Acest factor este constituit dintr-un complex enzimatic si/sau un complex bacterian. Complexul enzimatic cuprinde un complex celulolitic de origine fungica, asociat sau nu la complecsii enzimatici cunoscuti dinainte. Complexul bacterian cuprinde bacterii gramnegative din specia enterobacteriaceaelor asociate sau nu la bacteriile cunoscute dinainte si în special la bacteriile gram-pozitive care fermenteaza amidonul, dar nu fermenteaza maltoza. Aceasta compozitie pe baza de enzime si/sau de bacterii dispuse pe suport de cereale da rezultate deosebit de importante în cazul produselor vegetale sarace în glucide.
