技术领域
本发明涉及一种食品添加剂,广泛应用于制备含甜味食品的食品制造业和食品加工工业中,也可在各种餐饮业中或家庭民用中作为餐桌调味料或食品制作配料使用。
背景技术
目前,在我国和一些发达国家,物质文明和物质丰富达到了前所未有的高度。人民已经可以充分地享受到精米精面的食物。但令人深思的是,人类在经过几万年的努力能够享受到精制主食,饮食日益精细的同时却导致现代“文明病”“富贵病”如糖尿病、心血管病、肥胖症、肠道癌、便秘等的普遍发生。而在第三世界的经济很不发达国家中,如非洲、亚洲贫困地区,由于粮食产量不足以支撑人们精制主食的消费,长期历史的高纤维食物的食用,反而很少出现“文明病”。
Trowell博士首次列出西方文明病的特征并论证了纤维食物的重要性,提出了膳食纤维的概念,引起了人类对纤维作用的再认识。近40年来,由于大量的事实例证,膳食纤维的重要生理功能在更大范围内为人们所广泛接受。膳食纤维甚至被很多人建议列入继蛋白质、可利用的碳水化合物、脂肪、维生素、矿物元素和水之后的第七大营养素。
人类社会进入21世纪后,许多国家开始进入人口老龄化社会,人们对食品的消费观念也发生了变化,对食品的要求不仅仅停留在感官、口感上,而且越来越讲究功能性。因此可以相信,21世纪的食品将逐渐以功能性食品为主。而膳食纤维正是因其突出的保健功能而被人们逐渐认识。进入20世纪90年代,全世界范围兴起了研究膳食纤维的热潮,受到来自不同领域的科学家,包括医生、营养学家、膳食家、食品科学家、生物化学家以及与食品法规、营养教育有关的科学决策者的广泛重视。尤其是20世纪90年代初期,全美国甚至整个欧洲共同体国家掀起了一股研究开发纤维食品的热潮。以往不被人们重视的食品纤维,像维生素一样成为人们谈论的重要话题。
发明内容
本发明的目的在于克服现有技术的不足,提供一种可替代蔗糖的低热值甜味保健膳食纤维食品添加剂。
本发明的技术方案为:一种食品添加剂,它包括如下两种组分:膳食纤维、甜味剂。
所述的各组分的重量比为:膳食纤维50~99.99%、甜味剂0.01%~50%。
所述的膳食纤维为水溶性膳食纤维、水不溶性膳食纤维中的一种或其混合物。
所述的膳食纤维为菊粉、葡聚糖、燕麦β-葡聚糖、苹果果胶、山楂果胶、葡萄皮果胶、柚皮果胶、西番莲果胶、柑橘果胶、向日葵盘果胶、小麦膳食纤维、玉米膳食纤维、燕麦膳食纤维、米糠膳食纤维、大麦膳食纤维、大豆膳食纤维、豆渣膳食纤维、豌豆膳食纤维、瓜尔胶、洋槐豆胶、古柯豆胶、阿拉伯胶、海藻胶、黄蓍胶、黄原胶、琼脂、微生物多糖、苹果膳食纤维、梨膳食纤维、甘蔗膳食纤维、椰子膳食纤维、甜菜膳食纤维、抗性淀粉、壳聚糖、麦芽糊精中的一种或其任意组合的混合物。
所述的甜味剂为三氯蔗糖、纽甜、二氢查尔酮、嗦吗甜、结晶果糖、赤藓糖醇、木糖醇、山梨醇、甘露醇、麦芽糖醇、乳糖醇、异麦芽糖醇、异麦芽酮糖、乳酮糖、大豆低聚糖、低聚果糖、低聚乳果糖、低聚木糖、低聚半乳糖、低聚异麦芽糖中的一种或其任意组合的混合物。
所述的甜味剂由如下重量比的成分组成:纽甜0.005~50.00%,三氯蔗糖0.005%~50.00%,二氢查尔酮0.005%至50.00%,嗦吗甜0.005%~50.00%,其余为结晶果糖、赤藓糖醇、木糖醇、山梨醇、甘露醇、麦芽糖醇乳糖醇、异麦芽糖醇、异麦芽酮糖、乳酮糖、大豆低聚糖、低聚果糖、低聚乳果糖、低聚木糖、低聚半乳糖、低聚异麦芽糖中的一种或其任意组合的混合物。
所述的食品添加剂为液体制剂、粉末状制剂、片剂、丸剂、造粒制剂、中空造粒制剂、结晶制剂、胶囊制剂、浆状制剂中的任意一种或数种。
本发明的有益效果为:不同品种的膳食纤维对人体可具有下列各种不同的生理功能中的几种作用:
1.无能量、防治肥胖;
2.调节血糖水平、防治糖尿病;
3.调节血脂水平、防治心血管疾病;
4.调节肠道菌群;
5.抑制有毒发酵产物、润肠通便、防治结肠癌;
6.预防肠憩室和乳腺癌。

所述的甜味剂为三氯蔗糖、纽甜、二氢查尔酮、嗦吗甜、结晶果糖、赤藓糖醇、木糖醇、山梨醇、甘露醇、麦芽糖醇、乳糖醇、异麦芽糖醇、异麦芽酮糖、乳酮糖、大豆低聚糖、低聚果糖、低聚乳果糖、低聚木糖、低聚半乳糖、低聚异麦芽糖中的一种或其任意组合的混合物。
优选一种甜味剂由如下重量比的成分组成:纽甜0.005~50.00%,三氯蔗糖0.005%~50.00%,二氢查尔酮0.005%至50.00%,嗦吗甜0.005%~50.00%,其余为结晶果糖、赤藓糖醇、木糖醇、山梨醇、甘露醇、麦芽糖醇乳糖醇、异麦芽糖醇、异麦芽酮糖、乳酮糖、大豆低聚糖、低聚果糖、低聚乳果糖、低聚木糖、低聚半乳糖、低聚异麦芽糖中的一种或其任意组合的混合物。
所述的食品添加剂为液体制剂、粉末状制剂、片剂、丸剂、造粒制剂、中空造粒制剂、结晶制剂、胶囊制剂、浆状制剂中的任意一种或数种。
