技术领域
本发明涉及食品加工技术领域,具体涉及一种鹿茸滋补酵素及其制备方法。
背景技术
现在人们的生活节奏加快,快节奏的生活使得人们的大脑高度紧张,精神过于压抑,心理压力加大,心理和身体多度疲劳,人体无法调整到正常的功能状态。很多人会发生阴阳失衡、气血功能发生紊乱,气的功能发生障碍,血不能正常发挥作用,气滞血瘀,使肝气郁结,肝胆预热,脾肾虚弱,气血两虚。尤其是中年男性会出现肾阳虚衰、阳痿滑精、虚劳嬴瘦、神倦畏寒。
针对上述症状,一般人们会选择气血双补的中药进行调理,用中药调理的时候感觉精神慢慢变好,但停药后因为快节奏的工作依然会回到之前的症状。目前,还没有一种较好的药物能更好的调理上述病症的反复出现。
鉴于此,申请此专利。
发明内容
为了解决现有技术存在的问题,本发明提供了一种鹿茸滋补酵素及其制备方法,得到的鹿茸滋补酵素具有兴奋神经、降血压、增强性能力、补血、缓解衰老、增强抗病能力、促进伤口愈合、强身健体的等效。
本发明的目的是提供一种鹿茸滋补酵素。
本发明的另一目的是提供上述鹿茸滋补酵素的制备方法。
根据本发明的具体实施方式的鹿茸滋补酵素,所述鹿茸滋补酵素由以下原料制备,所述原料按重量份包括:鹿茸酵素提取物55-65份,复合乳酸菌粉0.05-0.15份,酵母菌粉0.4-0.6份,赤藓糖醇34-35份和阿拉伯糖4-6份。
根据本发明的具体实施方式的鹿茸滋补酵素,其中,所述鹿茸滋补酵素由以下原料制备,所述原料按重量份包括:鹿茸酵素提取物60份,复合乳酸菌粉0.1份,酵母菌粉0.5份,赤藓糖醇34.4份和阿拉伯糖5份。
根据本发明的具体实施方式的鹿茸滋补酵素,其中,所述鹿茸酵素提取物由以下原料制备,所述原料包括:鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣、红糖、水和益生菌。
根据本发明的具体实施方式的鹿茸滋补酵素,其中,所述鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣、红糖、水和益生菌的添加量之比为10:5:5:5:5:5:5:4:30:1。
根据本发明的具体实施方式的鹿茸滋补酵素,其中,所述益生菌包括青春双歧杆菌、保加利亚乳杆菌、两歧双歧杆菌、嗜酸乳杆菌、枯草芽孢杆菌、地衣芽孢杆菌、酵母菌和乳酸球菌。
根据本发明的具体实施方式的鹿茸滋补酵素,其中,所述益生菌按重量百分比包括青春双歧杆菌5-15%、保加利亚乳杆菌5-15%、两歧双歧杆菌10-20%、嗜酸乳杆菌10-20%、枯草芽孢杆菌5-15%、地衣芽孢杆菌5-15%、酵母菌5-15%、乳酸球菌15-25%。
根据本发明的具体实施方式的鹿茸滋补酵素,其中,所述益生菌按重量百分比包括青春双歧杆菌10%、保加利亚乳杆菌10%、两歧双歧杆菌15%、嗜酸乳杆菌15%、枯草芽孢杆菌10%、地衣芽孢杆菌10%、酵母菌10%、乳酸球菌20%。
根据本发明的具体实施方式的鹿茸滋补酵素的制备方法,所述方法包括以下步骤:
(1)磨果蔬浆:将鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣分别洗净除杂,分别加入水混合均匀,浸泡1-1.5小时,研磨制成浆料,灭菌备用;
(2)发酵:将步骤(1)得到所述浆料冷却至35~40℃后,加入红糖和益生菌,在35~40℃下密闭发酵48-72h,形成发酵液;
(3)浓缩提取:将步骤(2)得到的所述发酵液进行浓缩,得到浓缩液;
(4)冷冻干燥:将步骤(3)得到的所述浓缩液冷冻干燥后粉碎得到鹿茸酵素提取物;
(5)将步骤(4)得到的所述鹿茸酵素提取物和复合乳酸菌粉、酵母菌粉、赤藓糖醇、阿拉伯糖混合均匀,即得所述鹿茸滋补酵素。
根据本发明的具体实施方式的鹿茸滋补酵素的制备方法,其中,步骤(1)中,所述研磨的过程具体为:依次经60目、80目、100目和120目四次精细研磨。
根据本发明的具体实施方式的鹿茸滋补酵素的制备方法,其中,步骤(1)中,所述灭菌均为采用蒸汽灭菌法进行灭菌,所述灭菌的温度为110-120℃,所述灭菌的时间为5-20min。
步骤(5)后,还可以进行下列步骤:
(6)分装:将调配好的物料分装成小包;
(7)检验入库:将检验合格的产品入库储存。
下面对本发明中所用的原料及其功效进行进一步解释说明。
鹿茸,雄鹿的嫩角没有长成硬骨时,带茸毛,含血液,是一种贵重的中药,用作滋补强壮剂,对虚弱、神经衰弱等有疗效;鹿茸性温而不燥,具有振奋和提高机体功能,对全身虚弱、久病之后患者,有较好的强身作用。鹿茸中含有磷脂、糖脂、胶脂、激素、脂肪酸、氨基酸、蛋白质及钙、磷、镁、钠等成分,其中氨基酸成分占总成分的一半以上。主治肾虚、头晕、耳聋、目暗、阳痿、滑精、宫冷不孕、羸瘦、神疲、畏寒、腰脊冷痛、筋骨痿软、崩漏带下、阴疽不敛及久病虚损等症。
玛卡,主要出产于南美洲安第斯山脉和中国云南丽江,叶子椭圆,根茎形似小圆萝卜,可食用,是一种纯天然食品,营养成份丰富;蛋白质含量为10%以上(胡宁湖畔的玛卡品种的蛋白质含量超过14%),59%的碳水化合物;8.5%的纤维,内含丰富的锌、钙、铁、钛、铷、钾、钠、铜、锰、镁、锶、磷、碘等矿物质,并含有维生素C、B1、B2、B6、A、E、B12、B5,脂肪含量不高但其中多为不饱和脂肪酸,亚油酸和亚麻酸的含量达53%以上,天然活性成份包括生物碱、芥子油苷及其分解产物异硫氰酸苄酯、甾醇、多酚类物质等;玛卡富含高单位营养素,对人体有滋补强身的功用,食用过的人会有体力充沛、精神旺盛不会疲劳的感觉。
枸杞,宁夏枸杞的干燥成熟果实和叶子;味甘,性平;养肝,滋肾,润肺;枸杞叶,补虚益精,清热明目。本发明所述的枸杞包括宁夏枸杞的干燥成熟果实和枸杞叶子,清热作用更加明显,使得鹿茸滋补酵素更加温和。
党参,桔梗科党参属,多年生草本植物,有乳汁。具有补中益气,健脾益肺之功效。党参有增强免疫力、扩张血管、降压、改善微循环、增强造血功能等作用。此外对化疗放疗引起的白细胞下降有提升作用。
黄芪,又名绵芪;多年生草本,高50-100厘米。主根肥厚,木质,常分枝,灰白色。其有增强机体免疫功能、保肝、利尿、抗衰老、抗应激、降压和较广泛的抗菌作用。
桂圆,又称龙眼,是亚热带果树,喜高温多湿;温度是影响其生长、结实的主要因素。富含维生素和磷质,有益脾、健脑的作用,含丰富的葡萄糖、蔗糖和蛋白质等,含铁量也比较高,可在提高热能、补充营养的同时促进血红蛋白再生,从而达到补血的效果。研究发现,龙眼肉除了对全身有补益作用外,对脑细胞特别有效,能增强记忆,消除疲劳。
保加利亚乳杆菌:能发酵糖而获得能量,产生大量乳酸。
两歧双歧杆菌:抵抗有害菌;产物主要包括乳酸、乙酸等,可改善鹿茸滋补酵素的pH值,促进铁和维生素D的吸收并提高磷、铁、钙的利用率。
嗜酸乳杆菌:属于乳杆菌属,革兰氏阳性杆菌,杆的末端呈圆形,主要存在小肠中,释放乳酸,乙酸和一些对有害菌起作用的抗菌素。
枯草芽孢杆菌菌体生长过程中产生的枯草菌素、多粘菌素、制霉菌素、短杆菌肽等活性物质,这些活性物质对致病菌或内源性感染的条件致病菌有明显的抑制作用。
地衣芽孢杆菌该细菌可调整菌群失调达到治疗目的,可促使机体产生抗菌活性物质、杀灭致病菌,能产生抗活性物质,并具有独特的生物夺氧作用机制,能抑制致病菌的生长繁殖。
与现有技术相比,本发明具有如下有益效果:
(1)本发明的鹿茸滋补酵素制作过程中使用冷冻干燥技术,更好的保留原料中的营养物质;
(2)鹿茸滋补酵素中鹿茸具有兴奋神经、降血压、增强性能力、补血、缓解衰老、增强抗病能力、促进伤口愈合、强身健体的等效,适用于肾阳虚衰、阳痿滑精、宫冷不孕、虚劳嬴瘦、神倦畏寒等症,同时加进玛卡、枸杞、党参、黄芪、桂圆、红枣等使得鹿茸滋补酵素更加温和;
(3)鹿茸滋补酵素中的鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣经过益生菌发酵,富集、提取其中的有效成分,使产品滋补效果更明显。

本实施例提供了一种鹿茸滋补酵素,所述鹿茸滋补酵素由以下原料制备,所述原料按重量份包括:

鹿茸滋补酵素的制备方法,包括以下步骤:
(1)磨果蔬浆:将鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣分别洗净除杂,分别加入水混合均匀,浸泡1小时,依次经60目、80目、100目和120目四次精细研磨制成浆料,采用蒸汽灭菌法进行灭菌备用,所述灭菌的温度为115℃,所述灭菌的时间为10min;
(2)发酵:将步骤(1)得到所述浆料冷却至38℃后,加入红糖和益生菌,在38℃下密闭发酵36h,形成发酵液;
(3)浓缩提取:将步骤(2)得到的所述发酵液进行浓缩,得到浓缩液;
(4)冷冻干燥:将步骤(3)得到的所述浓缩液冷冻干燥后粉碎得到鹿茸酵素提取物;
(5)将步骤(4)得到的所述鹿茸酵素提取物和复合乳酸菌粉、酵母菌粉、赤藓糖醇、阿拉伯糖混合均匀,即得所述鹿茸滋补酵素。
实施例2
本实施例提供了一种鹿茸滋补酵素,所述鹿茸滋补酵素由以下原料制备,所述原料按重量份包括:
鹿茸酵素提取物65份,复合乳酸菌粉0.05份,酵母菌粉0.6份,赤藓糖醇35份和阿拉伯糖4份。
所述鹿茸酵素提取物由以下原料制备,所述原料包括:鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣、红糖、水和益生菌;所述鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣、红糖、水和益生菌的添加量之比为10:5:5:5:5:5:5:4:30:1;
所述益生菌按重量百分比包括青春双歧杆菌5%、保加利亚乳杆菌15%、两歧双歧杆菌10%、嗜酸乳杆菌20%、枯草芽孢杆菌15%、地衣芽孢杆菌5%、酵母菌15%、乳酸球菌15%。
鹿茸滋补酵素的制备方法,包括以下步骤:
(1)磨果蔬浆:将鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣分别洗净除杂,分别加入水混合均匀,浸泡1.2小时,依次经60目、80目、100目和120目四次精细研磨制成浆料,采用蒸汽灭菌法进行灭菌备用,所述灭菌的温度为120℃,所述灭菌的时间为5min;
(2)发酵:将步骤(1)得到所述浆料冷却至40℃后,加入红糖和益生菌,在40℃下密闭发酵48h,形成发酵液;
(3)浓缩提取:将步骤(2)得到的所述发酵液进行浓缩,得到浓缩液;
(4)冷冻干燥:将步骤(3)得到的所述浓缩液冷冻干燥后粉碎得到鹿茸酵素提取物;
(5)将步骤(4)得到的所述鹿茸酵素提取物和复合乳酸菌粉、酵母菌粉、赤藓糖醇、阿拉伯糖混合均匀,即得所述鹿茸滋补酵素;
(6)分装:将调配好的物料分装成小包;
(7)检验入库:将检验合格的产品入库储存。
实施例3
本实施例提供了一种鹿茸滋补酵素,所述鹿茸滋补酵素由以下原料制备,所述原料按重量份包括:
鹿茸酵素提取物60份,复合乳酸菌粉0.1份,酵母菌粉0.5份,赤藓糖醇34.4份和阿拉伯糖5份;
所述鹿茸酵素提取物由以下原料制备,所述原料包括:鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣、红糖、水和益生菌;所述鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣、红糖、水和益生菌的添加量之比为10:5:5:5:5:5:5:4:30:1;所述益生菌按重量百分比包括青春双歧杆菌10%、保加利亚乳杆菌10%、两歧双歧杆菌15%、嗜酸乳杆菌15%、枯草芽孢杆菌10%、地衣芽孢杆菌10%、酵母菌10%、乳酸球菌20%。
鹿茸滋补酵素的制备方法,包括以下步骤:
(1)磨果蔬浆:将鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣分别洗净除杂,分别加入水混合均匀,浸泡1.5小时,依次经60目、80目、100目和120目四次精细研磨制成浆料,采用蒸汽灭菌法进行灭菌备用,所述灭菌的温度为110℃,所述灭菌的时间为20min;
(2)发酵:将步骤(1)得到所述浆料冷却至35℃后,加入红糖和所有的益生菌,在35℃下密闭发酵72h,形成发酵液;
(3)浓缩提取:将步骤(2)得到的所述发酵液进行浓缩,得到浓缩液;
(4)冷冻干燥:将步骤(3)得到的所述浓缩液冷冻干燥后粉碎得到鹿茸酵素提取物;
(5)将步骤(4)得到的所述鹿茸酵素提取物和复合乳酸菌粉、酵母菌粉、赤藓糖醇、阿拉伯糖混合均匀,即得所述鹿茸滋补酵素;
(6)分装:将调配好的物料分装成小包;
(7)检验入库:将检验合格的产品入库储存。
对比例1
本对比例与实施例3的唯一区别是原料中没有玛卡,制备过程中也不加入玛卡。
对比例2
本对比例与实施例3的唯一区别是原料中没有黄芪,制备过程中也不加入黄芪。
对比例3
本对比例与实施例3的唯一区别是益生菌中不包括青春双歧杆菌,制备过程中也不加入青春双歧杆菌。
检测实施例1-3及对比例1-3得到的所述鹿茸滋补酵素中的蛋白和脂溶性成分含量,检测结果如表1。

从表1可以看出实施例1-3及得到的所述鹿茸滋补酵素中的蛋白和脂溶性成分含量明显高于对比例1-3得到的鹿茸滋补酵素。
上述试验例说明:(1)本发明的鹿茸滋补酵素制作过程中使用冷冻干燥技术,更好的保留原料中的营养物质;
(2)鹿茸滋补酵素中鹿茸具有兴奋神经、降血压、增强性能力、补血、缓解衰老、增强抗病能力、促进伤口愈合、强身健体的等效,适用于肾阳虚衰、阳痿滑精、宫冷不孕、虚劳嬴瘦、神倦畏寒等症,同时加进玛卡、枸杞、党参、黄芪、桂圆、红枣等使得鹿茸滋补酵素更加温和;
(3)鹿茸滋补酵素中的鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣经过益生菌发酵,富集、提取其中的有效成分,使产品滋补效果更明显。

Claims (10)
1.一种鹿茸滋补酵素,其特征在于,所述鹿茸滋补酵素由以下原料制备,所述原料按重量份包括:鹿茸酵素提取物55-65份,复合乳酸菌粉0.05-0.15份,酵母菌粉0.4-0.6份,赤藓糖醇34-35份和阿拉伯糖4-6份。
2.根据权利要求1所述的鹿茸滋补酵素,其特征在于,所述鹿茸滋补酵素由以下原料制备,所述原料按重量份包括:鹿茸酵素提取物60份,复合乳酸菌粉0.1份,酵母菌粉0.5份,赤藓糖醇34.4份和阿拉伯糖5份。
3.根据权利要求1或2所述的鹿茸滋补酵素,其特征在于,所述鹿茸酵素提取物由以下原料制备,所述原料包括:鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣、红糖、水和益生菌。
4.根据权利要求3所述的鹿茸滋补酵素,其特征在于,所述鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣、红糖、水和益生菌的添加量之比为10:5:5:5:5:5:5:4:30:1。
5.根据权利要求4所述的鹿茸滋补酵素,其特征在于,所述益生菌包括青春双歧杆菌、保加利亚乳杆菌、两歧双歧杆菌、嗜酸乳杆菌、枯草芽孢杆菌、地衣芽孢杆菌、酵母菌和乳酸球菌。
6.根据权利要求5所述的鹿茸滋补酵素,其特征在于,所述益生菌按重量百分比包括青春双歧杆菌5-15%、保加利亚乳杆菌5-15%、两歧双歧杆菌10-20%、嗜酸乳杆菌10-20%、枯草芽孢杆菌5-15%、地衣芽孢杆菌5-15%、酵母菌5-15%、乳酸球菌15-25%。
7.根据权利要求6所述的鹿茸滋补酵素,其特征在于,所述益生菌按重量百分比包括青春双歧杆菌10%、保加利亚乳杆菌10%、两歧双歧杆菌15%、嗜酸乳杆菌15%、枯草芽孢杆菌10%、地衣芽孢杆菌10%、酵母菌10%、乳酸球菌20%。
8.制备权利要求1至7任一所述的鹿茸滋补酵素的方法,其特征在于,所述方法包括以下步骤:
(1)磨果蔬浆:将鹿茸、玛卡、枸杞、党参、黄芪、桂圆、红枣分别洗净除杂,分别加入水混合均匀,浸泡1-1.5小时,研磨制成浆料,灭菌备用;
(2)发酵:将步骤(1)得到所述浆料冷却至35~40℃后,加入红糖和益生菌,在35~40℃下密闭发酵48-72h,形成发酵液;
(3)浓缩提取:将步骤(2)得到的所述发酵液进行浓缩,得到浓缩液;
(4)冷冻干燥:将步骤(3)得到的所述浓缩液冷冻干燥后粉碎得到鹿茸酵素提取物;
(5)将步骤(4)得到的所述鹿茸酵素提取物和复合乳酸菌粉、酵母菌粉、赤藓糖醇、阿拉伯糖混合均匀,即得所述鹿茸滋补酵素。
9.根据权利要求8所述的鹿茸滋补酵素的制备方法,其特征在于,步骤(1)中,所述研磨的过程具体为:依次经60目、80目、100目和120目四次精细研磨。
10.根据权利要求8所述的鹿茸滋补酵素的制备方法,其特征在于,步骤(1)中,所述灭菌均为采用蒸汽灭菌法进行灭菌,所述灭菌的温度为110-120℃,所述灭菌的时间为5-20min。
