能量食物制品

锻炼产生对肌肉内和肌肉外的物质(substrates)的过度需求。碳水化合物作为肝内和肌肉内糖原的前体,及作为可以立即使用的能源特别重要。相应地,在缺氧和需氧条件下需要短期的能量供给。也需要碳水化合物作为直接或间接用于在肝内和肌肉内合成糖原的前体。如果糖原储备低或不是最佳的,肌肉不能有效地发挥功能或维持高水平的能力输出。运动员的糖原消耗会导致较差的表现和低效率。已证明使用特殊的碳水化合物作为机能促进剂能增加或保持糖原储备及血糖的可利用性。
本发明的食物制品可以包括能咀嚼的或可食用的棒状物、糖果、糕点、饼干、锭剂或咀嚼胶皮糖。优选能咀嚼的或可食用的棒状物。
根据本发明,高能量多糖食物制品由包括3-37%w/w半乳糖的糖类组分、0-25%w/w肌酸和选自碳水化合物、纤维和脂肪的其他非必需组分构成。
除非特别说明,本说明书中的百分比是重量百分比,并选择总量为100%。
半乳糖的量优选5-20%,更优选5-15%。
糖类组分还包括葡萄糖。在第一优选实施方式中,使用了等量葡萄糖和半乳糖。在第二优选实施方式中,半乳糖的量多于葡萄糖。
使用半乳糖产生一些优点。它不是胰岛素原的,即它本身不会诱发胰岛素反应,因此它的使用与等重的葡萄糖相比几乎与胰岛素反应无关。糖尿病患者或不耐受胰岛素的人可以使用本发明的产品。肝脏可以快速利用半乳糖以合成糖原或葡萄糖。它与其它糖相比几乎不引起牙齿腐蚀。
肌酸的使用不是必需的。在本发明优选的实施方式中加入10-25%肌酸。优选使用肌酸以抑制向肌酸酐的转化。此转化是一种天然的平衡。肾脏使肌酸酐快速排泄。为使向肌酸酐的转化减低到最小程度或阻止此转化,优选将肌酸以颗粒剂或粉末的形式包在干燥不透水的壳中制成胶囊。优选微囊包封。按此方法,通过溶解,肌酸在胃中释放。或者除封入胶囊外,通过制成分层的剂型使肌酸与可食用的棒状物的湿性部分隔离。例如可以将肌酸容纳在食用棒状物或锭剂的单独的层中。
本发明的食物制品在肌酸消耗的一般情况下是有用的,例如对于素食者或其肌肉功能的建立需要肌酸的个体,或在临床上是适当的情况。
锻炼对肌肉内外的物质(substrates)产生过度的需求。肌酸磷酸酯来自于食物肌酸或内源合成。肌酸磷酸酯对于在缺氧情况下的短期能量供给和能量从线粒体转移到收缩肌是必需的。如果肌酸储备低或不在最佳状态,肌肉不能有效地发挥功能或处于高水平的能量输出状态。运动员的肌酸消耗导致表现差和效率低。
可以以纯组分的方式提供半乳糖,在制备过程中与葡萄糖、淀粉和其他组分混合。或者可以使用例如通过乳糖水解制得的葡萄糖-半乳糖糖浆剂。可以用另外的纯品半乳糖补充半乳糖在这种糖浆中的量。
在棒状物中使用纤维是有益的,因为不同的纤维产品影响糖的释放和各种组分的结合,并能有效地延迟消化。可以使用0-5%的量。此外,在制备前可以将半乳糖或半乳糖-葡萄糖糖浆吸收到纤维上。按这种方法可以延缓半乳糖的吸收。
在另一实施方式中,食物制品可以有含有半乳糖的外部包衣层,以促进半乳糖的快速吸收。
优选有高浓度半乳糖的制剂以促进肝脏对半乳糖的吸收和快速生成糖原。增加量的半乳糖会减少从葡萄糖制造的脂类的量。半乳糖不是直接的脂肪前体。这是有益的,因为脂类不提供快速的能源。
通过实例进一步描述本发明,但没有任何对其限制的意味。
下述的表格和实施例列出了本发明的食物制品组合物的组分及用量。可以用常规方法将这些产品制成棒状物、糖果或锭剂。
在一个层状排列中,可以用坚硬干燥的糖层覆盖肌酸粉末或聚集体。或者可以用另外的含巧克力层作为水分屏障。可以用含肌酸层作为板状圆筒形的层,作为内层排列在棒状物中。按这种方法,可以将含肌酸的组分包裹。或者另外的组分,例如纤维、坚果和干果可以分层堆积在肌酸上形成层压制品。纤维层可以与糖浆合并形成复合层。
棒状物或其他食物制品的最外层可以含有单一薄层的硬糖,例如由半乳糖或半乳糖与葡萄糖的混合物或蔗糖组成。当部分棒状物进入胃中时,这种糖层的排列快速溶解。
在其他食物制品中,肌酸粉末或聚集物可以覆盖一层硬糖混合物、巧克力,或者同时覆盖二者,以形成100-500mg重量的颗粒。这些物质可以与其他组分在基质中结合形成分散单元,例如作为在糕点中的巧克力薄片。此包裹的排列可以与上述的各层结合。

Claims (11)

1.一种能量多糖食物制品,其中包括:包含3-37%w/w半乳糖的糖类组分;0-25%w/w肌酸;和选自碳水化合物、纤维和脂肪的其他非必需组分。

5.权利要求4所述的食物制品,其中包括等量的半乳糖和葡萄糖。
6.权利要求3所述的食物制品,其中半乳糖的量高于葡萄糖的量。
7.上述任一权利要求所述的食物制品,其中肌酸的量为10-25%。
8.上述任一权利要求所述的食物制品,其中将颗粒或粉末形式的肌酸包在胶囊中。
9.权利要求8所述的食物制品,其中将肌酸包封成微囊。
10.上述任一权利要求所述的食物制品,其中将肌酸容纳在一独立的层中。
11.上述任一权利要求所述的食物制品,它有硬糖形成的最外层,其中含有半乳糖或半乳糖与蔗糖的混合物。
