精制大蒜油,为酱状产品或液体产品,酱状产品是将成熟的蒜头洗净,剥皮,晒干,粉碎,与食用油相混,强力搅拌,包装而得。液体产品是将成熟的蒜头洗净,剥皮,晒干,粉碎,取汁,过滤,与食用油相混,强力搅拌,包装而得。其优点突出,浓郁清香依存,味道鲜美,有效成份损失少,大蒜储存保质的时间可长达两年不变质,并且其中不加食盐及防腐剂,防病保健效果好,使用方便,用途广泛。

精制大蒜油
本发明涉及一种食品。
大蒜又名胡蒜,是城乡人民喜爱的蔬菜和调味品。在国外由于大蒜具有特殊的营养价值和医疗保健作用而受高度重视。美国大蒜之乡吉尔罗伊在每年7月份的最后一周举行大蒜节,展出100多种大蒜制成的精美食品,供参观者品尝。  以色列每年举行一次大蒜节。英国还在国际互联网上开设了“大蒜信息中心”,提供有关大蒜的最新研究动态。
蒜头中的碳水化合物、蛋白质、磷、维生素B1(硫胺素)及尼克酸含量较高,并含有人体必需的多种氨基酸。据研究,新鲜蒜头中微量元素硒的含量在蔬菜中是最高的,达到0.276微克/克,一般蔬菜的含硒量仅为0.01微克/克。  硒是人体必需的微量元素,并具有抗氧化的功能,被认为有防癌作用。大蒜中锗的含量为73.4毫克/100克,在植物中也是较高的。
大蒜的独特辛辣气味可以解除鱼、肉的腥味,增进食欲,是膳食烹调中不可缺少的调味品。
自古以来,大蒜就被民间作为防疫治病的必备食品和药品,用以治疗胃肠疾病、肺病、百日咳等。现代医学研究发现,大蒜的医疗保健作用有:1.广谱抗菌作用,大蒜是广谱杀菌素,对危害人或畜、禽的多种病原菌有抑杀作用;2.预防心血管疾病,大蒜能降低血液中胆固醇浓度,延缓血管硬化,增加心肌收缩能力,扩张末梢血管;3.预防糖尿病,大蒜可减少血液中糖的含量,保护肝功能,提高血液中胰岛素含量;4.有一定的防癌抗癌作用。
大蒜的种种功效主要来源于所含的大蒜素。大蒜素又称蒜辣素,英文译名为阿利辛(ALLicin),是一种含硫化合物,每100克新鲜蒜头中,大蒜素的含量为0.5%-2%。
将蒜头加工成大蒜油,不但增加了一种大蒜食用的新方法,而且有利于延长大蒜的保质期,使其中的大蒜素尽量少受损失。本发明之目的在于推出一种精制大蒜油,目前,市场上未见大蒜油一类的产品出售,也未见有关资料报道。
本发明的技术方案是,将蒜头洗净、干燥、剥皮、粉碎、与食用油混合、搅拌,即得酱状产品;或者,将蒜头洗净、干燥、剥皮、粉碎、取汁、过滤,与食用油混合,搅拌,即得液体产品。
本发明推出的精品大蒜油有许多优点,一是大蒜的浓郁清香依存,味道鲜美;二是大蒜的有效成份损失少,防病保健效果好;三是大大加长了大蒜储存保质的时间,可长达两年不变质,并且其中不加防腐剂,有利于大蒜有效成份不异变;四是使用方便,用途广泛,菜用、烹调、医用、保健都可。
结合实践,介绍本发明的最佳实施例。精制大蒜油为酱状产品或液体产品,酱状产品是将成熟的蒜头洗净,剥皮,晒干,粉碎,与食用油相混,强力搅拌,包装而得,其大蒜末与食用油相混时,重量比为1∶0.3~1。液体产品是将成熟的蒜头洗净,剥皮,晒干,粉碎,取汁,过滤,与食用油相混,强力搅拌,包装而得,其大蒜汁与食用油相混合时,重量比为1∶2~4。本发明中所指的食用油为食用植物油,如菜子油、茶子油、豆油、花生油、芝麻油。酱状产品中还可加入辣椒、花椒、山苍子等佐料。

1、精制大蒜油,为酱状产品或液体产品,其特征在于,酱状产品是将成熟的蒜头洗净,剥皮,晒干,粉碎,与食用油相混,强力搅拌,包装而得,其大蒜末与食用油相混时,重量比为1∶0.3~1,液体产品是将成熟的蒜头洗净,剥皮,晒干,粉碎,取汁,过滤,与食用油相混,强力搅拌,包装而得,其大蒜汁与食用油相混合时,重量比为1∶2~4。
