Abstract

Se describe una solución de lactasa en la que la proporción de una fracción de lactasa que tiene un peso molecular de aproximadamente 120 kDa medido mediante electroforesis en gel de poliacrilamida SDS es de 20% o más. Esta solución de lactasa es superior en estabilidad térmica y puede ser usada incluso cuando se somete a una carga térmica de 40°C o superior. Asimismo, se describe un método para producir una solución de lactasa, el cual comprende una etapa en la que se cultiva un microorganismo, tal como una levadura del género Kluyveromyces; una etapa de recolección en la que la lactasa se recolecta del producto de cultivo obtenido en la etapa de cultivo; y una etapa de purificación en la que la lactasa recogida en la etapa de recolección se purifica, en donde la etapa de purificación incluye uno o más ciclos de: una etapa en la que se llevan a cabo un tratamiento de remoción de sales y un tratamiento de desalación.
