Description
Technical Field
The invention belongs to the field of nutritional and health-care foods, and particularly relates to a nutritional food for reducing fat and increasing muscle.
Background
To evaluate the degree of overweight and obesity in adults, the medical community has introduced the concept of Body Mass Index (BMI). BMI is calculated as weight/height2(kg/m2). According to the actual situation of adults in China, the following regulations are currently specified: BMI of 18.5 or less<24kg/m2The BMI is within the normal weight range and is more than or equal to 24<28kg/m2Is overweight, and has a BMI of more than or equal to 28kg/m2It is obese. Obesity is caused by excess energy and deficiency of proteins and certain minerals, vitamins, body fat volume and/or fat finesIncreased cell numbers and excessive deposition in certain parts of the body, leading to malnutrition with abnormally increased body weight or body fat rate (percentage of body fat in body weight). Overweight (overweight) is an intermediate state between normal and obese.
In recent years, the incidence of overweight/obesity in our country has been growing year by year. Data reported by Chinese residents in 2015 shows that the overweight rate of Chinese adults in 2012 is 30.1% and the obesity rate is 11.9%. Overweight and obesity not only affect stature, confidence and socialization; as an independent influence factor, metabolic diseases such as type 2 diabetes, hyperlipidemia and fatty liver, cardiovascular diseases such as hypertension, coronary heart disease and cerebral apoplexy, and even the incidence of tumors can be increased. High energy intake, unbalanced diet, and lack of exercise are major causes of obesity.
With the popularization of health knowledge, weight loss and body building become fashionable. Weight loss, also known as fat loss, refers to the reduction of body weight and body fat rate by reducing body fat, especially abdominal and visceral fat, with less muscle loss. It has been demonstrated that weight loss can only be achieved by ensuring that energy expenditure is greater than energy intake, achieving a negative balance of energy. Sufficient muscle not only guarantees the motor ability, but also can protect the joints, improve the insulin sensitivity and prevent the occurrence and the development of diabetes. The muscle of the same mass has a higher basal metabolic rate than the fat, so the higher the body muscle proportion is, the higher the energy consumption is, and the more beneficial the control of the body weight is. Therefore, scientific weight loss must be achieved by reducing body fat while maintaining or even increasing body muscle mass to prevent obesity-related diseases. Body building and fitness people seek to increase muscle building and shaping besides reducing fat. Diet is beneficial for weight loss, and while energy intake is reduced, the intake of nutrients, especially insufficient protein, vitamins and the like, is reduced, so that the basal metabolic rate is reduced, the weight loss is difficult to continue, the metabolic disturbance and muscle loss are aggravated, and the healthy southern thill northern rut is also aggravated.
Exercise not only increases energy expenditure, but also enhances heart and lung function, prevents osteoporosis, thickens muscle fibers, and increases muscle mass. Therefore, exercise for weight loss is the main way. Exercise is accomplished by coordinated contraction and relaxation of muscles in the muscle group. Muscle contraction requires energy support. The energy supply for sports has the sequence that muscle fibers firstly supply energy by utilizing ATP stored in muscle cells and high-energy phosphate bonds in phosphocreatine, then blood sugar is consumed for supplying energy, after the blood sugar is reduced, muscle can mobilize muscle glycogen for supplying energy, and when the muscle glycogen is greatly consumed, fat and protein can be mobilized for supplying energy. Only when the body consumes fat to supply energy can the weight-reducing process be started. However, fat and protein breakdown is not in sequence when exercise is powered. The muscle protein energy supply is completed by decomposing protein into amino acid, performing biological transformation such as deamination and the like, and performing biological oxidation and ATP release. Muscle breakdown energy supply is faster during high intensity exercises because muscle breakdown energy supply is performed inside the exercising muscles, and mobilizing fat requires transportation from a remote location. Although muscle proteins are constantly in metabolism (1% -2% of muscle protein breakdown and synthesis per day), muscle proteins used for exercise energization, under conditions of adequate muscle glycogen stores, typically do not exceed 5% of total energy consumption. At muscle glycogen depletion, protein energy supply can increase to 10% -15% or even up to 18% of the total calories. Once the energy supply of muscle protein exceeds 5%, muscle decomposition is caused. So exercise weight loss must be accompanied by muscle loss.
In order to reduce muscle loss during exercise and weight loss, the protein intake is increased to 1.2 g/kg-d or more, and the protein intake of the people with muscle building and shaping needs to reach 1.5-2.0 g/kg-d. Secondly, the proportion of high-quality protein is ensured to be not less than 50 percent. In the high-quality protein, the essential amino acids which can not be synthesized by human body are complete in variety, sufficient in quantity and proper in proportion, and are high-quality raw materials for muscle protein synthesis. And supplementing nutrient factors for promoting muscle protein synthesis and inhibiting decomposition. In addition, total energy intake (less than or equal to 1200 kcal/day, vegetables with low content of edible starch, fruits and snacks for reducing hunger sensation) needs to be controlled in order to achieve the goal of weight loss.
Amino acids closely related to muscle include arginine, branched chain amino acids (BCAA, meaning leucine, isoleucine and valine) and glutamine. Arginine increases muscle blood supply and promotes muscle growth. The branched chain amino acid not only has high content (up to 35%) in muscle protein, but also can prevent muscle from decomposing, promote muscle protein synthesis and make muscle more full. Glutamine is the largest amount of free amino acid in human body, accounts for about 60% of the total amount of free amino acid in human body, is mainly synthesized in muscle, can neutralize acidic products accumulated in human body in anaerobic exercise, and has certain effect on delaying sports fatigue. As a main energy source of immune cells and intestinal mucosa cells, glutamine has great significance in maintaining the immune function of human bodies and the integrity of intestinal mucosa. During strenuous exercise, the consumption of glutamine in muscles is enormous, which is also the main reason for the decline of body resistance after exercise.
Beta-hydroxy beta-methylbutyrate (HMB), a leucine metabolite naturally occurring in human skeletal muscle, has a significantly higher intensity of action than equivalent leucine. Recent studies have found that HMB affects skeletal muscle metabolism mainly through the following mechanisms: 1) activating mammalian Target of rapamycin (mTOR, a protein kinase, which plays a central role in controlling mRNA translation efficiency) signaling pathway, stimulating protein synthesis; 2) inhibition of Ubiquitin Proteasome Pathway (UPP), reduction of muscle protein breakdown; 3) the compound is converted into beta-hydroxy beta-methylglutaryl coenzyme A (HMG-CoA) in vivo, thereby promoting the synthesis of cholesterol, supporting the rapid repair of muscle and immune system cell damage and maintaining the integrity of cell membranes; 4) stimulating muscle satellite cells to promote muscle regeneration; 5) increase endoplasmic reticulum calcium release. Studies at the loving state university have demonstrated that HMB can increase more muscle and reduce nearly one-fold fat in a motor-assisted setting. In 2011, the domestic approval of the beta-hydroxy beta-methylbutyrate calcium (HMBCa) as a new food raw material is that the daily consumption is less than or equal to 3 g. In 2017, the application range of HMBCa is expanded to beverages, milk and dairy products, cocoa products, chocolate and chocolate products, candies, baked foods, sports nutrition foods and special medical purpose formula foods.
For the intervention of exercise, the theory of aerobic fat reduction and anaerobic muscle increase is available, namely on the premise of ensuring certain amount of exercise, aerobic exercise has positive effects on improving the functions of heart and lung, reducing visceral fat and abdominal fat and enhancing physical ability; anaerobic exercise is more effective in increasing muscle (increasing lean body mass). According to the exercise energy supply sequence, ATP in the body can only support exercise for a plurality of seconds, creatine phosphate can support 2-3 minutes, muscle glycogen stored in the human body can support exercise for about 30 minutes, and then the process of fat reduction for consuming fat is carried out. Because energy can be supplied only by glycolysis of glucose during anaerobic exercise, it is recommended that before each exercise, the patient should be warmed up for several minutes, then subjected to several groups of high-intensity intermittent anti-impedance (HITT) anaerobic exercises for about 30 minutes to consume glycogen in the body, and finally subjected to aerobic exercises such as jogging and the like to enter the process of reducing fat. Just as the fatty deposits that lead to overweight and obesity do not develop in a short time, the fat reduction and muscle enhancement achieved by nutritional and motor interventions also require long-term persistence to be effective.
The pyruvic acid and the L-carnitine are supplemented during aerobic exercise, so that target people can mobilize and decompose fat to supply energy to organisms, and the goal of reducing fat is achieved more easily. At present, more than 300 weight-losing health-care foods approved by China exist, more than eighty raw materials are used, and the proportion of plants and related products exceeds 75%. The 5 raw materials with the highest use frequency comprise lotus leaves (45.3%), cassia seeds (40.6%), L-carnitine (36.1%), tea (26.1%) and rhizoma alismatis (23.9%) in sequence. Calcium pyruvate is also used as a raw material for certain health foods, and the use frequency is 6.1%.
It has been mentioned previously that imbalances in nutrient intake are one of the major causes of obesity. Protein, calcium, iron, zinc, magnesium, potassium, vitamin A, and vitamin B1Vitamin B2Vitamin B6Vitamin B12Vitamin C, vitamin D, vitamin E, folic acid and nicotinic acid are all factors influencing obesity. There are few foods on the market that aim to regulate the imbalance of nutrients. Some foods claiming to lose weight use coarse food grains or add dietary fibers into the products to increase satiety, so as to achieve the effect of losing weight by reducing the intake of food and energy. The food is really not different from diet weight loss, has poor taste and is difficult to persistIn addition, the protein content is seriously insufficient, and the muscle loss is easily caused. Some so-called weight-losing foods which are added with a large amount of saturated fat such as palm oil and cover high dietary fiber and have rough mouthfeel actually belong to high-energy, high-fat and high-fiber products; if the health-care food is eaten for a long time, the health-care food has no weight-losing effect, can increase blood cholesterol and aggravate lipid metabolism disorder. The currently sold muscle-increasing products mainly comprise protein powder and creatine. According to the regulations of our national laws, creatine is allowed to be used in sports nutritional foods, and is not allowed to be used for developing health-care foods. At present, fat-reducing and muscle-increasing products are not available in the market.
Disclosure of Invention
The invention provides a nutritional food for reducing fat and increasing muscle, which is used for people who lose weight, build body and build body, and is matched with aerobic and anaerobic exercises to reduce fat and increase muscle. The nutritional food can supplement glutamine consumed during exercise, and has effects of relieving exercise fatigue and enhancing immunity; use of calcium pyruvate and L-carnitine to increase fat mobilization during aerobic exercise, vitamin B1And B2β -hydroxyl β -calcium methylbutyrate prevents muscle protein from decomposing, promotes muscle protein synthesis, stimulates muscle growth, provides amino acid essential for human body, provides raw material for repairing muscle injury caused by exercise, and is beneficial to muscle increase.
Technical scheme
A nutritional food for reducing fat and increasing muscle comprises the following nutritional ingredients: 4-15 parts of glutamine or 6-22 parts of alanyl glutamine, 4-10 parts of soybean peptide, 2-5 parts of calcium pyruvate and 1-3 parts of beta-hydroxy beta-methylbutyrate calcium.
Glutamine in muscle can neutralize acidic product accumulated in body in anaerobic exercise, and has effect in delaying sports fatigue. Glutamine is of great significance in maintaining the immune function of the human body and the integrity of the intestinal mucosa. During strenuous exercise, the consumption of glutamine in muscles is huge, so that the body resistance is reduced after exercise, and the cold is easily caused. In addition, glutamine can also promote skeletal muscle protein synthesis. The nutritional food uses glutamine or alanylglutamine as a raw material to supplement glutamine for target people. The nutritional food can be prepared into granules, solid beverages or oral liquid. When making into granule or solid beverage, glutamine is used in an amount of 4-15 parts. When the preparation is made into oral liquid, alanyl glutamine is used, the dosage of which is 6 to 22 parts, and water is added to 500 parts.
When the nutritious food is prepared into oral liquid, the nutritious food is canned in a sterilizable and sealed plastic, glass or metal container. The liquid was subjected to autoclaving (115 ℃ C., 10 minutes). Because glutamine has poor heat stability and alanyl glutamine can endure a high-temperature sterilization process, the alanyl glutamine is used for replacing glutamine when the nutritional food is prepared into oral liquid. Alanylglutamine is a dipeptide synthesized by condensing alanine and glutamine, has high bioavailability, and can be rapidly decomposed into glutamine and alanine in vivo after being orally absorbed so as to be used for synthesizing body substances and consuming energy.
The soybean protein belongs to high-quality protein, the arginine content of the soybean protein is three times of that of whey protein, and the BCAA content is up to 20 percent. Arginine can promote muscle growth, BCAA can prevent muscle decomposition, and accelerate muscle protein synthesis. In addition, the soybean protein also has the function of reducing blood fat. The soybean peptide is hydrolyzed from soybean protein, has moderate molecular weight, good water solubility, and no denaturation under heating, and can be directly absorbed into blood in intestinal tract without digestion. The soybean peptide can be supplemented before exercise to inhibit muscle decomposition and prevent muscle loss. 30 to 60 minutes after exercise, the muscle cell membrane absorption channel is in an open state, and can rapidly absorb small molecular nutrients in blood and tissue fluid, which is called as a 'window period' of muscle nutrition supplementation. The soybean peptide is supplemented in the 'window period' after exercise, so that BCAA and arginine can be supplemented for muscle cells, muscle protein synthesis is promoted, muscle injury caused by exercise is repaired, muscle fatigue is eliminated, and muscle strength is enhanced.
The nutritional food disclosed by the invention uses calcium pyruvate as a raw material, and enhances the exercise fat-reducing effect. Pyruvate is an intermediate product of sugar metabolism, lipid metabolism, and various amino acid metabolism in the human body. Exogenous pyruvate supplementation plays a role in reducing body weight and body fat through the following two ways: first, pyruvate can increase the activity of rate-limiting enzyme pyruvate dehydrogenase complex, accelerate the conversion of pyruvate to NADH and acetyl CoA, and allow the Krebs cycle to proceed continuously, thereby accelerating the rate of sugar and fat catabolism in vivo. Secondly, pyruvate can increase pyruvate-phosphoenolpyruvate cycle in muscle and other tissues, increasing human energy expenditure. The literature reports that the fat reducing effect is better when the pyruvic acid is supplemented by combining aerobic exercise.
As described above, β -hydroxy β -methylbutyrate (HMB) stimulates protein synthesis, inhibits muscle protein degradation, stimulates muscle satellite cells, and promotes muscle regeneration. Clinical research shows that the appropriate amount of supplementary HMB, in combination with resistance exercise, has certain effect on improving muscle quality and strengthening muscle strength. The calcium beta-hydroxy beta-methylbutyrate used in the nutritional food according to the invention is the calcium salt of HMB and has the same efficacy as HMB.
There is literature showing that obesity is associated with calcium deficiency. The chinese resident nutritional and chronic condition report (2015) shows that 96.6% of residents have lower dietary calcium intake than EAR (average required), and most people are at risk of insufficient dietary calcium intake. The nutritional food disclosed by the invention uses calcium salts of pyruvic acid and beta-hydroxy beta-methylbutyric acid, and can supplement insufficient intake of dietary calcium.
Vitamin B1With vitamin B2The report of Chinese residents on nutrition and chronic disease conditions (2015) shows that 77.8% of residents in China have the risk of insufficient intake of vitamin B1, 90.2% of residents have the risk of insufficient intake of vitamin B2, and L-carnitine is a transport carrier for long-chain fatty acid in vivo to enter mitochondria and has the effects of promoting fatty acid β -oxidation, glucose oxidation and utilization and aerobic metabolism.
