stand part 1 (FIG. 4), to which a main motor 34 is attached by means of screws 35. The motor 34 is covered by a hood 36.

In the exemplary embodiment in FIG. 5, an arrangement which is basically similar to that described above is shown, a geared motor 40 being seated coaxially with the main motor 34 on the opposite wall of the stator main part 1, which is fastened by means of screws to an anchor flange 41 embedded in the stator main part. While the main motor 34 carries a clutch motor pulley 37, this is opposed by an elastic coupling 38 with a freewheel 39 on the gear motor 40. The material to be processed is mixed by means of the slow-running auxiliary drive.

It is important that the main body part 1 and the stand arm part 7 are made according to the invention from cast reactive concrete. This ensures both high strength with simple manufacture and clear shapes, as well as increased noise and noise reduction. At the same time, there is no machining, since the cast components have very smooth, hygienically perfect surfaces. This also ensures easy cleaning; there is no rust formation.

Gleichzeitig werden die Herstellungskosten gesenkt.6 shows an embodiment in which a bowl cover 42 is also cast from reaction resin concrete. This means that the material to be cut is surrounded by uniform wall material during the treatment. For safety, a reinforcement 43 can be provided in the area of the cutter knife. One of the biggest advantages is the considerable vibration and noise damping. At the same time, the manufacturing costs are reduced.

The reinforcement 43 is preferably embedded in the area of the wall of the bowl lid 42, where it has strong bends or kinks and overlaps the cutter knife 20 of the knife head 19. The very light and vibration-damping material has excellent insulation properties and therefore ensures a significant reduction in operating noise. Thanks to the reinforcement 43, the bowl lid 42 is extremely stable. Its surface can be smooth or textured; surface treatment is never necessary.

All of the features and advantages arising from the claims, the description and the drawing, including structural details and spatial arrangements, can be essential to the invention both individually and in the most varied of combinations.
