Abstract

La invenci?n describe un procedimiento de hidr?lisis para obtener un producto alimenticio hidrolizado seco en polvo que comprende: a?adir una soluci?n ?cida a un material de origen vegetal o animal para obtener una pasta acidificada con un pH inferior a 2,0; dejar reposar la pasta acidificada para permitir que se produzca la hidr?lisis; a?adir a la pasta acidificada obtenida del paso anterior una harina de origen vegetal o animal triturada con una granulometr?a tal que, al menos, el 50% de la misma tiene un tama?o menor a 1 mm; a?adir un excipiente adsorbente a la mezcla de pasta acidificada y harina de origen vegetal o animal triturada obtenida en el paso anterior; y dejar reposar la mezcla de pasta acidificada, harina de origen vegetal o animal triturada y excipiente adsorbente hasta obtener el producto alimenticio hidrolizado seco en polvo. La invenci?n tambi?n abarca el producto obtenido mediante el procedimiento anterior.
