Abstract

Diese Nebenprodukte haben aber gerade die gewünschten Eigenschaften, nämlich dass sie bereits gewürzt sind und in separierter Form vorliegen, da die Schwarten als Kollagene weiterverarbeitet werden. Ein Abfallprodukt wird also ein hochwertiges Lebensmittel, das auf einfache Weise mit Pflanzenöl gemischt und emulgiert werden kann. Bei der Herstellung des kollagenhaltigen Fleischerzeugnisses wird darüber hinaus bei einem angewandten Verfahren des Anmelders Pflanzenöl eingesetzt, das ebenfalls wiederverwendbar ist, so dass aus den beiden Abfallprodukten direkt das hochwertige Speisefett erzeugt werden kann. Das nach der Erfindung hergestellte Speisefett ist aufgrund der geschmacklichen Prägung durch die gebundenen Gewürze als Geschmacksträger für Fleisch, Wurst, Suppen, Fertiggerichte und Soßen besonders geeignet und hierfür einsetzbar und enthält sowohl gesättigte als auch ungesättigte Fettsäuren in einem besonders bekömmlichen Mischungsverhältnis. Das Pflanzenöl bewirkt, dass das Speisefett nicht die Festigkeit erreicht, die normalerweise Schweineschmalz beim Erkalten erreicht. Es bleibt also auch dann schmierfähig, wenn es im Kühlschrank gelagert wird. Wenn darüber hinaus Geflügelfett beigemischt wird, kann eine besondere Geschmacksrichtung, aber auch eine gewünschte Konsistenz, erreicht werden. Ein Speisefett nach der Erfindung kann auch mit Kollagen gemischt werden, beispielsweise als Fleischerzeugnis für die Soßenfertigung und für die Panadenherstellung. Als Pflanzenöle können alle bekannten Speiseöle beigemischt werden. Zum Braten eignen sich insbesondere Rapsöl, Sonnenblumenöl, Kokosöl, zum Brotaufstrich Nussöle, Olivenöl und sonstige, insbesondere kaltgepresste Öle.
