Dies ist insbesondere darauf zurückzuführen, daß zwischen der Schneide des Rundmessers und der Oberkante der als Abstreifer dienenden Leiste ein Schlitz besteht, der durch Herstellungstoleranzen und elastische Deformationen hervorgerufen wird. Hierbei besteht die Gefahr, daß die Zipfel! oder andere Reste des Schneidgutes von der Flanke des rotierenden Messers erfaßt, von diesem in der. Schlitz gezogen und dann weiter in den Raum zwischen dem Gehäuse und dem Messer mitgenommen werden, wo sie sich ablagern. Dort zersetzen sie sich innerhalb kurzer Zeit und gehen in Fäulnis über. Aus hygienischen Gründen ist es daher bei bekannten derartigen Schneidemaschinen unbedingt erforderlich, das Rundmesser häufig abzunehmen und dieses sowie die ihm zugekehrte Seite des Gehäuses gründlich zu reinigen. Da das Abnehmen des Rundmessers und dessen Reinigung ebenso wie die Reinigung des Gehäuses mit Zeitaufwand verbunden und umständlich ist, wird dies aus Bequemlichkeit oft unterlassen.
