乳化橙汁香精
本发明涉及一种香精,尤其涉及一种具有橙汁香气的乳化香精。
乳化橙汁香精是一种使用十分广泛的香精,尤其在食品领域中应用相当大。目前,广泛使用的乳化橙汁香精均以甜橙油为主要原料,配以其他的辅助物质而组成。如由杭州香料厂生产的牌号为“西湖”的乳化橙汁香精和由广州香料厂生产的牌号为“百花”的乳化橙汁香精,上述香精在便用过程中均发现存在一定的不足,其香气不够完美,留香不够持久。
本发明的目的在于公开一种新的乳化橙汁香精,以克服现有技术的香精香气不够完美,留香不够持久的缺陷,以满足人们需求。
本发明所说的乳化橙汁香精,以甜橙油为主要原料,其组分和重量百分比含量包括:
甜橙油                0.5~2.5%
浓甜橙油              0.4~1.8%
柠檬醛                0.01~0.5%
甜橙醛                0.1~1.5%
辛醛                  0.01~0.3%
癸醛                  0.01~1.0%
辛醇                  0.02~0.8%
癸醇                  0.01~1.0%
乙酸香叶酯            0.01~0.1%
乙酸叶醇酯            0.01~0.16%
丙酸乙酯                0.01~2.0%

所说的甜橙油为一种从甜橙皮中提取的精油,可优选采用美国Firmenish公司生产的牌号为Firmenish的甜橙油;
所说的浓甜橙油为一种甜橙油的浓缩精品,可优选采用美国Firmenish公司生产的牌号为Firmenish的浓甜橙油;
所说的变性淀粉为美国国民公司生产的牌号为PG1773的变性淀粉。

上述的乳化橙汁香精是这样制备的是:
将各种原料(除变性淀粉和水之外)按上述的配比投入反应器中,然后升温至40~80℃,在50~300r/min的转速下搅拌0.1~1.0小时,溶解制成油相;将变性淀粉和水加入乳化反应器,然后升温至50~70℃,在100~2000r/min的转速下搅拌0.1~1.0小时溶解制成水相,然后将水相加入油相,搅拌0.5~1.0小时,然后在50~200公斤/平方厘米的压力下均质两次,即可获得所说的乳化橙汁香精。
本发明所说的乳化橙汁香精,香气温和,留香持久,原料来源方便,适合于食品工业领域。
                       实施例1
将2克甜橙油、1.3克浓甜橙油、0.2克柠檬醛、0.9克甜橙醛、0.1克辛醛、0.1克癸醛、0.1克辛醇、0.5克癸醇、0.5克乙酸香叶酯、0.01克乙酸叶醇酯、0.1克丙酸乙酯、1.5克丁酸乙酯、0.3克芳樟醇、0.3克叶醇、0.45克己醇、0.5克辛醛二乙缩醛、0.5克乙酸、2.5克松香酸甘油酯、3.1克二乙酸六异丁酸蔗糖酯和6.0克色拉油投入反应器内然后升高温度至60℃,在170r/min的转速下搅拌溶解,制成油相;将12克变性淀粉和67.04克水投入乳化反应器中,在60℃,1500r/min转速下搅拌溶解,制成水相。然后将水相加入油相,搅拌1小时,然后在150公斤/平方厘米的压力下均质两次,即可获得所说的乳化橙汁香精,该香精香气温和,留香持久,能够作为食品工业领域的添加剂。

浓甜橙油                0.4~1.8%
柠檬醛                  0.01~0.5%
甜橙醛                  0.1~1.5%
辛醛                    0.01~0.3%
癸醛                    0.01~1.0%
辛醇                    0.02~0.8%
癸醇                    0.01~1.0%
乙酸香叶酯              0.01~0.1%
乙酸叶醇酯              0.01~0.16%
丙酸乙酯                0.01~2.0%
丁酸乙酯                0.1~4%
芳樟醇                  0.1~0.5%
叶醇                    0.1~0.6%
己醇                    0.1~0.8%
辛醛二乙缩醛            0.1~1.0%
乙酸                    0.1~1.0%
松香酸甘油酯            1.0~7.0%
二乙酸六异丁酸蔗糖酯    1.0~8.0%
色拉油                  1.0~10.0%
变性淀粉               1~20%
水                     余量
