The invention relates to a dipeptide tripeptide and amino acid product produced by vegetable protein and a preparation method thereof, and the invention contents are as follows: 1. the technological process of simulating human body's digestion of protein, i.e. acid and enzyme double-decomposition method, is innovated in vitro. (3) adjusting the temperature of the raw material liquid treated in the step (2) to 54-56 ℃, adding 0.3-1.5% of compound protease for enzymolysis for 24-68 hours, wherein the pH of the material before enzymolysis is required to be 6.8-7.8, the temperature in the enzymolysis process is required to be controlled to be 54-56 ℃, and the enzymolysis process needs to be stirred at a low speed;
(4) carrying out inactivation protease treatment on the feed liquid subjected to enzymolysis in the step (3) at the temperature of more than 90 ℃ for 15 seconds and sterilization treatment on the feed liquid;
(5) blending the feed liquid obtained in the step (4) according to the standard of the liquid product, and performing aseptic filling to obtain a plant protein liquid product capable of being directly absorbed;
(6) and (5) concentrating the feed liquid in the step (4), and performing spray drying on the solid matter which reaches more than 40% to obtain a plant protein powder product capable of being directly absorbed.
The invention has the following advantages and positive effects:

(3) adjusting the temperature of the raw material liquid treated in the step (2) to 54-56 ℃, adding 5kg of compound protease, namely papain, trypsin, oligopeptidase, carboxypeptidase, aminopeptidase and compound protease, in a proportion of 1;
(4) carrying out inactivation protease treatment on the feed liquid subjected to enzymolysis in the step (3) at the temperature of more than 90 ℃ for 15 seconds and sterilization treatment on the feed liquid;
(5) blending the feed liquid obtained in the step (4) according to the standard of liquid products, and carrying out aseptic filling to obtain a soybean protein liquid product capable of being directly absorbed;
(6) concentrating the feed liquid in the step (4), and spray drying the solid matter of which the content is more than 40% to obtain the soybean protein powder product capable of being directly absorbed
Example 2
(1) Weighing 1000kg of mung bean protein powder raw material, adding water for mixing, adding hydrochloric acid into the mixture until the water content of the material is between 90 and 100 percent to adjust the pH value of the material to be 2.0, slowly stirring for 5 to 7 hours at the temperature of between 40 and 50 ℃, and simultaneously adding 5kg of acid protease accounting for the weight of the substrate;
(2) mixing the feed liquid treated in the step (1) with water in an amount which is 1 to 8 to 10 times of the weight of the substrate, and carrying out size mixing treatment;
(3) adjusting the temperature of the raw material liquid treated in the step (2) to 54-56 ℃, adding 5kg of compound protease, papain, trypsin, oligopeptidase, carboxypeptidase, aminopeptidase and compound protease in a ratio of 1;
(4) carrying out inactivation protease treatment on the feed liquid subjected to enzymolysis in the step (3) at the temperature of more than 90 ℃ for 15 seconds and sterilization treatment on the feed liquid;
(5) blending the feed liquid in the step (4) according to the standard of liquid products, and performing aseptic filling to obtain a mung bean protein liquid product capable of being directly absorbed;
(6) and (4) concentrating the feed liquid in the step (4), and spray-drying until the solid content reaches more than 40% to obtain a mung bean protein powder product capable of being directly absorbed.
Example 3
(1) Weighing 500kg of corn protein powder raw material, adding water for mixing, adding hydrochloric acid into the mixture until the water content of the material is between 90 and 100 percent to adjust the pH value of the material to be 2.0, slowly stirring for 5 to 7 hours at the temperature of between 40 and 50 ℃, and simultaneously adding 2.6kg of acid protease accounting for the weight of the substrate;
(2) mixing the feed liquid treated in the step (1) with water in an amount which is 1 to 8 to 10 times of the weight of the substrate, and carrying out size mixing treatment;
(3) adjusting the temperature of the raw material liquid treated in the step (2) to 54-56 ℃, adding 2.6kg of compound protease, papain, trypsin, oligopeptidase, carboxypeptidase, aminopeptidase and compound protease in a ratio of 1;
(4) inactivating protease in the feed liquid obtained after the enzymolysis in the step (3) at the temperature of more than 90 ℃ for 15 seconds and sterilizing the feed liquid;
(5) blending the feed liquid obtained in the step (4) according to the standard of liquid products, and carrying out aseptic filling to obtain a high branched chain amino acid corn protein liquid product which can be directly absorbed;
(6) and (4) concentrating the feed liquid in the step (4), and performing spray drying on solid substances of which the solid contents reach more than 40% to obtain a high branched chain amino acid corn protein powder product capable of being directly absorbed.
Example 4
(1) Weighing 500kg of peanut protein powder raw material, adding water for mixing, adding hydrochloric acid into the mixture until the water content of the material is between 90 and 100 percent to adjust the pH value of the material to be 2.0, slowly stirring for 5 to 7 hours at the temperature of between 40 and 50 ℃, and simultaneously adding 2.6kg of acid protease accounting for the weight of the substrate;
(2) mixing the feed liquid treated in the step (1) with water which is 8 to 10 times of the weight of the substrate according to the weight ratio of 1 to 10, and performing size mixing treatment;
(3) adjusting the temperature of the raw material liquid treated in the step (2) to 54-56 ℃, adding 2.6kg of compound protease, papain, trypsin, oligopeptidase, carboxypeptidase, aminopeptidase and compound protease in a ratio of 1;
(4) inactivating protease in the feed liquid obtained after the enzymolysis in the step (3) at the temperature of more than 90 ℃ for 15 seconds and sterilizing the feed liquid;
(5) blending the feed liquid obtained in the step (4) according to the standard of liquid products, and carrying out aseptic filling to obtain a peanut protein liquid product which has the name of the pecans and can be directly absorbed;
(6) and (5) concentrating the feed liquid in the step (4), and performing spray drying on the solid matter which reaches more than 40% to obtain the peanut protein powder product which is called as the pecan and can be directly absorbed.
Claims (7)
1. A method for producing dipeptide tripeptide and amino acid products by using plant protein and a preparation method thereof are characterized in that: soybean protein, corn protein, mung bean protein and peanut protein are used as raw materials, and an acid and enzyme double-hydrolysis process is adopted in vitro, namely the digestion process of a human body to the protein is simulated.
2. The compound protease is a compound enzyme such as papain, trypsin, oligopeptidase, carboxypeptidase and aminopeptidase which breaks the peptide bond of amino acid to obtain a protein product with the tripeptide below.
3. It consists of dipeptides and tripeptides and complex amino acids, and science has proved that: only this part of the protein can be directly absorbed without digestion.
4. The preparation process comprises the following steps:

adjusting the temperature of the raw material liquid treated in the step (2) to 54-56 ℃, adding 0.3-1.5% of compound protease for enzymolysis for 24-68 hours, wherein the pH of the material in the enzymolysis is required to be 6.8-7.8, and the temperature in the enzymolysis process is required to be controlled to be 54-56 ℃ and is slowly stirred;
inactivating protease in the feed liquid after enzymolysis in the step (3) at the temperature of more than 90 ℃ for 15 seconds and sterilizing the feed liquid;
blending the feed liquid obtained in the step (4) according to the liquid product according to the standard, and performing aseptic filling to obtain a plant protein liquid product capable of being directly absorbed;
concentrating the feed liquid in the step (4), and spray drying until the solid content reaches more than 40% to obtain the plant protein powder product capable of being directly absorbed.

Secondly, the method for producing dipeptide tripeptide and amino acid products from plant protein and the preparation method thereof according to claim 1 are characterized in that: acid and enzyme double decomposition process, i.e. simulating the digestion process of human body to protein, the first step of regulating pH value of protein material to 2-3.5 with hydrochloric acid, adding acid proteinase and stirring for 5-7 hr.

And secondly, adding water for size mixing, simultaneously adjusting the pH value to 6.8-7.8, adding compound papain, trypsin, oligopeptidase, carboxypeptidase and aminopeptidase composite protease, wherein the ratio of the compound papain, trypsin, oligopeptidase, carboxypeptidase and aminopeptidase composite protease is 1.

Thirdly, the method for producing dipeptide tripeptide and amino acid products from plant protein and the preparation method according to claim 1, which is characterized in that: the vegetable protein is respectively soybean protein, corn protein, mung bean protein and peanut protein, and the four protein materials are used as protein raw materials to produce four directly absorbed vegetable protein products.
