Description

富含天然胡萝卜素和维生素E的食用油的精制
本发明涉及富含天然胡萝卜素和维生素E的食用油的精制方法,用该方法可基本上将大部分天然胡萝卜素和维生素E保留在精制油中。更具体地说,本发明涉及棕榈油的精制方法,用该方法可基本上将大部分天然胡萝卜素和维生素E保留在精制油中。
粗的棕榈油富含胡萝卜素(一类C40多不饱和烃)是已知的事实。工业上培育的油棕榈能榨出含500-700ppm胡萝卜素(其中α和β胡萝卜素占胡萝卜素总量的90%)的粗棕榈油。但是,新克隆的或新的油棕榈树品种能制得胡萝卜素浓度为1000-3000ppm的粗棕榈油。已知胡萝卜素具有维生素原A性能,并且近来研究表明β-胡萝卜素还能抑制瘤的增殖,因此能减少动物(包括人体)内癌的形成。目前使用的食用棕榈油是精制的、漂白的和脱味的油。但是,常用于棕榈油精制工业中制造精制的、漂白的和脱味形态的棕榈油的精制方法在该油脱味和脱酸的同时会破坏胡萝卜素。用现有方法精制的棕榈油中游离脂肪酸(FFA)的含量通常小于0.1%,胡萝卜素的含量常小于20ppm,并且在51/4”比色皿(Lovibond标度)中的颜色小于3红色。概括地说,现有的粗棕榈油精制方法包括在240-260℃的温度下和1-3乇的压力下脱味,该方法不仅除去了不合需求的脂肪酸,而且破坏了全部胡萝卜素。破坏了α、β、γ和ζ、玉米胡萝卜素(zeacarotene)、顺式α-胡萝卜素、顺式β-胡萝卜素和番茄红素。
在现有的工厂格局中,在同一设备中进行粗棕榈油的脱气和脱气油的脱味。具体的操作温度为240-260℃。在该温度范围,不合需求的游离脂肪酸(FFA)被除去了,但该方法破坏了全部胡萝卜素。如果降低操作温度,则不能全部除去FFA以满足对食用油的规定,得到的产品不能完全脱味并且味道不柔和。
近来尝试制造基本保留大部分天然胡萝卜素和维生素E的精制棕榈油。授予马来西亚棕榈油研究所的澳大利亚专利AU-B-31084189公开了基本不破坏存在在棕榈油中的胡萝卜素的改进的食用棕榈油精制方法,该方法包括对棕榈油施加小于0.060乇的压力和小于200℃温度的步骤。根据该发明,使棕榈油或棕榈油产品最好在100-200℃的温度下在0.003-0.06乇的压力下通过一个脱味剂。在该方法中,游离脂肪酸被蒸去并且使棕榈油脱味,但是胡萝卜素未受到破坏。该脱味的棕榈油中游离脂肪酸含量小于0.12%。胡萝卜素含量和过氧化物值与加工前几乎相同。该精制棕榈油具有柔和的气味。所述澳大利亚专利公开的实施例能在实验室规模复现该发明。但是,中试或工业规模重复这些实施例产生了不同的结果。不能制得具有该澳大利亚专利的表1、2、3或4所列特性的精制棕榈油。
相信在该蒸馏方法中气体、轻物质和游离脂肪酸在分子蒸馏段产生应变。提高分子蒸馏器的操作温度,可减少精制油中FFA的含量,但同时破坏了油中胡萝卜素的含量。在100-200℃的操作温度和0.003-0.060乇的压力,由于不能有效地除去在冷凝柱中冷凝的FFA,因此难以除去所有的FFA。
因此本发明的一个目的是提供一种精制方法,该方法将FFA降至一个可接受的程度,将棕榈油脱味至一个可接受的水平,使棕榈油无味,并且粗棕榈油中所含的胡萝卜素和维生素E超过90%被保留在精制的棕榈油中。
本发明公开一种制造富含天然胡萝卜素和维生素E的精制棕榈油的工业方法。所述富含天然胡萝卜素的精制和脱味棕榈油的制造方法包括在160-210℃的温度下在0.003-0.08毫巴的压力下在短路径(short path)蒸馏器中蒸馏该油,并通过在蒸馏器中进行冷凝除去油中的游离脂肪酸(FFA)。FFA是将油和FFA的混合物置于在大于油中FFA熔点的温度(通常为20-80℃的温度)下运行的内冷凝器体系中而被除去的。在将油和汽化的FFA导入蒸馏器以后立即冷凝FFA蒸汽以从蒸馏器中除去油中的FFA。
在蒸馏器中的冷凝器体系带有流过其中的调温水(tempered water)流,调温水的温度稍高于FFA的熔点。
加入蒸馏器单元的棕榈油最好预热至160℃,并最好经脱气、脱胶和漂白。该棕榈油可以是下列中的任何一种:脱胶和漂白的棕榈油、脱胶和漂白的棕榈油精、脱胶和漂白的棕榈油硬脂精、脱胶和漂白的棕榈油中间馏分、脱胶和漂白的超级油精、粗的棕榈油中间馏分和粗的棕榈油超级油精、粗的棕榈油油精、粗的棕榈油硬脂精、粗的棕榈油或杂的棕榈油。
本发明还公开了用于制造富含天然胡萝卜素和维生素E的精制和脱味棕榈油的蒸馏器,该蒸馏器包括内冷凝体系用于从蒸馏器中除去冷凝的FFA。
在本发明的一个实例中,将预处理(脱胶)的粗棕榈油或油精或硬脂精从约30-50℃的外部储存容器中通过蒸汽加热的预热器泵入装有或未装有回流冷凝器单元的脱气设备中。将预热器中的油加热至80-160℃并保持在该温度。将脱气单元中的运行压力保持在0.5-5毫巴。在该温度和压力条件下蒸发稀释的气体、轻物质(lights)和部分脂肪酸。这些蒸发的蒸汽进入用20-60℃温度的水冷却的冷却回流冷凝单元,从而将脂肪酸冷凝回脱气器容器(packing)中。
剩余的蒸汽在温度为-5~+15℃的外部冷却冷凝器中冷凝。将脱气的油泵经另一个温度为160-180℃的蒸汽加热预热器,然后将该油泵入短路径蒸馏器(分子蒸馏器),在160-210℃的温度下和0.003-0.08毫巴的压力下蒸去脂肪酸。这些脂肪酸被冷凝在被水冷却至并保持在35-80℃的内冷凝器(在短路径蒸馏器内)中。冷凝在内冷凝器中的脂肪酸被收集在单独的接受器中并用卸货泵将其泵入储存容器中。
在冷却器中冷却至50-70℃以后,将蒸馏器中的残留物泵入储存容器中。该残留物是富含天然胡萝卜素和维生素E的精制棕榈油。该精制油的脂肪酸含量小于0.08%,并且无嗅无味。该精制油的过氧化物值为0-1.0meq/kg,最小的胡萝卜素含量为500ppm,最小的维生素E(生育酚类和生育三烯酚类)含量为800ppm。在加工过程中胡萝卜素和维生素E的损失为0-5%。蒸馏物(棕榈脂肪酸蒸馏物)的胡萝卜素含量最大为30ppm,维生素E含量最大为1000-2500ppm,FFA含量最小为90%。在51/4”Lovibond标度中残余物的色度为19R-25R。
该蒸馏方法在不同阶段需要不同的真空度。真空体系是多个串联和并联的真空泵的组合。用于蒸馏器的真空泵是油蒸汽喷射的真空泵。这种真空泵用一个特殊的冷却水环路冷却。冷却水的入口保持在4-6巴并处于20-30℃的温度。其余的真空体系由一系列罗茨式鼓风机和液环真空泵组成。
真空体系用带不同冷却螺旋管的冷阱保护,其中冷却剂的温度保持在-15~+60℃之间的不同温度。为了加热蒸馏器,使用USDA批准的加热流体(食品级)。
通过下列实施例将进一步说明本发明。
实施例1
将预热(脱胶)的粗棕榈油预热至120℃,在1毫巴的压力下在脱气器中脱气,并以2000kg/hr的速率以0.008毫巴的压力通过短路径蒸馏器。用一个温度控制系统使进入内冷凝器的水温保持在57℃。将蒸馏器的温度保持在180℃。发现富含天然胡萝卜素&维生素E的精制和脱味油以及棕榈脂肪酸蒸馏物(PFAD)具有表1所示的特性。

实施例2
将预热(脱胶)的粗棕榈油预热至100℃,在0.8毫巴的压力下在脱气器中脱气,并以1000kg/hr的速率以0.005毫巴的压力通过短路径蒸馏器。将蒸馏器的温度保持在175℃。将进入内冷凝器的调温水的温度保持在57℃。发现富含天然胡萝卜素&维生素E的精制和脱味油以及棕榈脂肪酸蒸馏物(PFAD)具有表2所示的特性。

Claims (21)

1.一种将油置于小于0.060毫巴的压力和小于200℃的温度下制造富含天然胡萝卜素的精制和脱味油的方法,其特征在于所述方法包括下列步骤:
b)在160-200℃的温度下在0.003-0.08毫巴的压力下在短路径蒸馏器中蒸馏所述油;和
c)在蒸馏器中进行冷凝除去所述油中的游离脂肪酸(FFA)。
2.如权利要求1所述的方法,其特征在于将油和FFA的混合物置于在高于油中FFA熔点的温度下运行的内冷凝器体系中以除去FFA。
3.如权利要求1所述的方法,其特征在于在将油和FFA导入蒸馏器后立即冷凝FFA蒸汽以从蒸馏器中除去油中的FFA。
4.如权利要求1所述的方法,其特征在于该油被预热至160℃并经脱气。
5.如权利要求2所述的方法,其特征在于所述内冷凝器的温度为20-80℃。
6.如权利要求2所述的方法,其特征在于冷凝器体系带有流过其中的调温水流,并且该调温水的温度稍高于FFA的熔点。

9.如权利要求8所述的方法,其特征在于所述油选自脱胶和漂白的油、脱胶和漂白的棕榈油、脱胶和漂白的棕榈油精、脱胶和漂白的棕榈油硬脂精、粗的棕榈油精、粗的棕榈油硬脂精、脱胶和漂白的棕榈油中间馏分、脱胶和漂白的超级棕榈油精、粗的棕榈油中间馏分、粗的棕榈油超级油精、粗的棕榈油或杂的棕榈油。
10.用权利要求1-9中任何一项所述方法制得的富含天然胡萝卜素的精制的脱味油。
11.如权利要求4所述的方法,其特征在于所述油是在带回流冷凝器的脱气器单元中脱气的。
12.用如权利要求1-8中任何一项所述的方法制得的富含天然胡萝卜素的精制的脱味油,它还含有天然维生素E。
13.如权利要求1-10中任何一项所述的富含天然胡萝卜素的精制的脱味油,它的胡萝卜素和维生素E含量最少占加入蒸馏器以前所述油中胡萝卜素和维生素E含量的90%。
14.如权利要求13所述的富含天然胡萝卜素的精制的脱味油,其特征在于所述富含天然胡萝卜素的精制的脱味油最少含有500ppm的胡萝卜素。
15.如权利要求13所述的富含天然胡萝卜素的精制的脱味油,其特征在于所述富含天然胡萝卜素的精制的脱味油最少含有800ppm的维生素E。
16.如权利要求13所述的富含天然胡萝卜素的精制的脱味油,其特征在于所述富含天然胡萝卜素的精制的脱味油含有小于0.1%的FFA。
17.一种用于制造富含天然胡萝卜素和维生素E的精制的脱味油的蒸馏器,其特征在于所述蒸馏器包括用于从蒸馏器中除去冷凝的FFA的内冷凝体系。
18.如权利要求17所述的蒸馏器,其特征在于所述蒸馏器是短路径蒸馏器。
19.如权利要求18所述的蒸馏器,其特征在于所述短路径蒸馏器是分子蒸馏器。
20.如权利要求1-10中任何一项所述方法得到的蒸馏物,它包括最大为30ppm的胡萝卜素,最大为1000-2500ppm的维生素E,最小为90%的FFA。
