Abstract
The invention belongs to the technical field of biological zinc protein-containing solid beverages, and relates to an oyster protein solid beverage rich in biological zinc, which comprises the following raw and auxiliary materials in parts by weight: 70-80 parts of oyster protein powder, 10-16 parts of fruit powder, 1-3 parts of inulin, 5-8 parts of non-dairy creamer, 3-5 parts of polydextrose, 2-4 parts of maltodextrin, 0.1-0.25 part of sucralose and 2-5 parts of lemon juice. The preparation method comprises the following steps: selecting fresh and alive Concha Ostreae, removing dirty black matter from the Carnis Ostreae, cleaning, homogenizing, adding deionized water, and heating in water bath for denaturation; adding protease and tea polyphenols, performing enzymolysis, inactivating enzyme, filtering, cooling to remove lipid, decolorizing, nano-filtering, vacuum concentrating, and spray drying to obtain Concha Ostreae protein powder rich in biological zinc; oyster protein powder, fruit powder, inulin, non-dairy creamer, polydextrose, maltodextrin, sucralose and lemon juice are used as raw and auxiliary materials, and after sieving, the raw and auxiliary materials are mixed according to a preferred proportion, boiled and dried, cooled, measured and packaged in bags. The present invention prepares oyster protein powder rich in biological zinc by means of enzyme process and modern separation process, develops oyster protein solid beverage with excellent taste with the oyster protein powder as main supplementary material, and has excellent zinc replenishing effect, rich protein and various physiological active matters possessing nutritious and other health functions.

The invention belongs to the technical field of biological zinc protein-containing solid beverages, and particularly relates to an oyster protein-containing solid beverage rich in biological zinc and a preparation method thereof.
Background
Zinc is a necessary trace element for human body, and plays an extremely important role in important physiological processes of human body growth and development, reproductive inheritance, immunity, endocrine and the like. Zinc is present in a large number of enzyme systems, and zinc-containing enzymes and zinc-activated enzymes in the human body, such as carbonic anhydrase, respiratory enzyme, lactic acid dehydro acid, superoxide dismutase, alkaline phosphatase, DNA and RNA polymerase, etc., are essential substances for the synthesis of nucleic acids, proteins, carbohydrates and vitamin A utilization. Zinc has effects of promoting growth and development and improving taste. Poor taste and smell, anorexia, slow growth, less than normal intelligence development, even impaired immune function and the like are easy to appear in the absence of zinc. Zinc is involved in the metabolic process of nucleic acid protein, and can promote normal development of skin, bone and sexual organ, and maintain digestion and metabolism activity. Thus, zinc is known as a "vital element". The supplementation of zinc has been considered beneficial, and numerous zinc supplements have been developed. The inorganic zinc of the first generation zinc supplement agent and the second generation organic acid zinc have toxic and side effects with different degrees after being taken. The third generation of biological zinc is represented by protein zinc and polysaccharide zinc. The biological zinc is extracted from biological materials, the content of the zinc is very low, but the absorption utilization rate is high, the absorption of nutrients such as calcium, iron and the like can not be antagonized, and the biological zinc has no side effect on a human body.
The protein beverage is a beverage developed by utilizing food protein, is convenient to eat and easy to absorb, has extremely high nutritional value, and can generate positive effects on human health after being drunk for a long time. At present, besides dairy beverages, protein beverages are mainly based on vegetable protein beverages. Oysters, commonly known as oyster and oyster, belong to the phylum mollusca, class bivalvia, order pearl shell, are the first cultured shellfish in the world, are one of the important marine biological resources available to humans, and are of a globally distributed variety. The oyster is not only fresh and delicious in meat and rich in nutrition, but also has unique health care function and medicinal value, and is a seafood with high nutritional value. Oyster is thought to have the functions of treating weakness, relieving erysipelas, lowering blood pressure, nourishing yin and strengthening yang in all ages and countries. In recent years, biological zinc products are increasingly favored by consumers due to the advantages of safety, nutrition and functionality, and become a new development trend of protein beverages and zinc health care products.
Disclosure of Invention
In order to solve the problems of technical defects and single product function in the background technology, an oyster protein solid beverage rich in biological zinc and a preparation method thereof are provided. The product is rich in biological zinc, is easy to absorb and has good zinc supplementing effect; meanwhile, the oyster nutrition powder is rich in protein and various oyster physiological active substances, and has good nutrition and nourishing effects.
In order to achieve the purpose, the invention provides an oyster protein solid beverage rich in biological zinc:
an oyster protein solid beverage rich in biological zinc is prepared from the following raw and auxiliary materials: oyster protein powder, fruit powder, inulin, non-dairy creamer, polydextrose, maltodextrin, sucralose and lemon juice rich in biological zinc.
Preferably, the oyster protein solid beverage rich in biological zinc comprises the following raw and auxiliary materials in parts by weight: 70-80 parts of oyster protein powder, 10-16 parts of fruit powder, 1-3 parts of inulin, 5-8 parts of non-dairy creamer, 3-5 parts of polydextrose, 2-4 parts of maltodextrin, 0.1-0.25 part of sucralose and 2-5 parts of lemon juice.
Preferably, the fruit powder is one or more of coconut powder, passion fruit powder, banana fruit powder, pineapple fruit powder and papaya fruit powder.
The invention also aims to provide a preparation method of the oyster protein solid beverage rich in biological zinc, which comprises the following steps:
s1 selecting fresh oysters, removing shells and meat, removing black matters in internal organs of the oysters, cleaning the oysters, adding a small amount of deionized water, and fully homogenizing; adding a proper amount of deionized water, and heating in a water bath at 90-95 ℃ for denaturation for 10-15 min; adding protease and tea polyphenol in a constant-temperature water bath at 50-60 ℃ to start an enzymolysis reaction, carrying out enzymolysis for 3-5 h, and then heating to inactivate enzyme; filtering to obtain enzymolysis solution, cooling to 4 deg.C, removing upper floating lipid, centrifuging, and collecting supernatant; and (3) carrying out decoloring treatment by using modified large-particle activated carbon, further carrying out nanofiltration with the molecular weight cutoff of 100-200Da after decoloring, carrying out vacuum concentration on nanofiltration trapped fluid, and carrying out spray drying to obtain the oyster protein powder rich in biological zinc.
S2, respectively sieving oyster protein powder, fruit powder, inulin, non-dairy creamer, polydextrose, maltodextrin and sucralose with a sieve of 100-200 meshes, mixing in a preferred proportion, adding lemon juice, uniformly mixing in a mixer, carrying out fluidized drying on the mixed ingredients in a fluidized drying bed, cooling to below 30-35 ℃ after drying is finished, metering, bagging and packaging to obtain the oyster protein solid beverage rich in biological zinc.
Preferably, the protease in the step S1 is two or more of animal proteolytic enzyme, compound protease, neutral protease, papain and flavourzyme, and the addition amount of each enzyme is 1000-2000U/g substrate.
Preferably, the addition amount of the tea polyphenol in the step S1 is 1-2%.
Preferably, the enzymolysis liquid centrifugal operation parameters in step S1 are: the rotating speed is 2000-4000 r/min.
Preferably, the vacuum concentration operation temperature of the step S1 is 50-60 ℃.
Preferably, in step S2, the operating parameters of the mixer are: the speed is 20-30 r/min, and the time is 15-20 min.
Preferably, the boiling drying operation parameters in step S2 are: the temperature is 60-80 ℃, and the time is 5-15 min.
Compared with the prior art, the invention has the beneficial effects that:
(1) the present invention utilizes the characteristic that oyster is rich in natural biological zinc, adopts an enzyme method technology and a modern separation technology to prepare oyster protein powder rich in biological zinc, and uses the oyster protein powder as a main auxiliary material to prepare the protein solid beverage.
(2) In the preparation process of the oyster protein solid beverage rich in biological zinc, multiple technical means of multi-enzyme hydrolysis, tea polyphenol adding enzymolysis, modified activated carbon adsorption, vacuum concentration, spray drying and lemon juice adding are adopted to remove fishy smell in oyster protein powder, so that good taste of the product is ensured.
(3) The oyster protein solid beverage is added with natural fruit powder, and fruit powder with different flavors can be selected, so that the requirements of consumers with different tastes are met.

Example 1
The oyster protein solid beverage rich in biological zinc comprises the following raw and auxiliary materials in parts by weight: 72 parts of oyster protein powder rich in biological zinc, 14 parts of pineapple powder, 1 part of inulin, 6 parts of non-dairy creamer, 4 parts of polydextrose, 3 parts of maltodextrin, 0.12 part of sucralose and 3 parts of lemon juice.
A preparation method of oyster protein solid beverage rich in biological zinc comprises the following steps:
s1 selecting fresh oysters, removing shells and meat, removing black matters in internal organs of the oysters, cleaning the oysters, adding a small amount of deionized water, and fully homogenizing; adding appropriate amount of deionized water, heating in water bath at 90 deg.C for denaturation for 15 min; adding animal protein hydrolase, flavor enzyme and 1% of tea polyphenol into the mixture at the temperature of 50 ℃ in a constant-temperature water bath to start enzymolysis reaction, and heating and inactivating the enzyme after enzymolysis for 4 hours; filtering to obtain enzymolysis solution, cooling to 4 deg.C, removing upper layer floating lipid, centrifuging at 2500 r/min, and collecting supernatant; decolorizing with modified large-particle activated carbon, further performing nanofiltration with a molecular weight cutoff of 200Da after decolorizing, vacuum concentrating nanofiltration retentate at 52 ℃, and spray drying to obtain the oyster protein powder rich in biological zinc.
S2, respectively sieving oyster protein powder, fruit powder, inulin, non-dairy creamer, polydextrose, maltodextrin and sucralose with a 100-mesh sieve, respectively taking 72 parts of oyster protein powder, 14 parts of pineapple powder, 1 part of inulin, 6 parts of non-dairy creamer, 4 parts of polydextrose, 3 parts of maltodextrin and 0.12 part of sucralose, mixing the raw and auxiliary materials, adding 3 parts of lemon juice, mixing in a mixer at the speed of 20 r/min for 16 min, boiling and drying the mixed raw and auxiliary materials in a boiling drying bed at 65 ℃ for 13 min, discharging, cooling to below 35 ℃, metering, bagging and packaging to obtain the oyster protein solid beverage rich in biological zinc.
Example 2
The oyster protein solid beverage rich in biological zinc comprises the following raw and auxiliary materials in parts by weight: 74 parts of oyster protein powder rich in biological zinc, 12 parts of coconut powder, 1.5 parts of inulin, 5 parts of non-dairy creamer, 3.5 parts of polydextrose, 4 parts of maltodextrin, 0.15 part of sucralose and 4 parts of lemon juice.
A preparation method of oyster protein solid beverage rich in biological zinc comprises the following steps:
s1 selecting fresh oysters, removing shells and meat, removing black matters in internal organs of the oysters, cleaning the oysters, adding a small amount of deionized water, and fully homogenizing; adding appropriate amount of deionized water, heating in water bath at 92 deg.C for denaturation treatment for 12 min; adding cellulase, neutral protease, flavor enzyme and 1.4% tea polyphenol in constant temperature water bath at 53 deg.C to start enzymolysis reaction, heating for 3.5 hr for enzyme hydrolysis, and inactivating enzyme; filtering to obtain enzymolysis solution, cooling to 4 deg.C, removing upper floating lipid, centrifuging at 2800 r/min, and collecting supernatant; decolorizing with modified large-particle activated carbon, further performing nanofiltration with molecular weight cutoff of 150Da after decolorizing, vacuum concentrating nanofiltration retentate at 50 deg.C, and spray drying to obtain Concha Ostreae protein powder rich in biological zinc.
S2, respectively sieving oyster protein powder, fruit powder, inulin, non-dairy creamer, polydextrose, maltodextrin and sucralose with a 150-mesh sieve, respectively taking 74 parts of oyster protein powder, 12 parts of coconut powder, 1.5 parts of inulin, 5 parts of non-dairy creamer, 3.5 parts of polydextrose, 4 parts of maltodextrin and 0.15 part of sucralose, mixing the raw and auxiliary materials, adding 4 parts of lemon juice, mixing in a mixer at a speed of 22r/min for 15min, boiling and drying the mixed raw and auxiliary materials in a boiling drying bed at a temperature of 68 ℃ for 11min, discharging, cooling to a temperature below 33 ℃, metering, bagging and packaging to obtain the oyster protein solid beverage rich in biological zinc.
Example 3
The oyster protein solid beverage rich in biological zinc comprises the following raw and auxiliary materials in parts by weight: 76 parts of oyster protein powder rich in biological zinc, 10 parts of passion fruit powder, 2 parts of inulin, 5 parts of non-dairy creamer, 4 parts of polydextrose, 3 parts of maltodextrin, 0.2 part of sucralose and 5 parts of lemon juice.
A preparation method of oyster protein solid beverage rich in biological zinc comprises the following steps:
s1 selecting fresh oysters, removing shells and meat, removing black matters in internal organs of the oysters, cleaning the oysters, adding a small amount of deionized water, and fully homogenizing; adding appropriate amount of deionized water, heating in water bath at 93 deg.C for denaturation for 11 min; adding cellulase, compound protease, neutral protease and 1.5% tea polyphenol in a constant temperature water bath at 55 deg.C to start enzymolysis reaction, and heating to inactivate enzyme after enzymolysis for 3 hr; filtering to obtain enzymolysis solution, cooling to 4 deg.C, removing upper floating lipid, centrifuging at 3000 r/min, and collecting supernatant; decolorizing with modified large-particle activated carbon, further performing nanofiltration with molecular weight cutoff of 100Da after decolorizing, vacuum concentrating nanofiltration retentate at 55 deg.C, and spray drying to obtain Concha Ostreae protein powder rich in biological zinc.
S2, sieving oyster protein powder, fruit powder, inulin, non-dairy creamer, polydextrose, maltodextrin and sucralose with a 150-mesh sieve respectively, then respectively taking 76 parts of oyster protein powder, 10 parts of passion fruit powder, 2 parts of inulin, 5 parts of non-dairy creamer, 4 parts of polydextrose, 3 parts of maltodextrin and 0.2 part of sucralose, mixing the raw and auxiliary materials, adding 5 parts of lemon juice, mixing in a mixer at a speed of 25r/min for 12min, boiling and drying the mixed raw and auxiliary materials in a boiling drying bed at 70 ℃ for 6 min, discharging, cooling to below 32 ℃, metering, bagging and packaging to obtain the oyster protein solid beverage rich in biological zinc.

The oyster protein solid beverage rich in biological zinc comprises the following raw and auxiliary materials in parts by weight: 78 parts of oyster protein powder rich in biological zinc, 10 parts of papaya fruit powder and banana fruit powder, 1.8 parts of inulin, 7 parts of non-dairy creamer, 3.2 parts of polydextrose, 2 parts of maltodextrin, 0.23 part of sucralose and 4.5 parts of lemon juice.

s2, respectively sieving oyster protein powder, fruit powder, inulin, non-dairy creamer, polydextrose, maltodextrin and sucralose with a sieve of 100-200 meshes, mixing in a preferred proportion, adding lemon juice, uniformly mixing in a mixer, carrying out fluidized drying on the mixed ingredients in a fluidized drying bed, cooling to below 30-35 ℃ after drying is finished, metering, bagging and packaging to obtain the oyster protein solid beverage rich in biological zinc.
