Abstract

Способ получения экструдированной замороженной композиции на основе воды с высоким содержанием льда с использованием экструдера с цилиндрическим шнеком с входным отверстием и выходной головкой, способ включает: (а) подачу незамороженной композиции в цилиндр экструдера через входное отверстие, причем незамороженная композиция включает: (i) по меньшей мере 85%, предпочтительно по меньшей мере 90 вес.% воды; и (ii) по меньшей мере 0,5%, предпочтительно по меньшей мере 1%, более предпочтительно по меньшей мере 2 вес.% одного или более другого ингредиента; (b) замораживание незамороженной композиции внутри цилиндра с получением замороженной композиции; и (с) экструдирование замороженной композиции через выходную головку экструдера с получением замороженного продукта на основе воды; где по меньшей мере часть цилиндра охлаждают хладагентом при первой температуре, достаточной для получения замороженной композиции, таким образом, что замороженная композиция заморожена, но способна экструдироваться.
