本发明公开了一种乳酸菌羊奶粉及其制备方法,该乳酸菌羊奶粉由以下百分比原料组成:生羊乳基粉20‑25%、营养添加料10‑15%、薄荷提取液10‑15%、麦芽糊精10‑15%、调节液10‑15%、混合乳酸菌种2‑3%、动物双歧杆菌2‑3%、鲜羊乳混合液15‑20%、谷氨酸钠1‑2%、低聚木糖1‑2%、牛磺酸1‑2%、增强乳杆菌粉10‑15%、葡萄糖酸亚铁1‑2%、调和营养剂1‑2%和亚硒酸钠1‑2%。有益效果为:通过添加薄荷提取液能够疏散风热,清利头目,利咽,透疹,疏肝解郁,通过将营养添加料、薄荷提取液、麦芽糊精、调节液、调和营养剂以及强乳杆菌粉等添加混合,能够利用其内部的营养成分和功能成分,在奶粉加工制备和使用过程中,实现更加多元化的健康功能组合,补充人体所需要的微量元素,让婴儿的成长更加健康。

技术领域
本发明涉及奶粉领域,具体来说,涉及一种乳酸菌羊奶粉及其制备方法。
背景技术
羊奶粉指的是用羊奶制作的奶粉,奶食品有牛奶,马奶,山羊奶等。在欧美国家羊奶被视为乳品中精品,称作“贵族奶”。国际学界誉为“奶中之王”。微生态科学使配方奶粉的品质不断的提高,使之更加接近于母乳的各项功能,人体内含有的钙量99%都储存在骨骼里。当人体摄入钙量不足时,骨骼中的钙就会释放到血液里,以维护血钙的浓度,由此导致骨密度越来越低,根据中国专利文献,公布号为CN106857879A,所公开的一种乳酸菌羊奶粉,其采用羊奶为主要原料,营养丰富,温和,适合多种人群食用,添加海藻糖、葡萄糖和谷氨酸钠保障了乳酸菌的存活率较高,添加双歧杆菌和乳酸菌能够增加肠道有益菌群,促进排毒,同时添加的低聚寡糖可以促进有益菌的繁殖,添加的复合益生元可以补充人体所必须的微量元素,根据中国专利文献,公告号为 CN102919356B,所公布的乳酸菌羊奶粉的制备方法,解决了发酵奶喷雾干燥过程中乳酸菌易死亡的缺陷,提高了乳酸菌的存活率,但是面对奶粉制成后的口感以及羊乳中膻味的去除,并不能够很好的适应,并且奶粉中的营养元素如果不足够分布,并且不能让婴儿等低龄宝宝进行吸收的话,奶粉本身的使用范围则会大大折扣,并且奶粉在能够补充营养的同时还需要更多的元素来提升人体自身的抵抗能力。
针对相关技术中的问题,目前尚未提出有效的解决方案。
发明内容
针对相关技术中的问题,本发明提出一种乳酸菌羊奶粉及其制备方法,以克服现有相关技术所存在的上述技术问题。
为此,本发明采用的具体技术方案如下:
根据本发明的一个方面,提供了一种乳酸菌羊奶粉。
该乳酸菌羊奶粉由以下百分比原料组成:
生羊乳基粉20-25%、营养添加料10-15%、薄荷提取液10-15%、麦芽糊精10-15%、调节液10-15%、混合乳酸菌种2-3%、动物双歧杆菌2-3%、鲜羊乳混合液15-20%、谷氨酸钠1-2%、低聚木糖1-2%、牛磺酸1-2%、增强乳杆菌粉10-15%、葡萄糖酸亚铁1-2%、调和营养剂1-2%和亚硒酸钠1-2%。
其中,所述调和营养剂包括以下百分比原料组成:超微碳酸钙30-35%,维生素5-10%、焦磷酸铁5-10%,氧化锌15-20%、牛磺酸20-25%,叶酸5-10%、二十碳四烯酸3-5%、二十二碳六烯酸5-7%和烟酸5-7%。
所述的营养添加料包括以下等比例原料组成:维生素A、维生素D3、维生素E、维生素K1、维生素B1、维生素B2、烟酰胺、D-泛酸盐、维生素 B6、维生素B12、生物素、叶酸和维生素C。
所述的调节液包括以下百分比原料组成:胱氨酸28-35%、酪氨酸 2-6%、亮氨酸2-6%、组氨酸15-20%、苯丙氨酸25-35%、二油酸2-6%、棕榈酸甘油三酯25-30%。
根据本发明的另一个方面,提供了一种乳酸菌羊奶粉的制备方法。
该乳酸菌羊奶粉的制备包括以下步骤:
步骤一:对生羊乳进行多次过滤,以90-95℃进行巴氏杀菌、降温获得原料生羊乳;
步骤二:在进风温度150-180℃、排风温度70-80℃和高压泵压力 100-150bar的条件下,将过滤后的所述浓奶液打入干燥塔获得所述预成粉;
步骤三:按配比称取其余材料,投入至酶解罐,充分溶解混匀;
步骤四:进行两次高压均质后打入搅拌罐中;
步骤五:在搅拌罐中以40-45℃的环境温度下,以700-800r/min的转速下搅拌混合30分钟;
步骤六:进行杀菌、灭酶、浓缩至10-12波美度,得到浓缩物料;
步骤七:将浓缩物料再进行浓缩,并在浓缩后喷雾干燥制得粉末状基粉;
步骤八:将粉末状基粉经流化床冷却降至室温;
步骤九:对制得的奶粉进行过筛,然后罐至储料罐中,随后封罐包装、出货。
进一步的,用于上述步骤四中,在均质压力为15-20Mpa,温度为55~60℃的条件下进行一级均质,在均质压力为8-10MPa,温度为45~50℃的条件下进行二级均质,所述混合温度为20~30℃,相对湿度为40%~50%。
进一步的,用于上述步骤六中,杀菌的条件为温度85-90℃,时间15-20 秒,所述压力喷雾干燥的进料温度优选为55-60℃,压力优选为200~300bar。
进一步的,所述薄荷提取液的制备:取一定量的薄荷粉碎,使其粒度为30-35目,薄荷按质量与体积配比1:10的比例加入去离子水,煮沸并保持沸腾35min,用350目的滤布过滤,得薄荷提取液
进一步的,所述的鲜羊乳混合液的制备包括以下步骤:在净化后的羊奶中添加等比例的海藻糖、谷氨酸钠混匀,羊奶和添加料的添加比是1000:5的搅拌。
进一步的,所述的增强乳杆菌粉的制备为:按质量体积比向质量浓度为 12%的中华水韭提取液中按2:1:2的比例添加酪蛋白水解物、乙酸钠和柠檬酸三铵得培养基,灭菌冷却;
接入1-3%已活化的瑞士乳杆菌,恒温培养18-24h,冷冻离心收集获得瑞士乳杆菌菌泥,置于10-12℃冷处理1.5h,采用真空冷冻干燥机冻干16h,获得增强杆菌菌粉。
其中,本发明所采用的原料组份阐述如下:
生羊乳:就是刚挤出来,还没有杀菌的羊奶,是牛科山羊属动物山羊或绵羊属动物绵羊的乳汁,含蛋白质、脂肪、碳水化合物、维生素A、维生素B、钙、钾、铁等营养成分。现代营养学研究发现,羊奶中的蛋白质、矿物质,尤其是钙、磷的含量都比牛奶略高。
动物双歧杆菌:是人和许多哺乳动物肠道中的优势菌之一。在微生态学上属于菌群。1899年法国巴斯德研究院的蒂瑟尔(Tissier)首次从母乳喂养的婴儿大便中分离到了该菌,并指出它对乳儿的营养和预防肠道疾病具有重要作用。该菌是人和动物肠道中重要的生理性细菌。参与免疫、营养、消化和保护等一系列的生理过程,发挥着重要的功能。
谷氨酸钠:化学名α-氨基戊二酸一钠,是谷氨酸的钠盐。利用海带单独分离出味美成分,并证明了这种味美成分就是谷氨酸钠盐,从而生产化学调味料投放市场。生活中常用的调味料味精的主要成分就是谷氨酸钠。西红柿、发酵的大豆制品、酵母提取物、某些尖奶酪,以及发酵或水解蛋白质产品所能带来的调味作用中,部分归功于谷氨酸的存在。
低聚木糖:是由2-7个木糖分子以β-1,4糖苷键结合而成的功能性聚合糖。与通常人们所用的大豆低聚糖、低聚果糖、低聚异麦芽糖等相比具有独特的优势,它可以选择性地促进肠道双歧杆菌的增殖活性。其双歧因子功能是其它聚合糖类的10-20倍。
牛磺酸:是动物体内一种结构简单的含硫氨基酸,化学名称为2-氨基乙磺酸,分子式为C2H7NO3S,分子量为125.15,无臭,味略酸,其稀溶液呈中性,对热稳定,在人和动物胆汁中与胆酸结合,以结合形式存在;而在脑、卵巢、心脏、肝、乳汁、松果、垂体、视网膜、肾上腺等组织中,以游离形式存在,总量12-18g,但不参与蛋白质的合成。牛磺酸是人体的条件必需氨基酸,对胎儿、婴儿神经系统的发育有重要作用。牛磺酸可广泛应用于医药、食品添加剂、荧光增白剂、有机合成等领域,也可用作生化试剂、湿润剂、pH缓冲剂等。
葡萄糖酸亚铁:在食品中可用作护色剂、营养强化剂,可由还原铁中和葡萄糖酸而成。葡萄糖酸亚铁的特点是生物利用率高,在水中溶解性好,风味平和无涩味,在乳饮料中强化较多,但也容易引起食品色泽和风味变化,一定程度上限制了其应用。
亚硒酸钠:白色结晶或结晶性粉末,溶于水,不溶于乙醇。熔点350℃。有剧毒,口服一克即可致死,LD50(大鼠经口)为7mg/kg。遇还原剂析出硒单质。
胱氨酸:协助皮肤的形成,且对解毒作用很重要,借由减低身体吸收铜的能力,胱氨酸保护细胞免于铜中毒。当它被代谢时,会释放硫酸,而硫酸会与其他物质产生化学作用,增加整个代谢系统的解毒功能。此外,它辅助胰岛素的供给,胰岛素是人体利用糖和淀粉所必需的。也能促进细胞氧化还原,使肝功能旺盛,促进白细胞增生,阻止病原菌发育。
酪氨酸:化学名称为2-氨基-3-对羟苯基丙酸,它是一种含有酚羟基的芳香族极性α-氨基酸。酪氨酸是人体的条件必需氨基酸和生酮生糖氨基酸。
亮氨酸:异亮氨酸和缬氨酸都是支链氨基酸,它们有助于促进训练后的肌肉恢复。其中亮氨酸是最有效的一种支链氨基酸,可以有效防止肌肉损失,因为它能够更快的分解转化为葡萄糖。
组氨酸:一种α-氨基酸,化学式为C6H9N3O2,分子量为155。组氨酸在 1896年由德国物理学家艾布瑞契·科塞尔首次分离出来。在营养学的范畴里,组氨酸被认为是一种人类必需的氨基酸,主要是儿童。
苯丙氨酸,:α-氨基酸的一种,具有生物活性的光学异构体为L-苯丙氨酸。苯丙氨酸常温下为白色结晶或结晶性粉末固体,减压升华,溶于水,难溶于甲醇、乙醇、乙醚。苯丙氨酸是人体必需氨基酸之一,属芳香族氨基酸。在体内大部分经苯丙氨酸羟化酶催化作用氧化成酪氨酸,并与酪氨酸一起合成重要的神经递质和激素,参与机体糖代谢和脂肪代谢。
棕榈酸甘油三酯:主要存在于一些植物或者动物油当中,一般来说我们可以通过饮食来摄取棕榈酸甘油三酯,同时棕榈酸甘油三酯是棕榈油的主要成分。
本发明的有益效果为:通过添加薄荷提取液能够疏散风热,清利头目,利咽,透疹,疏肝解郁,通过将营养添加料、薄荷提取液、麦芽糊精、调节液、调和营养剂以及强乳杆菌粉等添加混合,能够利用其内部的营养成分和功能成分,在奶粉加工制备和使用过程中,实现羊乳膻味的去除,并提高乳酸菌的存活率,并让各个成分能够很好的融合,从而实现更加多元化的健康功能组合,并能够促进婴儿对奶粉中乳酸菌的吸收,补充人体所需要的微量元素,让婴儿的成长更加健康。

为了方便理解本发明的上述技术方案,以下结合附图对本发明的上述方案的流程进行详细说明,具体如下:
根据本发明的实施例,还提供了一种乳酸菌羊奶粉的制备方法。
如图1所述,在实际生产过程中,该乳酸菌羊奶粉的制备包括以下步骤:
步骤S101:对生羊乳进行多次过滤,以90-95℃进行巴氏杀菌、降温获得原料生羊乳;
步骤S103:在进风温度150-180℃、排风温度70-80℃和高压泵压力 100-150bar的条件下,将过滤后的所述浓奶液打入干燥塔获得所述预成粉;
步骤S105:按配比称取其余材料,投入至酶解罐,充分溶解混匀;
步骤S107:进行两次高压均质后打入搅拌罐中;
步骤S109:在搅拌罐中以40-45℃的环境温度下,以700-800r/min的转速下搅拌混合30分钟;
步骤S111:进行杀菌、灭酶、浓缩至10-12波美度,得到浓缩物料;
步骤S113:将浓缩物料再进行浓缩,并在浓缩后喷雾干燥制得粉末状基粉;
步骤S115:将粉末状基粉经流化床冷却降至室温;
步骤S117:对制得的奶粉进行过筛,然后罐至储料罐中,随后封罐包装、出货。
在一个实施例中,用于上述步骤S107中,在均质压力为15-20Mpa,温度为55~60℃的条件下进行一级均质,在均质压力为8-10MPa,温度为 45~50℃的条件下进行二级均质,所述混合温度为20~30℃,相对湿度为 40%~50%。
在一个实施例中,用于上述步骤S111中,杀菌的条件为温度85-90℃,时间15-20秒,所述压力喷雾干燥的进料温度优选为55-60℃,压力优选为200~300bar。
在一个实施例中,所述薄荷提取液的制备:取一定量的薄荷粉碎,使其粒度为30-35目,薄荷按质量与体积配比1:10的比例加入去离子水,煮沸并保持沸腾35min,用350目的滤布过滤,得薄荷提取液
在一个实施例中,所述的鲜羊乳混合液的制备包括以下步骤:在净化后的羊奶中添加等比例的海藻糖、谷氨酸钠混匀,羊奶和添加料的添加比是1000:5的搅拌。
在一个实施例中,所述的增强乳杆菌粉的制备为:按质量体积比向质量浓度为12%的中华水韭提取液中按2:1:2的比例添加酪蛋白水解物、乙酸钠和柠檬酸三铵得培养基,灭菌冷却;
接入1-3%已活化的瑞士乳杆菌,恒温培养18-24h,冷冻离心收集获得瑞士乳杆菌菌泥,置于10-12℃冷处理1.5h,采用真空冷冻干燥机冻干 16h,获得增强杆菌菌粉。
综上所述,借助于本发明的上述技术方案,通过添加薄荷提取液能够疏散风热,清利头目,利咽,透疹,疏肝解郁,通过将营养添加料、薄荷提取液、麦芽糊精、调节液、调和营养剂以及强乳杆菌粉等添加混合,能够利用其内部的营养成分和功能成分,在奶粉加工制备和使用过程中,实现羊乳膻味的去除,并提高乳酸菌的存活率,并让各个成分能够很好的融合,从而实现更加多元化的健康功能组合,并能够促进婴儿对奶粉中乳酸菌的吸收,补充人体所需要的微量元素,让婴儿的成长更加健康。

Claims (10)
1.一种乳酸菌羊奶粉,其特征在于,该乳酸菌羊奶粉由以下百分比原料组成:
生羊乳基粉20-25%、营养添加料10-15%、薄荷提取液10-15%、麦芽糊精10-15%、调节液10-15%、混合乳酸菌种2-3%、动物双歧杆菌2-3%、鲜羊乳混合液15-20%、谷氨酸钠1-2%、低聚木糖1-2%、牛磺酸1-2%、增强乳杆菌粉10-15%、葡萄糖酸亚铁1-2%、调和营养剂1-2%和亚硒酸钠1-2%。
2.根据权利要求1所述的一种乳酸菌羊奶粉,其特征在于,所述调和营养剂包括以下百分比原料组成:超微碳酸钙30-35%,维生素5-10%、焦磷酸铁5-10%,氧化锌15-20%、牛磺酸20-25%,叶酸5-10%、二十碳四烯酸3-5%、二十二碳六烯酸5-7%和烟酸5-7%。
3.根据权利要求1所述的一种乳酸菌羊奶粉,其特征在于,所述的营养添加料包括以下等比例原料组成:维生素A、维生素D3、维生素E、维生素K1、维生素B1、维生素B2、烟酰胺、D-泛酸盐、维生素B6、维生素B12、生物素、叶酸和维生素C。
4.根据权利要求1所述的一种乳酸菌羊奶粉,其特征在于,所述的调节液包括以下百分比原料组成:胱氨酸28-35%、酪氨酸2-6%、亮氨酸2-6%、组氨酸15-20%、苯丙氨酸25-35%、二油酸2-6%、棕榈酸甘油三酯25-30%。
5.根据权利要求1所述的一种乳酸菌羊奶粉,其特征在于,所述薄荷提取液的制备:取一定量的薄荷粉碎,使其粒度为30-35目,薄荷按质量与体积配比1:10的比例加入去离子水,煮沸并保持沸腾35min,用350目的滤布过滤,得薄荷提取液。
6.根据权利要求1所述的一种乳酸菌羊奶粉,其特征在于,所述的鲜羊乳混合液的制备包括以下步骤:在净化后的羊奶中添加等比例的海藻糖、谷氨酸钠混匀,羊奶和添加料的添加比是1000:5的搅拌。
7.根据权利要求1所述的一种乳酸菌羊奶粉,其特征在于,所述的增强乳杆菌粉的制备为:按质量体积比向质量浓度为12%的中华水韭提取液中按2:1:2的比例添加酪蛋白水解物、乙酸钠和柠檬酸三铵得培养基,灭菌冷却;
接入1-3%已活化的瑞士乳杆菌,恒温培养18-24h,冷冻离心收集获得瑞士乳杆菌菌泥,置于10-12℃冷处理1.5h,采用真空冷冻干燥机冻干16h,获得增强杆菌菌粉。
8.一种乳酸菌羊奶粉的制备方法,其特征在于,用于权利要求1中所述的乳酸菌羊奶粉,该乳酸菌羊奶粉的制备包括以下步骤:
步骤一:对生羊乳进行多次过滤,以90-95℃进行巴氏杀菌、降温获得原料生羊乳;
步骤二:在进风温度150-180℃、排风温度70-80℃和高压泵压力100-150bar的条件下,将过滤后的所述浓奶液打入干燥塔获得所述预成粉;
步骤三:按配比称取其余材料,投入至酶解罐,充分溶解混匀;
步骤四:进行两次高压均质后打入搅拌罐中;
步骤五:在搅拌罐中以40-45℃的环境温度下,以700-800r/min的转速下搅拌混合30分钟;
步骤六:进行杀菌、灭酶、浓缩至10-12波美度,得到浓缩物料;
步骤七:将浓缩物料再进行浓缩,并在浓缩后喷雾干燥制得粉末状基粉;
步骤八:将粉末状基粉经流化床冷却降至室温;
步骤九:对制得的奶粉进行过筛,然后罐至储料罐中,随后封罐包装、出货。
9.根据权利要求8所述的一种乳酸菌羊奶粉的制备方法,其特征在于,用于上述步骤四中,在均质压力为15-20Mpa,温度为55~60℃的条件下进行一级均质,在均质压力为8-10MPa,温度为45~50℃的条件下进行二级均质,所述混合温度为20~30℃,相对湿度为40%~50%。
10.根据权利要求8所述的一种乳酸菌羊奶粉的制备方法,其特征在于,用于上述步骤六中,杀菌的条件为温度85-90℃,时间15-20秒,所述压力喷雾干燥的进料温度优选为55-60℃,压力优选为200~300bar。
