Abstract

Description

用于在容器尤其是袋内烹饪和保存食品的方法及封闭装置
本发明涉及分别根据权利要求1和3的前序部分的用于在容器尤其是袋内烹饪和/或储存食品的方法,以及封闭装置。
在优选烹饪分枝中,食品在微波设备、水浴、蒸锅等中的耐热、微波兼容和/或压力稳定型袋内被烹饪,从而产生许多优点。在这种袋内烹饪食品使其味道大为保持,并且烹饪之后的状态可以根据需要进行选择,无论打算使例如蔬菜仍然硬脆或者柔软。尤其是在微波设备中烹饪时,几分钟就能实现,这样在很短的烹饪时间内就可以制备全部菜品,并且仍然具有高烹饪品质。

该目的根据本发明分别通过权利要求1和3的特征来实现。
在根据本发明的方法中,封闭装置可以连接于容器,其配备有压力释放阀,在容器中填充的食品被烹饪时,容器通过压力释放阀在特定介质过压下打开,或在过压减小时封闭。
另一方面,容器可以非常方便地通过该封闭装置来封闭,并可以实现填充在容器中的食品的优化烹饪,藉此烹饪过程重复产生预定烹饪性能的相同效果,并且这样还可以非常快速地制备食
根据本发明,封闭装置具有至少一个内部纵向保持件及围绕其的至少一个套体,其中具有开口的容器可以在保持件(12)和套体(20)之间被导入,穿过纵向缝隙进入后者。保持件以及围绕其的套体设计为形成压力释放阀。

图1至图4示出了根据本发明的封闭装置10,该装置具有内部纵向保持件12以及围绕其的套体20。可调节封闭件安置在该套体20上,设计成可以前后移动的盖15。在图1所示位置,套筒大致位于套体20的中央,处于此后描述的开放位置,其在图3中则被推入封闭位置。盖15小于套体20的一半长度,具有和套体20几乎一样的纵向缝隙16。非常明显,盖15看起来会在长度和形状上有所不同。
图1示出了封闭装置10和设置有开口的容器11,容器在保持件12和套体20之间被导入,穿过纵向缝隙16,围绕保持件12,又穿过套体和盖15中的纵向缝隙16,其中优选设计成蒸汽烹饪袋的容器11被有利地夹住尾部11’,开口则远离封闭装置10。

此外,优选通过烹饪食品的快冷,可以利用气密封在容器内实现真空效应。这保证了不使用防腐剂通过内在真空而带来的长的储存寿命。
根据应用,容器11的设计可以有所不同,为此最好使用本身已知的耐热、微波兼容性和/或压力稳定型袋,藉此所有类型的食品都可以被烹饪、食用、保存和/或运输。因此,袋应该耐受高至超过100℃的水沸点以上的温度和/或约0.5巴的过压。另外,其组成应使其不会在微波装置中受损,无论如何也不会释放任何污染。蔬菜、米、鱼、肉、水果、碳水化合物甚或液体形式的食品例如汤、汁、奶油以及诸多其它均适用。这些食品可以在容器中单独或两种或更多种一起进行烹饪。
容器11,通常由透明柔性塑料制造,由一个开口以及位于顶端11’的两个侧壁构成。在底端11”,容器11设置有在两个侧壁之间的折叠基部。基部可以被展开并因此设计为横向于侧壁延伸以增加容器的内部容积。
不用时,优选将容器压在一起成为叶形,打开状态下则可以立于其侧壁。因此,适于通过足够厚的稳定塑料来生产它。如果封闭装置10安装在顶端,侧壁邻接保持件12被一起导引,通过套体20夹持于保持件12,这样容器11就被封闭。此外,肋22成排布置在套体和盖的两侧以便于手持。

为形成压力释放阀25,可以在内保持件12和套体20之间产生部分横向于套体20的纵向延伸体的可变距离a,当容器11的介质过压增加而体积扩张时该距离增加,并可以由此打开容器。打开后,容器内的过压再次下降,因此容器的体积扩张减小,距离a也相应减小,由此容器再次封闭。随后容器或压力释放阀的打开和封闭重复渐增几次或一次性打开,实际上则直至食品在例如微波装置或蒸锅中完成加热。
这样,压力释放阀25的作用是,在介质被其中的空气和/或蒸汽加热的烹饪过程中,容器11膨胀得像个气球,当达到特定过压例如0.2巴时,容器使离开套体20的距离增大。
有利的是,套体20设有调节装置25,其设计为使得其与保持件12之间的距离a可以自动改变。在未受压力的起始位置保持件12以近似没有游隙的方式围绕调节装置25,这样容器被封闭,即使盖15处于打开位置,如图1。另一方面,当处于过压状态时,调节装置25被向外压离容器11。
套体20的调节装置25由两个伸展臂26、27形成,其从套体的中央区域延伸至前端17处的保持件12的末端。
