Abstract
本发明涉及一种包含大颗粒混料的冰淇淋灌注工艺,包括以下步骤:1)冰淇淋原料制备;2)冰淇淋从凝冻机出口通过管道与颗粒添加机的冰淇淋入口相连,颗粒添加机采用叶轮均匀入料,根据物料与冰淇淋的混合比例,设定颗粒添加机供料泵的速度与凝冻机的出料速度比值,混合腔出口采用螺旋叶片导出混合物料;3)控制混合腔出口管道压力在0.2~0.3Mpa,管道末尾通过大通径分配器进行物料分配,并通过灌注枪棒输出;4)冰淇淋灌注完成后迅速快速冻结,快速冻结温度‑35℃至‑40℃,冻结时间控制在30~45分钟。该工艺不仅保证了冰淇淋的质地、口感达到最佳状态,而且能实现大颗粒物料与冰淇淋的混合均匀。
Description
技术领域
本发明涉及一种包含大颗粒混料的冰淇淋灌注工艺,属于冰淇淋内部混合大颗粒的技术领域。
背景技术
目前,冰淇淋内部混颗粒是一个工艺难题,市面上也没有类似产品在售。原因就在于,一,不能保证颗粒混合均匀、连续;二,无法解决含有颗粒的冰淇淋在灌注时候堵塞下料嘴的难题。
发明内容
本发明要解决的技术问题是提供一种包含大颗粒混料的冰淇淋灌注工艺,该工艺不仅保证了冰淇淋的质地、口感达到最佳状态,而且能实现大颗粒物料与冰淇淋的混合均匀。
为解决以上问题,本发明的具体技术方案如下:一种包含大颗粒混料的冰淇淋灌注工艺,包括以下步骤:
1)冰淇淋料液老化后温度为0~4℃,料液进入冰淇淋凝冻机,在制冷系统和刮刀与搅刮器的强制搅刮作用下,空气混入冰淇淋内,膨化后形成半固体的膏状,冰淇淋的出料温度达到-4℃~-6℃;
2)冰淇淋从凝冻机出口通过管道与颗粒添加机的冰淇淋入口相连,颗粒添加机采用叶轮均匀入料,根据物料与冰淇淋的混合比例,设定颗粒添加机供料泵的速度与凝冻机的出料速度比值,混合腔出口采用螺旋叶片导出混合物料;
3)控制混合腔出口管道压力在0.2~0.3Mpa,管道末尾通过大通径分配器进行物料分配,并通过灌注枪棒输出;
4)冰淇淋灌注完成后迅速快速冻结,快速冻结温度-35℃至-40℃,冻结时间控制在30~45分钟。
所述的步骤3)中的灌注方式为间歇式灌注,生产速度每分钟20个节拍,完成一次灌注耗时3秒,灌注时间0.5-1.5秒,停顿时间1.5-2.5秒,灌注时管道压力0.2~0.3Mpa。
一种加工包含大颗粒混料的冰淇淋的颗粒添加机,包括颗粒料斗、冰淇淋入口和混合腔,颗粒料斗位于上方,并通过螺旋加料轴均匀入料,冰淇淋入料后通过供料泵与颗粒料均匀混合进入混合腔,混合腔出口设有竖直的输出管道,输出管道内设有螺旋叶片,颗粒混合料均匀输出给输送管路;在输送管路的输出端连接大通径分配器,大通径分配器将物料分成若干份,每份通过注枪棒最终输出。
所述的注枪棒由外壳和阀芯组成,在外壳的底部设有物料出口,物料出口端口为缩径结构,缩径的最小直径小于阀芯底端部直径,阀芯底部的位移终点为缩径口处,物料入口设置在阀芯位移起点与缩径结构之间。
该包含大颗粒混料的冰淇淋灌注工艺不仅实现了大颗粒与冰淇淋的均匀混合,而且物料运行顺畅,成品后口感细腻。
颗粒添加机采用螺旋加料方式,颗粒出料均匀,数量准确,能将花生碎、糯米球等大颗粒均匀送入供料泵内,颗粒在供料泵内经过叶片的搅动,与冰淇淋料进行初步混合,然后输出至混合腔内,在螺旋叶片的搅动下,冰淇淋与颗粒二次混合,形成大颗粒均匀包裹冰淇淋的状态,使产品获得更好口感。

具体实施方式
一种包含大颗粒混料的冰淇淋灌注工艺,包括以下步骤:
1)冰淇淋料液老化后温度为2~5℃,料液进入冰淇淋凝冻机,在制冷系统和刮刀与搅刮器的强制搅刮作用下,空气混入冰淇淋内,膨化后形成半固体的膏状,冰淇淋的出料温度达到-4℃~-6℃;
2)如图1所示,冰淇淋从凝冻机出口通过管道与颗粒添加机的冰淇淋入口相连,颗粒添加机采用叶轮均匀入料,根据物料与冰淇淋的混合比例,设定颗粒添加机供料泵的速度与凝冻机的出料速度比值,混合腔出口采用螺旋叶片导出混合物料;
3)控制混合腔出口管道压力在0.2~0.3Mpa,管道末尾通过大通径分配器进行物料分配,并通过灌注枪棒输出;
4)冰淇淋灌注完成后迅速快速冻结,快速冻结的工艺可以有效抑制冰晶的生长,使冰淇淋的组织细腻,无明显的冰晶。快速冻结温度-35℃至-40℃,冻结时间控制在30~45分钟。
冰淇淋灌注采取间歇式灌注,灌注和停顿时管道压力会发生明显变化,灌注时泄压,停顿时憋压。停顿时间和灌注时间达到动态平衡时,管道压力才能维持在稳定的区间,对于灌注的稳定性和精准度有重大作用。所述的步骤3)中的灌注方式为间歇式灌注,生产速度每分钟20个节拍,完成一次灌注耗时3秒,灌注时间0.5-1.5秒,停顿时间1.5-2.5秒,灌注时管道压力0.2~0.3Mpa,能取得良好的效果防止物料倒灌。
如图1和图2所示,一种加工包含大颗粒混料的冰淇淋的颗粒添加机,包括颗粒料斗1、冰淇淋入口2和混合腔3,颗粒料斗位于上方,并通过螺旋加料轴4均匀入料,冰淇淋入料后通过供料泵5与颗粒料均匀混合进入混合腔,混合腔出口设有竖直的输出管道6,输出管道6内设有螺旋叶片7,颗粒混合料均匀输出给输送管路;在输送管路的输出端连接大通径分配器,大通径分配器将物料分成若干份,每份通过灌注枪棒最终输出。
如图3所示,所述的注枪棒10由外壳11和阀芯12组成,外壳11的腔体内径为32mm,更大的腔体可以容纳更多的冰淇淋,较大的颗粒也可以通过。在外壳的底部设有物料出口13,物料出口13端口为缩径结构,缩径的最小直径小于阀芯12底端部直径,阀芯12底部的位移终点为缩径口处,物料入口14设置在阀芯12位移起点与缩径结构之间。阀芯抬起时,高于进料口,不会影响腔体的有效容积,更大的流道可以通过更多的冰淇淋和更大的颗粒。并且,当阀芯落下时,在关闭灌注的同时,会将堵在出料口端的颗粒顶出去,就从根本上避免了颗粒堵住灌注嘴的情况发生。
Claims (4)
1.一种包含大颗粒混料的冰淇淋灌注工艺,其特征在于包括以下步骤:
1)冰淇淋料液老化后温度为0~4℃,料液进入冰淇淋凝冻机,在制冷系统和刮刀与搅刮器的强制搅刮作用下,空气混入冰淇淋内,膨化后形成半固体的膏状,冰淇淋的出料温度达到-4℃~-6℃;
2)冰淇淋从凝冻机出口通过管道与颗粒添加机的冰淇淋入口相连,颗粒添加机采用叶轮均匀入料,根据物料与冰淇淋的混合比例,设定颗粒添加机供料泵的速度与凝冻机的出料速度比值,混合腔出口采用螺旋叶片导出混合物料;
3)控制混合腔出口管道压力在0.2~0.3Mpa,管道末尾通过大通径分配器进行物料分配,并通过灌注枪棒输出;
4)冰淇淋灌注完成后迅速快速冻结,快速冻结温度-35℃至-40℃,冻结时间控制在30~45分钟。
2.如权利要求1所述的包含大颗粒混料的冰淇淋灌注工艺,其特征在于:所述的步骤3)中的灌注方式为间歇式灌注,生产速度每分钟20个节拍,完成一次灌注耗时3秒,灌注时间0.5-1.5秒,停顿时间1.5-2.5秒,灌注时管道压力0.2~0.3Mpa。
3.一种加工包含大颗粒混料的冰淇淋的颗粒添加机,包括颗粒料斗(1)、冰淇淋入口(2)和混合腔(3),其特征在于:颗粒料斗(1)位于上方,并通过螺旋加料轴(4)均匀入料,冰淇淋入料后通过供料泵(5)与颗粒料均匀混合进入混合腔,混合腔出口设有竖直的输出管道(6),输出管道(6)内设有螺旋叶片,颗粒混合料均匀输出给输送管路;在输送管路的输出端连接大通径分配器,大通径分配器(20)将物料分成若干份,每份通过注枪棒(10)最终输出。
4.如权利要求3所述的颗粒添加机,其特征在于:所述的注枪棒(10)由外壳(11)和阀芯(12)组成,在外壳(11)的底部设有物料出口(13),物料出口(13)端口为缩径结构,缩径的最小直径小于阀芯(12)底端部直径,阀芯(12)底部的位移终点为缩径口处,物料入口(14)设置在阀芯(12)位移起点与缩径结构之间。
