Abstract
本发明公开了一种山楂蜜汁的加工方法,属于饮料领域,其包括准备原料、山楂处理、辅料处理、辅料打浆及混合等步骤,采用的原料包括山楂60~100份,山药15~20份,玉米粒20~30份,胡萝卜15~20份,黄豆20~30份,大枣20~30份,酵素20~30份,冰糖25~60份,茯苓10~20份,橘皮15~20份,山楂依次经过蒸熟、打浆、去核;玉米粒和黄豆分别煮熟,并收集煮沸水,胡萝卜、山药、大枣、冰糖、茯苓和橘皮分别破碎成小颗粒物料,之后将辅料和煮沸水混合进行打浆;最后混合山楂浆料和辅料浆料并加入酵素即可。本发明口感较好,富含多元维生素,能增进食欲,具有多种功效,有利于提高饮用者的身体素质。

本发明涉及饮料领域,具体的涉及一种山楂蜜汁的加工方法。
背景技术
山楂为蔷薇科植物山楂或山里红的成熟果实,其酸甜可口,具有开胃消食、化滞消积、活血散瘀、化痰行气的功效,用于肉食滞积、胃脘胀满等症。山楂含有多种维生素、山楂酸、柠檬酸、黄酮类、糖类、蛋白质、脂肪和钙、磷、铁等矿物质,具有消食、降压、降脂、抗氧化、清除胃肠道有害菌等作用,其中所含的解酯酶能促进脂肪类食物的消化,还可促进胃液分泌、增加胃内酶等功能;所含的三萜及黄酮类成分对心血管系统具有强心、降压、改善血流循环等作用,对老年心血管患者十分有益。因此,山楂是一种深受大众喜爱的水果。
但是目前现有的以山楂为原料的饮品多注重饮品的口感,轻视其营养作用和功效,其含有的维生素多样性较差,且功效较少。
发明内容
1.要解决的技术问题
本发明要解决的技术问题在于提供一种山楂蜜汁的加工方法,其口感较好,富含多元维生素,能增进食欲,具有多种功效,有利于提高饮用者的身体素质。
2.技术方案
为解决上述问题,本发明采取如下技术方案:
一种山楂蜜汁的加工方法,包括如下步骤:
S1、准备原料:选取新鲜的山药,去皮,洗净后,沥干;选取新鲜的玉米粒、山楂和胡萝卜,洗净后,沥干;选取优质的黄豆和大枣,洗净后,沥干;选取优质的酵素、冰糖、茯苓和橘皮;然后按如下重量份数称取各原料:山楂60~100份,山药15~20份,玉米粒20~30份,胡萝卜15~20份,黄豆20~30份,大枣20~30份,酵素20~30份,冰糖25~60份,茯苓10~20份,橘皮15~20份;
S2、山楂处理:将步骤S1中洗净后的山楂蒸熟,之后进行打浆,然后过滤去核,得到山楂浆料;
S3、辅料处理:预先将步骤S1中洗净的黄豆泡发,然后将步骤S1中洗净的玉米粒和泡发后的黄豆分别煮熟,捞出备用,并收集玉米粒和黄豆的煮沸水,晾凉备用;将胡萝卜、山药切丁,备用;将大枣去核后,切碎,备用;将冰糖、茯苓和橘皮分别破碎成小颗粒物料,备用;
S4、辅料打浆:将步骤S3中处理后的玉米粒、黄豆、胡萝卜、山药、大枣、冰糖、茯苓、橘皮全部倒入打浆机中,并倒入步骤S3中所得的煮沸水,进行打浆,得到辅料浆料;
S5、混合:将步骤S2中所得的山楂浆料和步骤S4中所得的辅料浆料混合后,加入步骤S1中准备好的酵素,并置于均质机中进行处理,得到山楂蜜汁。
进一步地,在步骤S1中,按如下重量份数称取各原料:山楂80份,山药18份,玉米粒25份,胡萝卜18份,黄豆25份,大枣25份,酵素25份,冰糖40份,茯苓15份,橘皮18份。
进一步地,在步骤S1中,所述玉米粒采用甜玉米。甜玉米的口感比较香甜,能够提升山楂蜜汁的香甜口感。
进一步地,在步骤S4中,先将山药、大枣、冰糖、茯苓和橘皮倒入打浆机中,并倒入刚好浸没物料的煮沸水,进行破碎;然后加入玉米粒、黄豆和胡萝卜,并添加煮沸水至体积比为打浆机内物料体积的1.5~3倍,进行打浆,最终得到辅料浆料。因为山药、大枣、冰糖、茯苓和橘皮的体积相对较大,先对它们进行破碎后,再与玉米粒、黄豆及胡萝卜混合进行打浆,可保障打浆效果。
进一步地,在步骤S4中,打浆结束后,进行过滤后,得到辅料浆料。打浆后进行过滤可大大减少辅料浆料中存在的固体物质,提升辅料浆料的质量。
3.有益效果
(1)本发明的原料包括山楂、玉米粒、胡萝卜、黄豆和大枣,山楂中富含维生素C;玉米粒中含有丰富的维生素A源物质和较多的维生素E,并含有少量的维生素B1和B2;胡萝卜中富含维生素A源物质、维生素B1和B2;黄豆经打浆后制成豆浆,豆浆中富含维生素D和维生素C,还含有维生素B1和B2;大枣富含维生素A源物质、B族维生素、维生素C及维生素P;则使得本发明提供的饮品中富含多元维生素,可充分且较为全面的补充维生素,从而有利于提高饮用者的身体素质。
(2)本发明的原料中包括山楂、玉米粒和酵素,山楂中所含的解酯酶能促进脂肪类食物的消化,还可促进胃液分泌、增加胃内酶等功能,故而可以健脾开胃、消食化滞,尤其善于消化油腻的肉食;玉米能够调中开胃,对于食欲不振、消化功能相对比较差的人,适当的食用玉米都有着很好的增进食欲、促进消化功能的作用;酵素能够促进胃消化,以促进营养物质更好地被人体所吸收。则使得本发明提供的饮品能够增进食欲,让饮用者能够进食更多的营养物质,同时,又能提高饮用者的消化能力,避免消化不良。
(3)本发明的原料中含有山楂、玉米粒和黄豆,山楂能防治心血管疾病,具有扩张血管、增加冠脉血流量、改善心脏活力、兴奋中枢神经系统、降低血压和胆固醇、软化血管及利尿和镇静作用,山楂能降低血清胆固醇及甘油三酯,有效防治动脉粥样硬化;山楂还能通过增强心肌收缩力起到强心和预防心绞痛的作用;山楂中的总黄酮有扩张血管和持久降压的作用;玉米可促进血液循环,减轻动脉硬化;可降低人体血液胆固醇含量,预防高血压和冠心病的发生;玉米能束缚并阻碍过量的葡萄糖的吸收,起到抑制饭后血糖升高的作用;玉米和黄豆制成的豆浆中含有的纤维素还可以抑制脂肪吸收,降低血脂水平,预防和改善冠心病、肥胖、胆结石症的发生;豆浆含有大量纤维素;豆浆中所含的豆固醇和钾、镁,是有力的抗盐钠物质,钠是高血压发生和复发的主要根源之一,如果体内能适当控制钠的数量,既能防治高血压,又能治疗高血压;豆浆中所含的豆固醇和钾、镁、钙能加强心机血管的兴奋,改善心机营养,降低胆固醇,促进血流防止血管痉挛。则本发明提供的饮品能够有效防治糖尿病、高血压和冠心病。
(4)本发明的原料中包括玉米粒、黄豆和胡萝卜,玉米粒中含有的维生素E能够减轻脑功能衰退;由黄豆制成的豆浆中含有的卵磷脂能减少脑细胞死亡,提高脑功能;玉米粒、黄豆制成的豆浆、胡萝卜中含有的维生素B1对神经组织和精神状态有良好的影响,可改善精神状况,消除疲劳。使得本发明提供的饮品适合于经常用脑的人群饮用。
(5)本发明的原料中包括山药、大枣、橘皮和茯苓,山药具有益气养阴,补脾肺肾,固精止带的功效,主治脾虚症、肺虚症、肾虚症、消渴气阴两虚症;大枣富含蛋白质、脂肪、糖类、胡萝卜素、B族维生素、维生素C、维生素P以及钙、磷、铁和环磷酸腺苷等营养成分,其中维生素C的含量在果品中名列前茅,有维生素王之美称,具有养颜治疗失眠、补中益气、养血安神的功效;橘皮具有理气健脾,燥湿化痰的功效,用于脘腹胀满,食少吐泻,咳嗽痰多;茯苓具有利水渗湿,健脾,宁心的功效,用于水肿尿少,痰饮眩悸,脾虚食少,便溏泄泻,心神不安,惊悸失眠。则本发明具有健脾、安神等多种功效。
(6)本发明所含的山楂、玉米粒、黄豆、胡萝卜、山药、大枣的口味都较易被广大人群接受,酵素不会对饮品的口感造成不良影响,冰糖具有较大的甜味,茯苓也具有一定的甜味,可遮盖橘皮的微量苦味,则使得本发明提供的饮品的口感较好。
综上,本发明口感较好,富含多元维生素,能增进食欲,具有多种功效,有利于提高饮用者的身体素质。
具体实施方式
下面结合实施例对本发明作进一步详细的说明。
实施例1
一种山楂蜜汁的加工方法,包括如下步骤:
S1、准备原料:选取新鲜的山药,去皮,洗净后,沥干;选取新鲜的玉米粒、山楂和胡萝卜,洗净后,沥干;选取优质的黄豆和大枣,洗净后,沥干;选取优质的酵素、冰糖、茯苓和橘皮;然后按如下重量份数称取各原料:山楂100份,山药15份,玉米粒20份,胡萝卜20份,黄豆20份,大枣30份,酵素20份,冰糖25份,茯苓20份,橘皮20份;
S2、山楂处理:将步骤S1中洗净后的山楂蒸熟,之后进行打浆,然后过滤去核,得到山楂浆料;
S3、辅料处理:预先将步骤S1中洗净的黄豆泡发,然后将步骤S1中洗净的玉米粒和泡发后的黄豆分别煮熟,捞出备用,并收集玉米粒和黄豆的煮沸水,晾凉备用;将胡萝卜切碎,备用;将山药切丁,备用;将大枣去核后,切碎,备用;将冰糖、茯苓和橘皮分别破碎成小颗粒物料,备用;
S4、辅料打浆:将步骤S3中处理后的玉米粒、黄豆、胡萝卜、山药、大枣、冰糖、茯苓、橘皮全部倒入打浆机中,并倒入步骤S3中所得的煮沸水,进行打浆,得到辅料浆料;
S5、混合:将步骤S2中所得的山楂浆料和步骤S4中所得的辅料浆料混合后,加入步骤S1中准备好的酵素,并置于均质机中进行处理,得到山楂蜜汁。
在上述步骤S1中,所述玉米粒采用甜玉米。甜玉米的口感比较香甜,能够提升山楂蜜汁的香甜口感。
在上述步骤S4中,打浆结束后,进行过滤后才得到辅料浆料。打浆后进行过滤可大大减少辅料浆料中存在的固体物质,提升辅料浆料的质量。
实施例2
本发明与实施例1的不同之处在于:
在步骤S1中,按如下重量份数称取各原料:山楂80份,山药18份,玉米粒25份,胡萝卜18份,黄豆25份,大枣25份,酵素25份,冰糖40份,茯苓15份,橘皮18份。

在步骤S4中,先将山药、大枣、冰糖、茯苓和橘皮倒入打浆机中,并倒入刚好浸没物料的煮沸水,进行破碎;然后加入玉米粒、黄豆和胡萝卜,并添加煮沸水至体积比为打浆机内物料体积的3倍,进行打浆,最终得到辅料浆料。因为山药、大枣、冰糖、茯苓和橘皮的体积相对较大,先对它们进行破碎后,再与玉米粒、黄豆及胡萝卜混合进行打浆,可保障打浆效果。

1.一种山楂蜜汁的加工方法,其特征在于,包括如下步骤:
S1、准备原料:选取新鲜的山药,去皮,洗净后,沥干;选取新鲜的玉米粒、山楂和胡萝卜,洗净后,沥干;选取优质的黄豆和大枣,洗净后,沥干;选取优质的酵素、冰糖、茯苓和橘皮;然后按如下重量份数称取各原料:山楂60~100份,山药15~20份,玉米粒20~30份,胡萝卜15~20份,黄豆20~30份,大枣20~30份,酵素20~30份,冰糖25~60份,茯苓10~20份,橘皮15~20份;
S2、山楂处理:将步骤S1中洗净后的山楂蒸熟,之后进行打浆,然后过滤去核,得到山楂浆料;
