Mit der der Erfindung entsprechenden Lösung werden zahlreiche Vorteile erzielt:
- 1) Kühlung und Erwärmung finden schneller statt, da die erwärmende und/oder kühlende Fläche um ca. 10% vergrößert wird.
- 2) Kühlung findet schneller statt, da Kälte sowohl von der Mitte des Topfs als auch von den Rändern in die Speise übertragen wird. Kühlung ist möglich, da in das Gehäuse ein gesondertes Rohr zur Ableitung (oder zur Einleitung) der Kühlflüssigkeit geführt wird. Falls die Kühlung nur so stattfände, dass das Gehäuse der Welle zwei Mäntel aufweist, wäre die für wirkungsvolle Funktion erforderliche starke Strömung nicht möglich und die Kühlung wäre nicht gleich wirkungsvoll.
- 3) Kühlung findet auch aus dem Grund schneller statt, dass aus der übrigen Konstruktion des Topfs und aus dem Mischmotor keine Wärme über die Welle in die Speise gelangen kann.
- 4) Erwärmung findet schneller statt, da Kälte sowohl von der Mitte des Topfs als auch von den Rändern in die Speise übertragen wird. Die Erwärmung ist wirkungsvoll, da in das Gehäuse ein gesondertes Rohr für die Ableitung der Luft geführt wird. Wenn die Erwärmung nur so stattfände, dass das Rohr zwei Mäntel aufweist, bliebe im Oberteil Luft und die Erwärmung wäre nicht gleich wirkungsvoll (Dampf ist nicht gesättigt).
