Abstract
本发明涉及饮品及其制备方法,具体是指一种沙棘油乳及其制备方法,其配方包括下述重量份的成分:沙棘油35‑45份、纯化水18‑25份、乳化剂8‑12份、三氯蔗糖水溶液114‑143份;其方法包括制备初乳、稀释初乳、灌装、灭菌、检验包装等步骤。本发明制成的沙棘油乳口感好、色泽纯正,保留了沙棘油中的原有成分,同时掩盖了沙棘油的不良气味,有利于人体吸收,提高了沙棘油的生物利用度。

技术领域
本发明涉及饮品及其制备方法,特别涉及一种沙棘油乳及其制备方法。
背景技术
沙棘油是从天然植物沙棘的果实当中提取出来的天然的油脂,含有不饱和脂肪酸、黄酮、维生素、微量元素等一百多种生物活性物质,可以降低高血脂、软化血管、降低低密度脂蛋白、升高高密度脂蛋白、清除血管壁沉积物、磷脂能促进脂质转运和清除、加速血液中甘油三酯的代谢及防治动脉粥样硬化的形成,具有调节胃肠功能、保护肝脏、降血压、降血脂、保护血管、滋养心脑血管、增强心脏功能、滋补肝肾、养颜抗衰老等作用。沙棘籽油为透明浅黄色液体,口服口感较差,不被大多数人所接受,因此食用受到很大限制。此外,沙棘油服用量少,在胃内分散度差,不利于人体吸收。
发明内容
针对现有技术中的上述不足,本发明提供了一种沙棘油乳及其制备方法,其口感好、色泽纯正。
为了达到上述发明目的,本发明采用的技术方案为:
一种沙棘油乳,包括下述重量份的成分:沙棘油35-45份、纯化水18-25份、乳化剂8-12份、三氯蔗糖水溶液114-143份。
作为优选的,所述乳化剂为细粉形式,所述乳化剂为阿拉伯胶或黄蓍胶中的一种或两种混合。
作为优选的,所述三氯蔗糖水溶液的浓度为0.003%-0.025%。
一种沙棘油乳的制备方法,包括如下步骤:
(1)制备初乳:取沙棘油置于干燥的均质搅拌机中,将乳化剂撒在沙棘油的表面,充分浸润后加入纯化水,开启均质搅拌机均质制得初乳,再将初乳置胶体磨中进一步乳化,形成稠厚的初乳;
(2)稀释初乳:将初乳转移至配料罐中进行搅拌,把三氯蔗糖在50-60℃的纯化水中溶解后加入初乳中,加入三氯蔗糖纯化水溶液后,沙棘油含量约为20%,开启搅拌器搅拌均匀,拌器搅转速为1300-1500r/min,搅拌时间约为15分钟;将搅拌均匀的稀释液通过均质机进一步均质,均质后经过滤器过滤,输送到储料罐中备用;
(3)灌装:将沙棘油乳通过管道输送至灌装机,按规格要求进行灌装;
(4)灭菌:将灌装后的沙棘油乳置于旋转式纯化水浴灭菌柜中进行灭菌,灭菌温度121℃,灭菌时间15分钟,灭菌后进行甩干、冷却、晾干;
(5)检验包装:灭菌后的产品送化验室进行检验,检验合格后进行包装,置贴标机贴标后装箱。
作为优选的,所述三氯蔗糖水溶液的制备方法为:将适量的三氯蔗糖加入50-60℃的纯化水中,溶解即得。
本发明的有益效果为:制成的沙棘油乳口感好、色泽纯正,保留了沙棘油中的原有成分,同时掩盖了沙棘油的不良气味,有利于人体吸收,提高了沙棘油的生物利用度。
具体实施方式
为了使本发明的内容更容易被清楚地理解,下面将对本发明实施例中的技术方案进行清楚、完整地描述。
沙棘油是沙棘的精华,医学临床表明,沙棘总黄酮可以降低高血脂、软化血管。并降低低密度脂蛋白,升高高密度脂蛋白,清除血管壁沉积物,磷脂能促进脂质转运和清除,加速血液中甘油三酯的代谢。防治动脉粥样硬化的形成。由于沙棘中含有大量的氨基酸、有机酸等多种营养成分,可以促进胃酸的生物合成,刺激胃液分泌。因而沙棘具有消食化滞、健脾养胃、疏肝理气的作用。对于消化不良、腹胀痛、胃炎、胃及十二指肠溃疡、肠炎、慢性便秘均有极好作用。沙棘中含有的苹果酸、草酸等有机酸具有缓解抗生素和其他药物的毒性作用,保护肝脏,赖氨酸是肝细胞再生剂。沙棘中的磷酯类化合物是一种生物活性较高的成分,可促进细胞代谢,改善肝功能,抗脂肪肝,抗肝硬化。沙棘中的生物活性成分花青素、苦木素、香豆素、5-羟色胺等可阻断黄曲霉菌等致癌物质或病菌的侵害,具有明显辅助抑制癌细胞生长的作用。沙棘总黄酮等生物活性成分对免疫系统的多环节具有不同程度的调节能力,对体液免疫和细胞免疫具有明显的调节作用。沙棘在传统医学理论中就具有止咳平喘、利肺化痰的作用,对慢性咽炎、支气管炎、咽喉肿痛、哮喘、咳嗽多痰等呼吸道系统疾病均有很好作用。
沙棘果油中含有丰富的不饱和脂肪酸、蛋白质。其中所含的20多种氨基酸中,包括8种人体必须氨基酸。其最优异植物类不饱和脂肪酸含量为88%,并富含叶酸,叶酰胺元素,5-羟色胺,生物硷等106种生物活性物质。经科学实验证明,对滋养心脑血管、软化血管、防止动脉粥样硬化、血栓形成,增强心脏功能、降低血脂、调节血压、滋补肝肾、养颜抗衰老有着不寻常的功效作用。

(3)灌装:将沙棘油乳通过管道输送至灌装机,按规格要求进行灌装;
(4)灭菌:将灌装后的沙棘油乳置于旋转式纯化水浴灭菌柜中进行灭菌,灭菌温度121℃,灭菌时间15分钟,灭菌后进行甩干、冷却、晾干;
(5)检验包装:灭菌后的产品送化验室进行检验,检验合格后进行包装,置贴标机贴标后装箱。

本发明的感官指标:
乳白色不透明液体,均匀一致,无杂质,久置后无分层沉淀;无异味,甜度适口。
本发明的理化指标:
饱和脂肪酸:
硬脂酸0.2-0.5%;
不饱和脂肪酸:
棕榈烯酸≥1.36%,
油酸≥4.0%,
亚油酸≥6.5%,
亚麻酸≥5.4%,
植物甾醇220-260mg/100g,
不皂化物0.2-0.7%;
维生素:
类胡萝卜素≥10万IU/100g,
维生素E≥14IU/100g,
维生素K≥24mg/100g,
维生素A≥4.6万IU/100g;
微量元素:
铁0.11-0.25mg/100g,
锌0.04-0.12mg/100g,
钙0.17-0.25mg/100g,
碘3.66-4.50ug/100g。

实施例一:
一种沙棘油乳,包括下述重份的成分:沙棘油400g、纯化水200g、阿拉伯胶80g、黄蓍胶20g、0.005%三氯蔗糖水溶液1300g。
一种沙棘油乳的制备方法,包括如下步骤:
(1)制备初乳:取400g沙棘油置于干燥的均质搅拌机中,将80g阿拉伯胶、20g黄蓍胶撒在沙棘油的表面,充分浸润后沙棘油加入200g纯化水,开启均质搅拌机均质制得初乳,再将初乳置胶体磨中进一步乳化,形成稠厚的初乳;
(2)稀释初乳:将初乳转移至配料罐中进行搅拌,把0.065g三氯蔗糖在1300g的55℃的纯化水中溶解后加入初乳中,加入三氯蔗糖水溶液后,初乳中的沙棘油含量为20%,此时开启搅拌器搅拌均匀,拌器搅转速为1300-1500r/min,搅拌时间约为15分钟;将搅拌均匀的稀释液通过均质机进一步均质,均质后经过滤器过滤,输送到储料罐中备用;
(3)灌装:将沙棘油乳通过管道输送至灌装机,按规格要求进行灌装;
(4)灭菌:将灌装后的沙棘油乳置于旋转式纯化水浴灭菌柜中进行灭菌,灭菌温度121℃,灭菌时间15分钟,灭菌后进行甩干、冷却、晾干;
(5)检验包装:灭菌后的产品送化验室进行检验,检验合格后进行包装,置贴标机贴标后装箱。
本实施例制出的成品沙棘油乳的理化指标为:硬脂酸0.35%;棕榈烯酸1.45%,油酸4.2%,亚油酸6.6%,亚麻酸5.8%,植物甾醇230mg/100g,不皂化物0.25%;类胡萝卜素15万IU/100g,维生素E15IU/100g,维生素K 26mg/100g,维生素A5.2万IU/100g;铁0.20mg/100g,锌0.045mg/100g,钙0.185mg/100g,碘3.8ug/100g。
实施例二:
一种沙棘油乳,包括下述重份的成分:沙棘油450g、纯化水220g、阿拉伯胶110g、0.025%三氯蔗糖水溶液1270g。
一种沙棘油乳的制备方法,包括如下步骤:
(1)制备初乳:取450g沙棘油置于干燥的均质搅拌机中,将110g阿拉伯胶撒在沙棘油的表面,充分浸润后沙棘油加入220g纯化水,开启均质搅拌机均质制得初乳,再将初乳置胶体磨中进一步乳化,形成稠厚的初乳;
(2)稀释初乳:将初乳转移至配料罐中进行搅拌,把0.3175g三氯蔗糖在1270g的58℃的纯化水中溶解后加入初乳中,加入三氯蔗糖水溶液后,初乳中的沙棘油含量约为22%,此时开启搅拌器搅拌均匀,拌器搅转速为1300-1500r/min,搅拌时间约为15分钟;将搅拌均匀的稀释液通过均质机进一步均质,均质后经过滤器过滤,输送到储料罐中备用;
(3)灌装:将沙棘油乳通过管道输送至灌装机,按规格要求进行灌装;
(4)灭菌:将灌装后的沙棘油乳置于旋转式纯化水浴灭菌柜中进行灭菌,灭菌温度121℃,灭菌时间15分钟,灭菌后进行甩干、冷却、晾干;
(5)检验包装:灭菌后的产品送化验室进行检验,检验合格后进行包装,置贴标机贴标后装箱。
本实施例制出的成品沙棘油乳的理化指标为:硬脂酸0.3%;棕榈烯酸1.38%,油酸4.2%,亚油酸7.0%,亚麻酸5.8%,植物甾醇220mg/100g,不皂化物0.4%;类胡萝卜素14万IU/100g,维生素E14IU/100g,维生素K 25mg/100g,维生素A 5万IU/100g;铁0.21mg/100g,锌0.045mg/100g,钙0.18mg/100g,碘3.75ug/100g。
实施例三:
一种沙棘油乳,包括下述重份的成分:沙棘油350g、纯化水180g、阿拉伯胶20g、黄蓍胶70g、0.015%三氯蔗糖水溶液1380g。
一种沙棘油乳的制备方法,包括如下步骤:
(1)制备初乳:取350g沙棘油置于干燥的均质搅拌机中,将20g阿拉伯胶、70g黄蓍胶撒在沙棘油的表面,充分浸润后沙棘油加入180g纯化水,开启均质搅拌机均质制得初乳,再将初乳置胶体磨中进一步乳化,形成稠厚的初乳;
(2)稀释初乳:将初乳转移至配料罐中进行搅拌,把0.207g三氯蔗糖在1380g的58℃的纯化水中溶解后加入初乳中,加入三氯蔗糖水溶液后,初乳中的沙棘油含量为17.5%,此时开启搅拌器搅拌均匀,拌器搅转速为1300-1500r/min,搅拌时间约为15分钟;将搅拌均匀的稀释液通过均质机进一步均质,均质后经过滤器过滤,输送到储料罐中备用;
(3)灌装:将沙棘油乳通过管道输送至灌装机,按规格要求进行灌装;
(4)灭菌:将灌装后的沙棘油乳置于旋转式纯化水浴灭菌柜中进行灭菌,灭菌温度121℃,灭菌时间15分钟,灭菌后进行甩干、冷却、晾干;
(5)检验包装:灭菌后的产品送化验室进行检验,检验合格后进行包装,置贴标机贴标后装箱。
本实施例制出的成品沙棘油乳的理化指标为:硬脂酸0.35%;棕榈烯酸1.4%,油酸4.2%,亚油酸6.8%,亚麻酸6.1%,植物甾醇235mg/100g,不皂化物0.4%;类胡萝卜素13万IU/100g,维生素E14.5IU/100g,维生素K 26mg/100g,维生素A 5万IU/100g;铁0.18mg/100g,锌0.04mg/100g,钙0.175mg/100g,碘3.7ug/100g。
请50人分别对综合实施例一、实施例二、实施例三的成品沙棘油乳从外观、质地、口感方向进行感官测评,实施例一、实施例二、实施例三所得成品均为乳白色、均匀一致、无杂质、无异味的乳液;品尝后,34人认为实施例一制出的沙棘油乳口感最好,10人认为实施例二制出的沙棘油乳口感最好,6人认为实施例三制出的沙棘油乳口感最好;
结合理化指标的结果,得实施例一为本发明的最优配方。

1.一种沙棘油乳,其特征在于,包括下述重量份的成分:沙棘油35-45份、纯化水18-25份、乳化剂8-12份、三氯蔗糖水溶液114-143份。
2.根据权利要求1所述的一种沙棘油乳,其特征在于:所述乳化剂为细粉形式,所述乳化剂为阿拉伯胶或黄蓍胶中的一种或两种混合。
3.根据权利要求1所述的一种沙棘油乳,其特征在于:所述三氯蔗糖水溶液的浓度为0.003%-0.025%。
4.一种沙棘油乳的制备方法,其特征在于,包括如下步骤:
(1)制备初乳:取沙棘油置于干燥的均质搅拌机中,将乳化剂撒在沙棘油的表面,充分浸润后加入纯化水,开启均质搅拌机均质制得初乳,再将初乳置胶体磨中进一步乳化,形成稠厚的初乳;
(2)稀释初乳:将初乳转移至配料罐中进行搅拌,把三氯蔗糖在50-60℃的纯化水中溶解后加入初乳中,加入三氯蔗糖纯化水溶液后,沙棘油含量约为20%,开启搅拌器搅拌均匀,拌器搅转速为1300-1500r/min,搅拌时间约为15分钟;将搅拌均匀的稀释液通过均质机进一步均质,均质后经过滤器过滤,输送到储料罐中备用;
(3)灌装:将沙棘油乳通过管道输送至灌装机,按规格要求进行灌装;
(4)灭菌:将灌装后的沙棘油乳置于旋转式纯化水浴灭菌柜中进行灭菌,灭菌温度121℃,灭菌时间15分钟,灭菌后进行甩干、冷却、晾干;
(5)检验包装:灭菌后的产品送化验室进行检验,检验合格后进行包装,置贴标机贴标后装箱。
5.根据权利要求4所述的一种沙棘油乳,其特征在于:所述三氯蔗糖水溶液的制备方法为:将适量的三氯蔗糖加入50-60℃的纯化水中,溶解即得。
