Description
- Die vorliegende Erfindung betrifft ein Verfahren zum automatischen Abfüllen eines Flüssigmediums, bestehend aus mindestens einem mechanischen Beanspruchungen gegenüber problemlosen ersten Anteil sowie mindestens einem mechanischen Beanspruchungen gegenüber problematischen zweiten Anteil, in zugeführte Behältnisse an einer Abfüllstation, welcher Zuspeise-, Förder-, allenfalls Aufbereitungsstationen für das Flüssigmedium vorgeschaltet sind, wobei der erste Anteil getrennt vom zweiten zur Abfüllstation gefördert wird sowie eine Abfüllvorrichtung zur Ausführung des Verfahrens und eine Anwendung des Verfahrens.
- Derartige Verfahren sind, beispielsweise für das Abfüllen von Fruchtsäften in kunststoffkaschierte Kartonbehältnisse, bekannt. Der schlussendlich als Flüssigmedium abgefüllte Saft umfasst einen dünnflüssigen, wässrigen ersten Anteil sowie, beispielsweise bei Orangensaft, einen zweiten grosszelligeren Anteil, bestehend aus Fruchtfleisch, schlammartigen Zellstrukturen.
- Ueblicherweise werden diese beiden Anteile in gewünschtem Verhältnis vereinigt, danach mittels Förderpumpen über Zuspeiseleitungen, Rührwerke, Ventilanlagen etc. zu einer Abfüllstation gefördert, durchlaufen also gemeinsam eine mehr oder weniger grosse Zahl von Aggregaten mit entsprechenden Dichtungen, Leitungsquerschnitts-Unstetigkeitsstellen, Toträumen bezüglich des Flüssigmediumsflusses etc.
- Dabei wird der zweite viskösere bzw. grosszelligere Mediumsanteil, wie das genannte Fruchtfleisch, an exponierten Stellen der Zuleitung und der Aggregate abgelagert, was zu Verunreinigungen bis hin zu Verstopfungen führt. Das vom Konsumenten möglichst unbeeinträchtigt erwünschte Fruchtfleisch wird teilweise zerschlagen und zerstört. Das zu Beginn exakt bemessene Verhältnis von dünnflüssigem Anteil und visköserem bzw. grosszelligerem Anteil ist im weiteren bei der Abfüllstation nicht mehr gewährleistet, wegen Ablagerungen des zweitgenannten Anteils. Hingegen wird der dünnflüssige erste Anteil beim Duchlaufen der genannten Zuleitungen und Aggregate nicht beeinträchtigt.
- In der EP-A-0157130 ist femer ein Verfahren zum Verschliessen von Verpackungen bekannt geworden, bei welchem eine flüssige Komponente und eine gewisse Menge von Feststoffen, beispielsweise Suppe mit Fruchtteilchen, abgefüllt werden. Dabei ist es schwierig, die Behältnisse so abzupacken, dass die gewünschte Proportion von Flüssigkeit und Feststoff gewahrt bleibt. Dies bietet bei den heutigen sehr schnellen Verpackungsvorgängen gewisse Schwierigkeiten, da die Füllzeiten sehr kurz sind und dabei die erhöhte Gefahr besteht, dass insbesondere Festteilchen in eine das Verschliessen des Behältnisses hindemde Lage geraten.
- Dieses Problem wird durch separates Einfüllen des Flüssigkeitsteils und des Festteils in zwei Zuführleitungen gelöst, wobei Beginn und Ende des Füllens durch Flüssigkeit markiert wird, um den erwähnten Nachteil der Hinderung des Schliessens der Verpackung durch Festteilchen zu vermeiden.
- Von irgendeiner Behandlung der Komponenten, beispielsweise durch Wärme zwecks Sterilisation oder Uperisierung, ist dabei nicht die Rede, mithin auch nicht von einer Schonung der Festteilchen vor mechanischen Belastungen, wie Pumpen, Wärmeaustauschern, Ventilen u. dgl.
- In der US-A-3 702 667 ist ein Abfüllverfahren für Nahrungsmittel erläutert, deren eine Komponente aus Flüssig- und Feststoffteilchen besteht und deren andere Komponente eine reine Flüssigkeit darstellt. Dabei muss die Hauptkomponente, nämlich die Flüssigkeit mit den Feststoffteilchen, zwecks Abtötung der Bakterien pasteurisiert werden, während die zweite Komponente, normalerweise eine Säure in Form von Askorbinsäure o. dgl., wenn in einem Mischtrog dem sich auf Pasteurisationstemperatur befindenden Gut beigegeben, dieses örtlich zerstört und die Gleichmässigkeit des anschliessend in Behältnisse abgefüllten Produktes verunmöglicht.
- Erfolgt aber die Mischung dieser beiden Komponenten in dem Sinne, dass jederzeit zum Abfüllbehältnis ein in sich homogener Strom mit den beiden Komponenten strömt, so ist die örtliche Konzentration der Säure nie derart, dass sie die andere Komponente zersetzt. Es wird bei diesem Verfahren somit die Säurezugabe entsprechend der in das Abfüllbehältnis geführten Gutsmenge beigegeben, wodurch eine dem Produkt schadende Säurekonzentration vermieden wird.
- Bei diesem Verfahren besteht die auf Pasteurisationstemperatur erhitzte Komponente normalerweise aus Wasser, Fruchtfleisch, Farb- und Aromastoffen, welche miteinander gemischt werden. Dabei wird auf eine allfällige Zerkleinerung von Fruchtteilen in der Suspension keine Rücksicht genommen.
- Die vorliegende Erfindung setzt sich zum Ziel, die obgenannten Nachteile zu beheben.
- Dies wird dadurch die kennzeichnenden Merkmale des Anspruchs 1 erreicht.
- Dadurch wird berücksichtigt, dass die beiden Anteile unterschiedlich zu behandeln sind.
- Durch die getrennte Zuführung an die Abfüllstation können vorgelagerte Aggregate gezielt auf die spezifischen Eigenschaften je der beiden Anteile ausgelegt werden.
- Für das Abfüllen, wie von Säften in Behältnisse, die nach dem Abfüllen versiegelt werden, gibt es grundsätzlich zwei Techniken, um die Haltbarkeit des abgefüllten Flüssigmediums für längere Zeit im Behältnis zu gewährleisten.
- Bei der ersten Methode wird die Abfüllung aseptisch, kalt, d. h. bei ca. 20°, entsprechend Raumtemperatur, vorgenommen. Diese Technik bedingt einen relativ aufwendigen Anlagenaufbau zur Verhinderung von Kontaminationen des abgefüllten Mediums, nachdem es, wie durch Erhitzung, keimfrei gemacht worden ist.
- Eine zweite bekannte Methode besteht darin, das Flüssigmedium zu erhitzen, beispielsweise Säfte auf ca. 70° bis 90 °C während einer vorbestimmten Zeit, beispielsweise 1,5 min auf dieser Temperatur zu halten, danach heiss in die Behältnisse abzufüllen, wodurch auch die Behältnisse bzw. deren Innenräume keimfrei werden.
- Für letztgenannte Verfahren, d. h. Heissabfüllverfahren, wird nun Vorgeschlagen, das obgenannte Verfahren so auszubilden, dass einer der Anteile vor dem Abfüllen auf eine erhöhte Temperatur gebracht wird, zur Erlangung der Mediumshaltbarkeit nach dem Abfüllen in das Behältnis, und dass der andere Anteil durch den einen Anteil auf mindestens nahezu die erhöhte Temperatur gebracht wird.
- Es wird somit lediglich der eine der beiden Anteile erhitzt und erhitzt selbst, sobald er thermisch mit der Zuleitung für den anderen Anteil oder mit dem anderen Anteil selbst in Kontakt tritt, durch Wärmeaustausch, auch letzteren.
- Damit wird die Wärmekapazität des einen Anteils dazu ausgenützt, den zweiten erfindungsgemäss getrennt zur Abfüllstation geförderten Anteil auf die zur Erlangung der Mediumshaltbarkeit geforderte erhöhte Temperatur zu bringen.
- Eine Abfüllstation zur Ausführung des obgenannten Verfahrens weist mindestens zwei Zuleitungen für die Anteile auf.
- Obwohl es durchaus möglich ist, und die erfindungsgemäss erwirkten Vorteile auch hier weitgehendst zum Tragen kommen, die zwei Zuleitungen zu vereinigen und dann gemeinsam einem Abfüllstutzen zuzuführen, wird das erfindungsgemässe Konzept konsequent dadurch realisiert, dass die zwei Zuleitungen getrennt aus der Abfüllstation ausmünden. Dies kann durch entsprechende Wahl der Ausmündungsanordnungen so realisiert sein, dass ein an der Abfüllstation vorbeigeführtes Behältnis zeitlich sukzessiv erst an der einen, dann an der anderen Ausmündung vorbeibewegt wird, oder aber dadurch, dass die zwei Zuleitungen getrennt im Abfüllbereich für ein Behältnis ausmünden, dass die beiden Ausmündungen gleichzeitig bezüglich eines Behältnisses wirksam werden. Im weiteren wird vorgeschlagen, dass die eine der erwähnten Zuleitungen mit einer Erhitzereinheit verbunden ist, um einen der Anteile zu erhitzen und um, mit diesem erhitzten einen Anteil, den zweiten durch Wärmeaustausch ebenfalls zu erhitzen, derart, dass die Mediumshaltbarkeit nach Abfüllen ins Behältnis gewährleistet ist. Das vorgeschlagene Verfahren bzw. die vorgeschlagene Abfüllstation eignet sich vorzüglich in der Anwendung für das Abfüllen von Säften, wie von Fruchtsäften mit Fruchtfleisch.
- Die Erfindung wird anschliessend beispielsweise anhand einer Figur erläutert.
- Diese zeigt schematisch anhand von Funktionsblöcken eine das erfindungsgemässe Verfahren realisierende Abfüllanlage bzw. Varianten der erfindungsgemässen Abfüllstation.
- Die in der Figur dargestellte Anlage wird im Zusammenhang mit Fruchtsaft als abzufüllendes Medium beschrieben, wobei es sich von selbst versteht, dass dies nicht einschränkend wirken soll, indem die bei Fruchtsaft entstehende Problematik bezüglich dünnflüssigem Anteil und grobzelligem Fruchtfleischanteil bei anderen Füllmedien gleichermassen auftreten kann.
- Ein Zuspeisekanal 1 für den wässrigen Saftanteil umfasst Zuleitungen 3, Förderpumpen 5, allenfalls Bearbeitungsstationen, wie eine Erhitzerstation 7, eine Rührerstation 9, alles Aggregate bekannter Bauweise und Wirkung.
- Der Kanal 1 mündet in eine Abfüllstation 11 ein.
- Ein zweiter Kanal 13, im Falle von Fruchtsaft, wie von Orangensaft, für die viskösere Fruchtzellenmasse, weist wiederum eine Pumpe 15 auf sowie allenfalls eine oder mehrere Aufbereitungsstationen, wie ein Rührwerk 17, an welchem beispielsweise die tiefgefroren gelieferte Fruchtfleischmasse, allenfalls unter Zusatz von Flüssigkeit, zu einer dickflüssigen Masse aufgerührt wird.
- Wesentlich ist, dass das Ende des Kanals 13 wiederum und getrennt in die Abfüllstation 11 einmündet. Somit weist die Abfüllstation 11 eine Einmündung E1 für den einen Kanal 1 und E13 für den zweiten Kanal 13 auf, entsprechend der Zuspeisung, beispielsweise bei Orangensaft, von wässriger Flüssigkeit und Fruchtfleischkonzentratmasse. Somit können generell die in den Kanälen 1 bzw. 13 vorgesehenen Aggregate in ihrer Anzahl, ihrer Bauweise und ihrer Wirkung auf den kanalspezifisch geförderten Flüssigmediumsanteil abgestimmt werden. Verstopfungsprobleme, Probleme der exakten Verhältniszudosierung der beiden Anteile, der Aggregat- und Leitungsverschmutzung werden auf diese Art und Weise umgangen. So können im Kanal für den problematischeren Mediumsanteil, hier Kanal 13, möglichst wenig Aggregate, beispielsweise nur ein Rührwerk und eine Pumpe vorgesehen werden und letztere noch so ausgebildet werden, dass sie problemlos gereinigt werden können.
- Für den Einsatz einer derartigen Anlage für das Heissabfüllen des Füllmediums ist im einen der beiden Kanäle ein Erhitzer, wie der Erhitzer 7, vorgesehen, womit das dort geförderte Medium, bei Saft beispielsweise auf eine Temperatur von 70° bis 90 °C erhitzt wird, und mit dieser Temperatur der Abfüllstation 11 zugefördert wird. Der zweite Mediumsanteil im Kanal 13 wird nicht erhitzt. Bei Vereinigung der beiden Zuleitungen, entsprechend den Kanälen 3 und 13 an der Auffüllstation 11 wird entsprechend der Wärmekapazität und den Anteilsverhältnissen, der nicht erhitzte Anteil, hier derjenige, der im Kanal 13 gefördert wird, auf mindestens nahezu die gleiche Temperatur angehoben, mit der der Anteil in Kanal an der Auffüllstation 11 ankommt.
- Die Vereinigung der in den beiden Kanälen 1 bzw. 13 geförderten Mediumsanteile erfolgt entweder innerhalb der Abfüllstation 11 mittels eines allenfalls einstellbaren Mischventils 15, so dass ein einziger Auslass A1 aus der Abfüllstation 11 ausmündet, um Behältnisse 17, die in entsprechende Position bewegt werden, zu füllen. In einer zweiten Variante werden die beiden Kanäle, allenfalls über Dosierungseinrichtungen 19 getrennt durch die Abfüllstation 11 a durchgeführt, entweder, wie linker Hand dargestellt, in Auslassstutzen 21 ausmündend, die auf einem solchen Abstand angeordnet sind, dass die Behältnisse 17 sequentiell erst vom einen Stutzen 21, dann vom anderen gefüllt werden, oder wie rechter Hand dargestellt, so, dass jeweils ein Behältnis 17 gleichzeitig durch beide Auslassstutzen 21 gefüllt wird.
- Der Wärmeaustausch zwischen dem ersten erhitzten Anteil und dem zweiten nicht erhitzten Anteil erfolgt vorzugsweise im Behältnis, wo die beiden Anteile erstmals miteinander in thermisch engen Kontakt treten, kann aber auch kurz zuvor erfolgen oder mindestens eingeleitet werden, dadurch, dass die beiden Zuleitungen thermisch gekoppelt werden.
