Malzextrakt ist eine sehr hygroskopische Substanz (vgl. Hagers Handbuch der pharmazeutischen Praxis. Zweiter Band. 1903. Seite 343). Beim Liegen an der Luft zieht derselbe Wasser an, so daß sich nach einiger Zeit das trockene Pulver in einen Brei verwandelt. Dadurch wird natürlich die Handlichkeit des Präparates sehr beeinträchtigt. Die Aufnahme von Wasser bringt aber auch doch den Nachteil mit sich, daß der Extrakt leicht Veränderungen erleidet. So ist bekannt, daß Malzextrakte, die mehr als 25 Prozent Wasser enthalten, leicht in Gärung geraten oder schimmeln (Hager, a. a. 0., Seite 342, unter Eigenschaften). Dies bedingt, daß Malzextrakt und alle Präparate, welche Malzextrakt enthalten, sorgfältig aufbewahrt werden müssen.Malt extract is a very hygroscopic substance (see Hager's handbook of pharmaceutical Practice.
