Die Lösung der Aufgabe besteht darin, daß die auf bekannte Weise hergestellten und als trockene Pulver (sprühgetrocknete Produkte) vorliegenden Proteinhydrolysate mit aliphatischen Alkoholen mit maximal 3 C-A_tomen oder mit Gemischen aus diesen Alkoholen mit niederen Alkanestern niederer Carbonsäuren extrahiert werden. Als Alkohole v/erden vorwiegend Methanol, Äthanol, Propanol oder Isopropanol verwendet. Als niederer Alkanester niederer Carbonsäuren kommt vorzugsweise Essigsäureäthyl ester zur Anwendung. Die praktische Durchführung erfolgt so, daß das durch Sprühtrocknung oder eine ähnliche Methode erhaltene Proteinhydrolysat, mit einem Wassergehalt bis maximal 8 %,mit wenig Methanol oder einem anderen geeigneten Alkohol bis zur Siedetemperatur des betreffenden Alkohols erhitzt wird. Die Trennung des ungelöst gebliebenen Feststoffes vom Lösungsmittel erfolgt durch Absaugen auf einer Nutsche oder durch Zentrifugation. Der Feststoff wird, mit einer geringen Menge des gleichen Alkohols nachgewaschen und an der Luft oder, in anderer geeigneter Weise getrocknet. Das so erhaltene Proteinhydrolysat ist geschmacks- und geruchsfrei und enthält keine Amine, Ammoniumsalze oder Ketosäuren. Die biologische Wertigkeit des erhaltenen Produktes ist entsprechend der Menge der entfernten Nebenprodukte erhöht, indem der Anteil der essentiellen Aminosäuren Aminosäuren gegenüber dem Ausgangsprodukt ansteigt.
