solid state fermentation of distilled liquor: and (2) closing the sieve plate, rotating the reaction tank 1 by adjusting the connecting rod to enable the stirring piece 4 to be positioned at the top of the tank body 1-1, controlling the fermentation temperature through a steam jacket structure and a cooling jacket structure, and discharging yellow water generated in the fermentation process out of the tank through a pipeline butt joint port 1-5 positioned on the tank body 1-1.
Further, the method comprises:
preparing a saccharification liquid of brewed wine:
1. saccharification: a material feeding port 1-3 on the tank body 1-1 is positioned at the top through a connecting rod 2, so that the reaction tank 1 is in a positive placing state;
the stirring shaft 3 at the bottom is connected with a stirring paddle 4-1, the first valve 7-5 at the bottom is closed, the lees discharging port 6 at the side surface of the tank body 1-1 is closed, and the external pipeline 8 at the top is connected with a saccharification water pipeline of the production line; opening a second valve 7-7 and a third valve 8-1, injecting saccharification water, starting a stirring paddle 4-1, opening heat source steam, and introducing the heat source steam into a jacket of the tank body 1-1 to ensure that the water temperature is raised to a preset temperature;

and (3) fermentation control: during solid fermentation of fermented grains, monitoring the temperature of fermented grains by temperature electrodes 1-6 every day, and controlling the temperature of products by a steam jacket structure 1-8 and a cooling jacket structure 1-7; and manually sampling from a sampling port 1-4, and monitoring the moisture, acidity, alcohol content, starch and sugar content of the fermented grains.
