Description
本发明涉及营养食品领域,特别是指具有增强人体免疫功能的蛋白质粉。
蛋白质是一切生命的物质基础,为机体细胞的重要组成部分,是人体组织更新和修补 的主要原料,与生命及各种形式的生命活动紧密联系在一起的物质。人体的生长、发育、 运动、遗传、繁殖等一切生命活动都离不开蛋白质。蛋白质作为人体不可缺少的营养成分 约占人体组织的20%,每天约有3%的蛋白质参与新陈代谢完成人体的各种生理活动。如果 蛋白质长时间地摄入不足,正常代谢和生长发育便会无法进行,轻者发生疾病,重者甚至 可以导致死亡。因此保证优质蛋白质的补给是关系到身体健康的重要问题,只有不断的摄 取优质的蛋白质,才能维持细胞的正常功能及其新陈代谢。
蛋白质的来源有两大类:一类是动物性蛋白质,另一类是植物性蛋白质。人体摄取蛋 白质类营养,不仅在于数量,其种类、质量也是非常重要的,即蛋白质的构成及营养价值如何十分重要。蛋白质的营养价值主要取决于消化度和该种蛋白质所含氨基酸的种类及组合。动物性蛋白属完全蛋白质,如乳清蛋白,对各种年龄层次的人都是有益的,但其含有 一定量的胆固醇和脂肪酸,过量食用可能导致人体脂肪和胆固醇升高,从而引发心脑血管 疾病的发生的危险。植物类蛋白也是优质的蛋白质,它的胆固醇和饱和脂肪酸含量都几乎 没有,多吃可维持人体的血液呈弱碱性。因此动物性蛋白和植物性蛋白合理的搭配食用, 则可以互取所长,提高蛋白质的吸收利用率和营养价值,更好的满足人体需求。
现有的蛋白质粉通常只包含动物蛋白或植物蛋白的单一蛋白,或者同时包含动物蛋白 和植物蛋白但是搭配不合理,或者是辅助成分搭配不协调,不利于人体的吸收,无法满足 人体需求。
本发明的主要目的在于克服现有技术的缺点,提供一种动物蛋白、植物蛋白比例协调, 具有增强人体免疫功能的蛋白质粉。
本发明采用如下技术方案:具有增强人体免疫功能的蛋白质粉,由如下重量份 数的配方组份组成:大豆分离蛋白,30~50份;浓缩乳清蛋白,10~30份;增强人体免 疫功能组分,6~35份;促进蛋白质消化吸收组分,0.01~5份;调节肠道组分,1~10 份;调味组分,5~30份。先将各组份进行过筛处理,按配方比例称取,依据配方中各组 分的比例及其理化性状,采用等量递加法进行混合,混合均匀后,采用无菌化自动包装设 备进行包装,即可。
前述具有增强人体免疫功能的蛋白质粉,其优选的配方组份组成如下:大豆分 离蛋白,38~42份;浓缩乳清蛋白,18~22份;增强人体免疫功能组分,10~15份;促 进蛋白质消化吸收组分,0.01~5份;调节肠道组分,2~8份;调味组分,10~30份。
前述具有增强人体免疫功能的蛋白质粉,还可以包括乳钙,0.5~10份。
前述具有增强人体免疫功能的蛋白质粉,所述增强人体免疫功能组分可选用牛磺酸、维生素C、维生素E、茯苓多糖。各组分的重量配比如下:牛磺酸,0.001~1份; 维生素C,0.01~5份;维生素E,0.001~1份;茯苓多糖5~30份。
前述具有增强人体免疫功能的蛋白质粉,所述茯苓多糖可选用茯苓多糖或茯苓提取物。
前述具有增强人体免疫功能的蛋白质粉,所述促进蛋白质消化吸收组分可选用牛磺酸、大豆磷脂、复合维生素B。所述复合维生素B包括维生素B1、维生素B2、维生 素B6、维生素B12、泛酸。
前述具有增强人体免疫功能的蛋白质粉,所述调节肠道组分为低聚果糖。
前述具有增强人体免疫功能的蛋白质粉,所述调味成分可选用结晶果糖、山梨醇、乳糖醇、木糖醇。
本发明的配方依据:
1、配方中采用了大豆分离蛋白与浓缩乳清蛋白合理搭配,更适合人体需要,并优化 了蛋白质的氨基酸配比,提高其营养价值。大豆分离蛋白来自大豆,经过特殊工艺提纯加 工的植物蛋白质,是理想的优质蛋白质,其蛋白质含量高达90%以上,主要成分90%以上 为大豆球蛋白,其中主要为11S球蛋白(相对分子量约35万)和7S球蛋白(相对分子量 约17万),含各种必须氨基酸,不含胆固醇,也几乎不含脂肪;浓缩乳清蛋白是以优质新 鲜牛奶中浓缩分离的一种纯天然优质完全蛋白质,蛋白质含量达80%以上,消化率高达 96%。而且乳清蛋白含44%的β-乳球蛋白、20%的α-乳白蛋白、13%的免疫球蛋白、5%的 血清白蛋白,此外还含有一些生物活性或保健特性的微量成分,如乳铁蛋白、乳过氧化物 酶、溶菌酶、酪蛋白巨肽、生长因子等。正是这些成分提供了乳清蛋白卓越的应用价值。 蛋白质对免疫功能有促进作用的原理及抗氧化作用机理都与其富含半胱氨酸和谷氨酸有 关,这两种氨基酸都是体内合成谷胱甘肽的前提,通过增加谷胱甘肽水平有助于提高人体 免疫系统,所以具有免疫功能。
2、牛磺酸是人体必需的一种氨基酸,它具有各种营养保健作用,也是免疫功能的生物 反应的调节物,它参与蛋白质、氨基酸的代谢,添加牛磺酸可提高蛋白质的消化率从而间 接促进动物生长发育。
3、维生素C可以提高机体免疫功能,最主要是增加T淋巴细胞的数量与活力。维生素E为一种强抗氧化剂,具有多种功能,也能提高免疫能力,可增强T淋巴细胞的活性。 B族维生素参与糖类、脂肪、蛋白质代谢以释放能量,维生素B1是将碳水化合物转化为 热量所不可缺少的维生素,维生素B2与脂肪氧化有关,维生素B6、维生素B12与蛋白质 代谢关系密切,促进蛋白质的消化吸收。
4、茯苓多糖是高级保健营养补给剂,具有增强生理活性,能激活免疫受体,提高机体免疫功能。诱生和促诱生干扰素和白细胞调节素,间接抗病毒、抗肿瘤,减轻放射与化 疗的副作用,且具保肝降酶、延缓衰老、安神健胃、美容养颜的作用。茯苓为我国传统常 用中药材,性平,味甘淡,入心、脾、肝、肾经。具有利水渗湿、健脾和胃、宁心安神等 功能,被誉为中药“八珍”之一,且毒性低、安全性大;LD50≥10g/Kg(大鼠口服),食 用食物之一。
5、强化了钙,乳钙是一种得自牛奶的天然优质新钙源,具有良好吸收率,这是因为牛乳中的钙约有70%呈酪蛋白胶粒状态,其中包括胶体状的磷酸钙约40%,和干酪素结合钙约30%。牛乳中的钙约有30%为可溶性钙,在可溶性钙中约有30%属离子性钙,60%为柠檬酸钙,余下的10%为磷酸钙。钙与磷的比例近似于人骨钙磷比例(1.8∶1),有助于加 快骨质生长,有助于增强骨密度。
6、添加膳食纤维低聚果糖,低聚果糖是一种存在于蔬菜和水果中的复合糖类,是双 歧杆菌的增殖因子,调节肠道微生物菌群,促进排便缓解便秘,避免高吸收率蛋白质易上 火,排便不爽的问题,并能提高机体的免疫功能,促进钙的吸收。
7、配方中的大豆磷脂具抗氧化及乳化作用,使蛋白质粉更易被人体消化和吸收,溶 解得更快更好,口感更幼滑。
8、配方中的结晶果糖、山梨醇、乳糖醇、木糖醇等为营养型甜味剂,天然无毒,对血糖影响小,糖尿病专家和食品工艺学家一致认为结晶果糖、山梨醇、乳糖醇、木糖醇仍 是适于糖尿病患者较好的甜味剂,本品适用于糖尿病及减肥人士。
由上述对本发明的描述可知,和现有技术相比,本发明具有如下优点:(1)植物蛋白 (大豆分离蛋白)、动物蛋白(浓缩乳清蛋白)比例协调,更适合人体需要;(2)添加增 强人体免疫力的成分如牛磺酸、维生素C、维生素E、茯苓多糖;(3)强化钙;(4)口感 好;(5)低胆固醇、低脂肪、低热量。
实施例1
1)先将原辅料进行过筛处理,按重量比称取原辅料,以总量100份计,大豆分离蛋白40份、浓缩乳清蛋白20份、牛磺酸0.05份、维生素C 0.3份、维生素E 0.05份、乳 钙3份、茯苓多糖10份、大豆磷脂0.1份、低聚果糖5份、结晶果糖21.5份。
2)采用等量递加法进行混合,混合均匀后,采用无菌化自动包装设备进行包装即可。
本发明的产品经福建省疾病预防控制中心进行增强免疫力功能试验检验结果及判定 意见如下:
金日高营养蛋白质粉成人(60kg计)推荐用量为20g/60kg/d,即0.333g/kg BW。动物采用清洁级ICR雌性小鼠,实验按人推荐量的5倍、10倍、20倍分别设1.66、3.33、 6.66g/kg BW三个剂量组和蒸馏水对照组,实验结果表明,与对照组相比,金日高营养蛋 白质粉:
1)各剂量组胸腺指数、脾指数和小鼠血清溶血素含量均无显著性差异。
2)高剂量组能显著增强ConA诱导的小鼠脾淋巴细胞增殖能力;中、高剂量组能明显 增强DNFB诱导的迟发型变态反应。
3)中、高剂量组能明显促进抗体生成细胞的生成。
4)中、高剂量组能明显促进小鼠碳廓清能力;并明显增强小鼠巨噬细胞吞噬鸡红细 胞的吞噬能力。
5)高剂量组能明显增强小鼠NK细胞活性。
根据《保健食品检验与评价技术规范》(卫生部2003),提示该样品具有增强免疫力功能。
本发明的产品经福建省疾病预防控制中心进行安全性毒理学试验结果及判定意见如 下:
1)急性毒性试验:金日高营养蛋白质粉小鼠经口急性试验结果为MTD>40g/kgBW, 相当于人日推荐量的121倍。
2)Ames试验:金日高营养蛋白质粉的Ames试验结果为阴性。
3)小鼠骨髓细胞微核试验:金日高营养蛋白质粉小鼠骨髓嗜多染红细胞微核试验结 果为阴性。
4)小鼠精子畸变试验:金日高营养蛋白质粉小鼠精子畸变试验结果为阴性。
5)30天喂养试验:金日高营养蛋白质粉各剂量组喂养大鼠30天,试验期间,各组动物生长活动正常。试验结束时各剂量组动物体重、体重增重、进食量、食物利用率及脏 体比与对照组比较,差异均无显著性(P>0.05)。各剂量组动物各项生化指标(谷丙转氨 酶、谷草转氨酶、总胆固醇、甘油三酯、尿素、肌酐、血糖、总蛋白、白蛋白)和血常规 值(血红蛋白、红细胞计数、白细胞计数、白细胞计数、白细胞分类)均在正常值范围内。 对受检脏器作组织病理学检查,未见特异性病变。
经上述安全性毒理试验证明本品无毒性,食用是安全的。
实施例2
1)先将原辅料进行过筛处理,按重量比称取原辅料,以总量100份计,大豆分离蛋白38份、浓缩乳清蛋白18份、牛磺酸0.1份、维生素C 0.32份、复合维生素B 0.03份、 维生素E 0.05份、乳钙2份、茯苓多糖14份、大豆磷脂0.5份、低聚果糖10份、结晶果 糖17份。其中,复合维生素B包括维生素B1,0.0074份;维生素B2,0.0074份;维生 素B6,0.0074份、维生素B12,0.0004份;泛酸,0.0074份。
2)采用等量递加法进行混合,混合均匀后,采用无菌化自动包装设备进行包装即可。
实施例3
1)先将原辅料进行过筛处理,按重量比称取原辅料,以总量100份计,大豆分离蛋白50份、浓缩乳清蛋白15份、牛磺酸0.08份、维生素C 0.3份、复合维生素B 0.03份、 维生素E 0.06份、乳钙2份、茯苓多糖5份、大豆磷脂0.2份、低聚果糖6份、结晶果糖 21.33份。其中,复合维生素B包括维生素B1,0.0074份;维生素B2,0.0074份;维生 素B6,0.0074份、维生素B12,0.0004份;泛酸,0.0074份。
2)采用等量递加法进行混合,混合均匀后,采用无菌化自动包装设备进行包装即可。
实施例4
1)先将原辅料进行过筛处理,按重量比称取原辅料,以总量100份计,大豆分离蛋白45份、浓缩乳清蛋白20份、牛磺酸0.05份、维生素C 0.5份、复合维生素B 0.06 份、维生素E 0.1份、乳钙2.5份、茯苓提取物10份、大豆磷脂0.2份、低聚果糖8份、 结晶果糖13.59份。其中,复合维生素B包括维生素B1,0.0074份;维生素B2,0.0074 份;维生素B6,0.0074份;维生素B12,0.0008份;泛酸,0.037份。
2)采用等量递加法进行混合,混合均匀后,采用无菌化自动包装设备进行包装即可。
实施例5
1)先将原辅料进行过筛处理,按重量比称取原辅料,以总量100份计,大豆分离蛋白30份、浓缩乳清蛋白10份、牛磺酸0.1份、维生素C 1份、复合维生素B 1份、维生 素E 1份、乳钙10份、茯苓提取物20份、大豆磷脂0.5份、低聚果糖3.4份、木糖醇 23份。其中,复合维生素B包括维生素B1,0.158份;维生素B2,0.158份;维生素B6, 0.158份;维生素B12,0.006份;泛酸,0.52份。
2)采用等量递加法进行混合,混合均匀后,采用无菌化自动包装设备进行包装即可。
上述仅为本发明的几个具体实施方式,但本发明的设计构思并不局限于此,凡利用此 构思对本发明进行非实质性的改动,均应属于侵犯本发明保护范围的行为。

1.具有增强人体免疫功能的蛋白质粉,其特征在于它是由如下重量份数的配方组 份组成:以总量100份计,大豆分离蛋白40份、浓缩乳清蛋白20份、牛磺酸0.05 份、维生素C0.3份、维生素E 0.05份、乳钙3份、茯苓多糖10份、大豆磷脂0.1 份、低聚果糖5份、结晶果糖21.5份;先将各组份进行过筛处理,按配方比例称取, 依据配方中各组分的比例及其理化性状,采用等量递加法进行混合,混合均匀后,采 用无菌化自动包装设备进行包装,即可。
