Изобретение относится к пищевой промышленности, а именно к пищевым ингредиентам, предназначенным для обогащения пищевых продуктов полиненасыщенными жирными кислотами (ПНЖК), получения функциональных и специализированных пищевых продуктов и биологически активных добавок к пище. Функциональный пищевой ингредиент с заданным липидным профилем содержит рыбный жир и природный антиоксидант, при этом используют рыбный жир с суммарным содержанием полиненасыщенных жирных кислот не менее 25%, при этом из них сумма эйкозапентаеновой и докозагексаеновой кислот не менее 5%, соотношение омега-6 и омега-3 соответственно 3-5:1, рыбный жир получен из жирового сырья африканского сома Clarias Gariepinus, выращенного в условиях аквакультуры, перекисное число при выработке ингредиента не превышает 1,6 ммоль 1/2 O/кг. В качестве природного антиоксиданта берут смесь натуральных токоферолов в комбинации с растительным маслом, взятых в соотношении 2,3-2,5:1, в количестве 0,02-0,05% к массе рыбного жира. Функциональный пищевой ингредиент является источником полиненасыщенных жирных кислот, обеспечивает оптимальное соотношение в суточном рационе омега-6 и омега-3, имеет высокую устойчивость к окислению, нейтральные органолептические характеристики.The invention relates to the food industry, namely to food ingredients intended for the enrichment of food products with polyunsaturated fatty acids (PUFA), to obtain functional and specialized foods and biologically active food additives. Functional food ingredient with a given lipid profile contains fish oil and natural antioxidant, while using fish oil with a total content of polyunsaturated fatty acids of at least 25%, while the sum of eicosapentaenoic and docosahexaenoic acids is at least 5%, the ratio of omega-6 and omega -3, respectively, 3-5: 1, fish oil obtained from the fatty raw material of African catfish Clarias Gariepinus grown in aquaculture conditions, the peroxide value in the development of the ingredient does not exceed 1.6 mmol 1/2 O / kg. As a natural antioxidant take a mixture of natural tocopherols in combination with vegetable oil, taken in a ratio of 2.3-2.5: 1, in an amount of 0.02-0.05% by weight of fish oil. The functional food ingredient is a source of polyunsaturated fatty acids, provides the optimal ratio in the daily diet of omega-6 and omega-3, has a high resistance to oxidation, neutral organoleptic characteristics.
