Abstract
Изобретение относится к формованному вегетарианскому мясному продукту, содержащему (a) 30-80 мас.% воды; (b) 5-35 мас.% масла, причём указанное масло имеет содержание твёрдого жира при 20°C (N20) по меньшей мере 1,5%; (c) 2-25 мас.% белка, выбранного из белка водорослей, бактериального белка, молочного белка, яичного белка, грибного белка, растительного белка и их комбинаций; (d) 0-40 мас.% одного или более из ингредиентов в форме частиц, выбранного из пряных трав, специй, овощей и комбинаций перечисленного; при этом вегетарианский мясной продукт содержит по меньшей мере 4 об.% капель масла, имеющих эквивалентный сферический диаметр в диапазоне от 100 до 1000 мкм, как определено посредством компьютерной микротомографии. Этот формованный вегетарианский мясной продукт имеет очень привлекательные сочный вид и текстуру.
