Abstract

The invention relates to an enzyme for decomposing high- molecular carbohydrates, to the high-molecular carbohydrate isolated, to a process for the selection of a microorganism that produces such an enzyme, and to a process for the preparation of such an enzyme. The enzyme in question can decompose high-molecular carbohydrates called soluble polysaccharides (SPSs). The enzyme in question (SPS-ase) can decompose an SPS to its degradation products. The latter are bound on proteins in an aqueous medium to a lesser extent than SPS itself is bound on them before it is decomposed. The process for the selection of microorganisms that produce SPS-ase is based on the fact that the main carbon source in the growth medium is SPS, and it is also based on a qualitative plate test carried out on SPS agar. A process for the preparation of an SPS-ase with the aid of a filed strain of Asp. aculeatus is described. SPS-ase can also be used in the fruit and vegetable sector, as well as for making juices and wine.
