本发明提供了一种多功能运动饮料及其制备方法,属于食品饮料技术领域。本发明的运动多功能饮料包括组分:r‑氨基丁酸、高级脂肪醇、酸味调节剂、甜味剂、碱性电解质和B族维生素。本发明的饮料通过添加一种米糠提取的高级脂肪醇(二十八烷醇),配合日常训练能够增强体力和耐力,达到提高肌肉力量和反应速度,改进反应时间、消除肌肉疼痛等功效。

本发明涉及食品饮料技术领域,尤其涉及一种多功能运动饮料及其制备方法。
背景技术
现在市场在售的运动功能饮料,在补充水分解渴的基础功能上,针对运动前或运动中,添加了牛磺酸和咖啡因,用于增加体能调动和提高神经系统兴奋度;针对运动后通过添加碱性电解质和多种B族水溶性维生素,用于促进体内酸碱平衡,帮助消除疲劳,快速恢复体力。针对重大比赛项目,如何降低运动员心理紧张度,针对高水平专业运动员,如何配合日常训练提高肌肉力量和反应速度,是目前功能性运动饮料尚不具备的。
发明内容
本发明的目的在于提供一种多功能运动饮料及其制备方法,本发明的多功能运动饮料是为了弥补现有技术中运动性饮料功能不全的不足,通过添加特殊功能性氨基酸及一种高级脂肪醇,能够降低运动员比赛前的心理紧张度,且本发明的多功能运动饮料配合日常训练可以提高运动员的肌肉力量和反应速度。

本发明提供了一种多功能运动饮料的制备方法,包括以下步骤:
将r-氨基丁酸、酸味调节剂、甜味剂、碱性电解质和B族维生素进行紫外线灭菌,与水混合后加热,得到半成品;
将高级脂肪醇和磷酸氢钙制成微丸投入半成品中,充入二氧化碳即得成品饮料。
进一步的,所述紫外线灭菌的时间为20~40min,所述加热温度为40~60℃。
进一步的,所述微丸的直径为0.5~1.5mm,密度为1.01~1.09g/cm3;所述半成品中微丸的投入量为10~20mg/500ml。
本发明的有益效果:
本发明配方组合按照中医方剂学的“君、臣、佐、使”的思想设计。其中r-氨基丁酸和二十八烷醇是本发明的特色功能的主要承担组分,是整个组方的“君”的地位。本发明中的牛磺酸能够改善内分泌状态,增强人体免疫,是整个组方的“臣”的地位。磷酸氢钙参与机体代谢,为机体补充磷和钙,对于强壮运动员骨骼大有帮助,补充钙、磷并参与电解质平衡,起到“佐”的作用,用于配重调节微丸密度,起到“使”的作用。本发明中的几味碱性电解质组分,参与电解质平衡,在整个组方中起到“臣”的作用,同时提供的防腐、增鲜、爽口等功效,又起到“佐”或“使”的作用。
本发明的多功能运动饮料,主要服务于高水平专业运动员,突出的特色功效在于比赛时的心理调节和日常训练身体素质的提高。本发明是在现有功能饮料的基础上,通过添加特殊功能性氨基酸(r-氨基丁酸),使该饮料具有舒缓比赛前心理及消除比赛临场发挥时的心理紧张情绪的功能;通过添加一种米糠提取的高级脂肪醇(二十八烷醇),二十八烷醇能够提高机体的免疫功能,抑制胆固醇的生物合成,有助于机体在缺氧条件下的耐受性,提高机体在高原条件下的作业能力。改善运动员的身体机能,从而为运动训练打下良好的身体基础,并对科学的运动训练起到积极的指导作用,更有利于运动员运动成绩的提高。该饮料配合日常训练能够增强体力和耐力,达到提高肌肉力量和反应速度,改进反应时间、消除肌肉疼痛等功效。

本发明提供了一种多功能运动饮料,包括如下组分:
在本发明中,所述r-氨基丁酸添加量为5~15mg/L,优选为10mg/L。r-氨基丁酸具有抗应激,降低神经紧张度的作用,长期服用可以改善睡眠和增进食欲的作用。r-氨基丁酸B受体分布在整个神经系统,不及r-氨基丁酸A受体丰富,但小脑分子层及中脑脚间核以B受体为主,r-氨基丁酸与其结合后,使细胞膜对钾离子的通透性升高,钙离子内流下降,从而减少兴奋性递质释放。运动员比赛时饮用该饮料,通过r-氨基丁酸对兴奋性递质释放的抑制作用缓解心理紧张程度,降低比赛发挥失常的概率。平时训练时服用,r-氨基丁酸通过提高血液神经肽Y的浓度,刺激摄食中枢兴奋,从而提高运动员饭量,增加能量与蛋白等营养物质摄入,与训练配合共同发挥作用可以增强体质。
在本发明中,所述高级脂肪醇优选为从米糠中提取出的二十八烷醇。所述高级脂肪醇的添加量为0.1~0.3mg/L,优选为0.2mg/L。其中二十八烷醇是一种天然存在的一元醇,是世界公认的抗疲劳功能性物质。具有增进耐力、精力、提高反应灵敏性、提高应激能力、减轻肌肉疼痛、改善心肌功能、降低收缩期血压、提高机体新陈代谢比率等生理功效。通常每人每天口服0.2mg的二十八烷醇就能达到消除疲劳的目的;为了增强体力和耐力,每天的口服量大约是0.5mg;作为一种天然醇,二十八烷醇具有良好的生物降解性,易为动物体吸收及利用。
在本发明中,所述酸味调节剂包括柠檬酸、延胡索酸和牛磺酸;其中所述柠檬酸、延胡索酸和牛磺酸的质量比为1:1~2:1,优选为1:1:1。其中柠檬酸和延胡索酸在组方中主要用于调节酸味,这两种酸均为三羧酸循环的中间体物质,与葡萄糖配合,能够为机体快速供能。牛磺酸参与糖代谢的调节,加速糖酵解;能增强心肌收缩力,增加血液输出,同时防止心肌损伤;能保护肝脏,对于维持运动能力牛磺酸是必需的,加强补给,可使运动能力和抗运动性疲劳能力进一步增加;改善内分泌状态,增强人体免疫。
在本发明中,所述甜味剂包括纽甜和葡萄糖;其中所述纽甜和葡萄糖的质量比为1~5:200,优选为3:200。本发明的甜味由纽甜和葡萄糖提供,纽甜为主,葡萄糖辅佐,并起到调节甜感柔和度以及细胞供能的作用。纽甜是目前发现的最甜的物质,甜度相当于蔗糖的2万倍,是最高效的甜味剂。
在本发明中,所述碱性电解质包括山梨酸钾、谷氨酸钠、葡萄糖酸钙和硫酸镁;其中所述山梨酸钾、谷氨酸钠、葡萄糖酸钙和硫酸镁的质量比为150~250:100~200:50~100:5~15,优选为200:150:70:10。本发明中,山梨酸钾、谷氨酸钠、葡萄糖酸钙、硫酸镁这几个组分,作为碱性电解质,可以促进体内酸碱平衡,帮助消除疲劳,快速恢复体力。其中山梨酸钾除提供钾离子外,还具有较好的杀菌、抑菌功效,与柠檬酸、延胡索酸共同起到防腐作用。谷氨酸钠,一方面提供钠离子参与电解质平衡,另一方面具有提鲜的作用,增加饮料鲜味的口感。硫酸镁,一方面提供镁离子,另一方面为集体补充硫元素,同时硫酸根离子可以增加饮料的爽口的感觉。
在本发明中,所述B族维生素包括维生素B6、肌醇、维生素B12和烟酰胺;其中所述维生素B6、肌醇、维生素B12和烟酰胺的质量比为1~3:50~150:0.003~0.009:15~25,优选为2:100:0.006:20。本发明中,维生素B6、肌醇、维生素B12、烟酰胺这几种B族维生素,配合r-氨基丁酸,针对摄入的大量营养物质,用于调节机体糖类、脂肪和蛋白质的代谢,辅助解除疲劳和恢复体能。其中,维生素B6,在体内被磷酸化为辅酶形式,参与酶类代谢,在糖类代谢中催化肌肉与肝中的糖原转化;参与氨基酸代谢,并起重要作用;有助于脑和其它组织中的能量转化过程。肌醇,能促进体内产生卵磷脂,降低胆固醇,有助于去除肝脏中脂肪,帮助体内脂肪的再分配,是肝脏和骨髓细胞生长所必需。维生素B12,在体内转化为各种辅酶参与碳水化合物、脂肪和蛋白质的代谢,促进红细胞的形成;维护神经系统的正常功能。烟酰胺,辅酶I和辅酶II的组成部分,成为许多脱氢酶的辅酶,防治心脏传导阻滞、提高窦房结功能,防止心率减慢和快速型心律失常。此外,烟酰胺在皮肤抗老化方面,能够减轻和预防皮肤在早期衰老过程中产生的肤色黯淡、发黄、菜色,烟酰胺的深层锁水、保湿功效使皮肤富有活力和弹性,有利于女性运动员美容。
在本发明中,所述组分中还包含有0.01~0.05mg/L的磷酸氢钙,优选为0.03mg/L;1.8~2.2g/L的二氧化碳,优选为2.0g/L。本发明的饮料不仅功能强大,还要兼顾用户的体验,加气与否对饮料的口感影响巨大,二氧化碳用于增加饮料的口感,增加清爽的感觉,在夏季具有消暑的作用。磷酸氢钙用于对高级脂肪醇颗粒进行配重,调节微丸密度,使微丸不至于漂浮在瓶口,也不至于形成沉淀。另一方面,磷酸氢钙可以参与机体代谢,为机体补充磷和钙,对于强壮运动员骨骼大有帮助。
本发明提供了一种多功能运动饮料的制备方法,包括以下步骤:
将r-氨基丁酸、酸味调节剂、甜味剂、碱性电解质和B族维生素进行紫外线灭菌,与水混合后加热,得到半成品;
将高级脂肪醇和磷酸氢钙制成微丸投入半成品中,充入二氧化碳即得成品饮料。
在本发明中,所述紫外线灭菌的时间为20~40min,优选为30min;所述加热温度为40~60℃,优选为50℃。
在本发明中,所述微丸的直径为0.5~1.5mm,优选为1.0mm;密度为1.01~1.09g/cm3,优选为1.05g/cm3;所述半成品中微丸的投入量为10~20mg/500ml,优选为15mg/500ml。本发明中,所制微丸的密度保持在1.01~1.09g/cm3之间,做成类似果粒橙的悬浮效果,可以改善用户服用微丸的体验。
下面结合实施例对本发明提供的技术方案进行详细的说明,但是不能把它们理解为对本发明保护范围的限定。
实施例1
将r-氨基丁酸、高级脂肪醇、酸味调节剂、甜味剂、碱性电解质、B族维生素精准称量后充分混合,经过紫外线灭菌30min,加入200升的预混罐中,预混罐装含有加热装置,预混罐预先盛有100升饮料成品用水,通过搅拌和加温至50℃,将水溶性固形物全部充分溶解后,加入批量搅拌罐。批量搅拌罐预先盛有经过计算的饮料成品用水。将不溶于水的高级脂肪醇和磷酸氢钙,按照85:15的质量比熔融,采用冷喷工艺事先制成直径1.0mm的微丸,微丸密度为1.05g/cm3,在封盖前将15mg微丸投入半成品中,充入2.0g/L的CO2气体,即得成品饮料,成品饮料的包装规格为500ml一瓶。所述饮料成品用水是指经过28层过滤的达到饮料卫生标准的水。

实施例3
将r-氨基丁酸、高级脂肪醇、酸味调节剂、甜味剂、碱性电解质、B族维生素精准称量后充分混合,经过紫外线灭菌20min,加入200升的预混罐中,预混罐装含有加热装置,预混罐预先盛有100升饮料成品用水,通过搅拌和加温至60℃,将水溶性固形物全部充分溶解后,加入批量搅拌罐。批量搅拌罐预先盛有经过计算的饮料成品用水。将不溶于水的高级脂肪醇和磷酸氢钙,按照75:10的质量比熔融,采用冷喷工艺事先制成直径1.0mm的微丸,微丸密度为1.04g/cm3,在封盖前将15mg微丸投入半成品中,充入2.0g/L的CO2气体,即得成品饮料,成品饮料的包装规格为500ml一瓶。所述饮料成品用水是指经过28层过滤的达到饮料卫生标准的水。

由以上实施例可知,本发明提供了一种多功能运动饮料及其制备方法。按上述配方配制饮料,可以得到一种能够增加体能调动和提高神经系统兴奋度、调节体内酸碱平衡,帮助消除疲劳,快速恢复体力,降低运动员心理紧张度,提高肌肉力量和反应速度的多功能运动饮料产品。本品包装规格为500毫升一瓶,每天的引用剂量不得超过5瓶,推荐日剂量为2-3瓶。
以上所述仅是本发明的优选实施方式,应当指出,对于本技术领域的普通技术人员来说,在不脱离本发明原理的前提下,还可以做出若干改进和润饰,这些改进和润饰也应视为本发明的保护范围。
Claims (10)
2.根据权利要求1所述的多功能运动饮料,其特征在于,所述高级脂肪醇是从米糠中提取出的二十八烷醇。
3.根据权利要求2所述的多功能运动饮料,其特征在于,所述酸味调节剂包括柠檬酸、延胡索酸和牛磺酸;其中所述柠檬酸、延胡索酸和牛磺酸的质量比为1:1~2:1。
4.根据权利要求3所述的多功能运动饮料,其特征在于,所述甜味剂包括纽甜和葡萄糖;其中所述纽甜和葡萄糖的质量比为1~5:200。
5.根据权利要求1~4任一项所述的多功能运动饮料,其特征在于,所述碱性电解质包括山梨酸钾、谷氨酸钠、葡萄糖酸钙和硫酸镁;其中所述山梨酸钾、谷氨酸钠、葡萄糖酸钙和硫酸镁的质量比为150~250:100~200:50~100:5~15。
6.根据权利要求5所述的多功能运动饮料,其特征在于,所述B族维生素包括维生素B6、肌醇、维生素B12和烟酰胺;其中所述维生素B6、肌醇、维生素B12和烟酰胺的质量比为1~3:50~150:0.003~0.009:15~25。
7.根据权利要求6所述的多功能运动饮料,其特征在于,所述组分中还包含有0.01~0.05mg/L的磷酸氢钙及1.8~2.2g/L的二氧化碳。
8.一种如权利要求7所述的多功能运动饮料的制备方法,其特征在于,包括以下步骤:
将r-氨基丁酸、酸味调节剂、甜味剂、碱性电解质和B族维生素进行紫外线灭菌,与水混合后加热,得到半成品;
将高级脂肪醇和磷酸氢钙制成微丸投入半成品中,充入二氧化碳即得成品饮料。
9.根据权利要求8所述的多功能运动饮料的制备方法,其特征在于,所述紫外线灭菌的时间为20~40min,所述加热温度为40~60℃。
10.根据权利要求8~9任一项所述的多功能运动饮料的制备方法,其特征在于,所述微丸的直径为0.5~1.5mm,密度为1.01~1.09g/cm3;所述半成品中微丸的投入量为10~20mg/500ml。
