Abstract
本发明公开了一种模块化不含常见致敏原的全营养饮料配方,包括如下百分比的配方原料:植物蛋白粉:30‑50%;油脂粉:20‑40%;膳食纤维:5‑20%;蔬菜、蘑菇及酵母粉:5‑15%;特定营养素组合物:1‑15%;混合维生素:0‑2%;混合矿物质:0‑15%;食用香精、食用色素、甜味剂:0‑2%;可选其他特定营养素部分(根据实际情况添加,不在前述百分比范围内)。本发明能满足《中国居民膳食营养素参考摄入量2013版》中4岁及以上人群中大部分营养元素的摄入需求,可配合添一种或多种植物营养素、生物活性成分,有利于改善身体机能,提高抵抗力,预防疾病,延缓衰老等;不额外添加致敏原,不额外添加钠元素,额外添加含碘成分,适用于多种不同饮食习惯人群。

技术领域
本发明涉及食品、营养制备技术领域,具体为一种模块化不含常见致敏原的全营养饮料配方。
背景技术
适宜的营养摄入是保证健康的首要因素之一。根据现代营养学,衡量营养摄入是否达标的标准是各国制定的膳食营养素参考摄入量DRIs。但是以现有生活习惯、科技发展及相关膳食调查结果(《中国居民营养与健康状况监测(2010-2013年综合报告)》)来看,人们通过常规饮食无法保证每日摄入的营养素数量和剂量完全满足膳食营养素参考摄入量DRIs的要求。营养师和营养科大夫也只能有针对性的解决几种营养元素的摄入问题,并不能完整解决每个人每日所有营养摄入问题,以现有手段唯一能保证满足《中国居民膳食营养素参考摄入量(2013版)》中营养摄入量要求的方法就是通过某种固定配方的全营养类产品将人体每日所需营养完全补充完整。
根据《中国居民膳食营养素参考摄入量(2013版)》,人体每日需要的营养元素包括必需营养素和特定建议值两部分:

宏量营养素:蛋白质、脂肪(包括必需脂肪酸:亚油酸、α-亚麻酸,DHA+EPA)、碳水化合物;
维生素:维生素A、维生素D、维生素E、维生素K、维生素B1、维生素B2、维生素B6、维生素B12、泛酸、叶酸、烟酸、胆碱、生物素、维生素C;
矿物质:钙、磷、钾、钠、镁、氯、铁、碘、锌、硒、铜、氟、铬、锰、钼;
特定建议值包括:膳食纤维、植物甾醇(植物甾醇酯)、番茄红素、叶黄素、原花青素、大豆异黄酮、花色苷、氨基葡萄糖(硫酸或盐酸氨基葡萄糖);
共计45种营养物质。每种营养元素既有其独特的生理作用,又在人体相互影响,共同作用于人体的所有生理活动。任何一种必需营养素缺少或超标都可能对人体造成不利的影响,而特定建议值中的营养素对于人体健康也有积极意义。
当前市场上有三类产品可以用于日常营养元素的补充,分别是特医食品,保健食品和食品,但是还没有单一产品可以满足《中国居民膳食营养素参考摄入量(2013版)》中营养摄入要求,原因如下:
1.根据《特殊医学用途配方食品注册申请材料项目与要求(试行)(2017修订版)》,其中明文规定“配方中食品原料、食品辅料、营养强化剂、食品添加剂的种类应符合相应食品安全国家标准和(或)有关规定,不得添加标准中规定的营养素和可选择性成分以外的其他生物活性物质。”,所以单一特医食品无法满足《中国居民膳食营养素参考摄入量(2013版)》中特定建议值的营养要求。
2.根据《关于再次公开征求保健食品原料目录(第一批)(征求意见稿)意见的函食药监食监三便函〔2016〕130号》中附件2《保健食品中营养素补充剂原料目录使用要求》中明文规定“适宜人群包括幼儿的营养素补充剂产品,仅可选用《备案营养素补充剂原料目录》中适用范围为所有人群的化合物为原料。”所以单一保健食品也无法满足《中国居民膳食营养素参考摄入量(2013版)》中蛋白质,脂肪酸,部分维生素、部分矿物质,特定建议值的营养要求。
3.当前法律法规环境下,唯一可能满足《中国居民膳食营养素参考摄入量(2013版)》中要求的产品只有食品一种形式。但是食品也必须符合相应法律法规,以营养强化剂为例,食品类添加营养强化剂需要遵循《GB 14880-2012食品安全国家标准食品营养强化剂使用标准》,其中能添加营养强化剂种类最多的产品类型是固体饮料和含乳饮料,由于乳制品属于《GB/T23779-2009预包装食品中的致敏原成分》中列明的常见致敏原,并不适合作为常规产品进行大面积推广。所以当前只有固体饮料是能广泛推广使用并可以添加营养强化剂种类最多的产品形式。
根据《中国居民膳食营养素参考摄入量(2013版)》中规定,钾、铜、锰、硒、钼、铬、胆碱、生物素、维生素K、亚油酸、α-亚麻酸、DHA和(或)EPA这几种营养物质是人体必需的营养元素,但是《GB 14880-2012食品安全国家标准食品营养强化剂使用标准》中没有明文规定可以用于固体饮料,所以并不能直接添加。而日常饮食中,也很少有食物富含这些营养元素,所以当前市场上还没有食品类产品在正常食用剂量下能同时满足以上这些营养元素的摄入要求。
《中国居民膳食营养素参考摄入量(2013版)》中还规定了一些可能对身体健康有益的成分,如膳食纤维、植物甾醇(植物甾醇酯)、番茄红素、叶黄素、原花青素、大豆异黄酮、花色苷、氨基葡萄糖等等,当前市场上多为单一补充成分,还没有多种成分组合一起的产品。
除此之外,还有一些新资源食品成分、《中国居民膳食营养素参考摄入量(2013版)》中未规定但是《GB 14880-2012食品安全国家标准食品营养强化剂使用标准》中可以用于固体饮料的成分、《GB 2760-2014食品安全国家标准食品添加剂使用标准》中允许固体饮料添加的某些食品添加剂等,这些成分虽然不是人体必需营养元素,但具有改善人体生理功能、预防慢性疾病的生物学作用,如牛磺酸、左旋肉碱、裸藻、雨生红球藻、赖氨酸、益生菌等等。
当前市场上多为单一补充成分,还没有多种成分组合一起的产品。
同类产品通常还有如下不足:
1.无论是特医食品、保健食品还是食品,市场上强调营养补充的产品中多含有《GB/T23779-2009预包装食品中的致敏原成分》中明确指明的致敏原成分,包括:
(1)含麸质的谷类及其制品(如小麦、黑麦、大麦、燕麦及其杂交品系)
(2)甲壳类及其制品(如蟹、龙虾或虾)
(3)鱼类及其制品(如鲈、鲽或鳕)
(4)蛋类及其制品
(5)花生及其制品
(6)大豆及其制品
(7)乳及其制品(包括乳糖)
(8)坚果及其制品(如杏仁、榛子、胡桃、腰果、美洲山核桃、巴西坚果、阿月浑子果、澳洲坚果)。除以上常见致敏原外,多数产品中还含有其他致敏原或食物不耐受成分,包括南瓜、车前子壳、魔芋、菊苣、菊粉、木瓜、聚果糖等成分,这些食物中虽然含有某些营养素,却因为可能导致人群致敏和食物不耐受,不适于大面积推广使用。
2.以全营养为卖点的产品多以代餐形式出现,即通过产品替代日常饮食获取营养,在获得营养的同时也会获得至少1500-2000Kcal热量,如果想减少热量摄入,只有减量使用,势必造成营养缺乏。替代日常饮食的方法大多数人无法长期坚持,而现代人的生活水平与以往不同,多为营养素缺乏而热量超标,所以并不适合长期使用。
3.当前出现了许多与传统营养学有区别,但声称对身体健康有益的新饮食习惯,包括素食、低碳水饮食,低血糖指数饮食,低脂饮食等。现有同类产品一般只满足传统营养学的需要,无法同时满足这些新饮食习惯的营养摄入需求。
发明内容
本发明的目的在于提供一种模块化不含常见致敏原的全营养饮料配方,本配方粉能满足《中国居民膳食营养素参考摄入量2013版》中4岁及以上人群中大部分营养元素的摄入需求,配合可选其他特定营养素部分中成分可配合添一种或多种植物营养素、生物活性成分,有利于改善身体机能,提高抵抗力,预防疾病,延缓衰老等,不额外添加致敏原,适合大部分人使用补充营养,额外添加含碘成分,按规定剂量服用即可满足日常碘元素需求,不额外添加钠元素,适用于低盐、无盐饮食人群,正常人群按需直接选择无碘盐即可,可有效控制碘摄入量。适用于包括低碳水饮食,低血糖指数饮食,低脂饮食等多种营养习惯的营养补充,以解决上述背景技术中提出的问题。
为实现上述目的,本发明提供如下技术方案:一种模块化不含常见致敏原的全营养饮料配方,包括如下百分比的配方原料:
植物蛋白粉:30-50%;油脂粉:20-40%;膳食纤维:5-20%;蔬菜、蘑菇及酵母粉:5-15%;特定营养素组合物:1-15%;混合维生素:0-2%;混合矿物质:0-15%;食用香精、食用色素、甜味剂:0-2%;可选其他特定营养素部分(根据实际情况添加,不在前述百分比范围内)。
进一步地,所述植物蛋白粉包括大米蛋白粉(普通大米蛋白粉,糙米蛋白粉,发芽糙米蛋白粉中的一种或几种)、豌豆蛋白粉、氨基酸(盐)中的一种或几种组合。
进一步地,所述油脂(粉)包括红花籽油(粉)、亚麻籽油(粉)、藻油(粉)、磷脂(粉)、葵花籽油(粉)中的一种或几种的组合。
进一步地,所述膳食纤维包括非淀粉多糖类膳食纤维、抗性低聚糖类膳食纤维、抗性淀粉类膳食纤维、其他类膳食纤维中的一种或几种的组合。
进一步地,所述蔬菜、蘑菇及酵母粉包括西兰花粉、蘑菇粉、茶叶粉、酵母粉、海带粉、辣木叶粉、蛹虫草粉中的一种或几种的组合。
进一步地,所述特定建议值组合物包括叶黄素(酯)、姜黄(素)、番茄红素、葡萄皮红、葡萄籽提取物、植物甾醇(酯)、蓝莓粉(提取物)、桑葚粉(提取物),血橙粉(提取物)、越橘粉(提取物)中的一种或几种组合。
进一步地,所述混合维生素包括维生素A,β-胡萝卜素,维生素D(D2和(或)D3),维生素E,维生素B1,维生素B2,烟酸(烟酰胺),泛酸,维生素B6,维生素B12,维生素C,叶酸中的一种或几种组合。
进一步地,所述混合矿物质包括钾、铁,钙,锌,镁一种或几种组合。
进一步地,所述食用香精、食用色素、甜味剂包括食用香精、叶绿素铜钠盐及甜菊糖苷中的一种或几种组合。

与现有技术相比,本发明的有益效果是:
1、本发明营养指标基于《中国居民膳食营养素参考摄入量(2013版)》,按规定剂量服用可以满足《中国居民膳食营养素参考摄入量(2013版)》中4岁以上人群除能量、碳水化合物、脂肪、钠、钙(4-10岁)、氟、氯、大豆异黄酮、氨基葡萄糖(硫酸或盐酸氨基葡萄糖)营养元素外其余营养元素的RNI(AI、PI、SPL)需求【注1】,从根本上解决了营养摄入问题。
2、本发明成分中不额外添加《GB/T23779-2009预包装食品中的致敏原成分》中规定的致敏原,适合大部分人使用补充营养【注2】。
3、本发明在正常摄入剂量下仅4891千焦热量即可满足膳食营养素参考摄入量中成人每日所需绝大部分营养摄入,远低于平均8400千焦的平均热量摄入。
4、本发明额外添加含碘成分,满足日常碘元素需求,不额外添加钠元素,适用于低钠饮食人群控制钠摄入,正常人群按需直接选择无碘盐即可,有效控制碘摄入量。
5、本发明成分中不额外添加动物成分,可以满足素食及宗教人群的饮食习惯。
6、本发明按规定剂量服用,总碳水化合物含量低于对于成人碳水化合物的要求,其中膳食纤维含量高于膳食纤维特定建议值下限。不额外添加精制糖和淀粉,主要成分血糖生成指数低于55,血糖负荷低于10,富含必需脂肪酸,适用于包括低碳水饮食,低血糖指数饮食,低脂饮食等多种营养习惯的营养补充。
7、本发明可配合添一种或多种加多种植物营养素、生物活性成分,有利于改善身体机能,提高抵抗力,预防疾病,延缓衰老等。

上述全营养配方的配置方法在于,称取各组分,将各组分研磨成粉,然后混合,检测后包装即得到所述全营养粉。制作方便快捷,便于少量制作也便于大批量生产,服用也非常方便。
对于本发明的配方,每日摄入剂量:
每份配方粉可平均分为4小份,其中:
4-6岁人群,每日摄入2小份,可满足除能量、碳水化合物、脂肪、钠、钙、氟、氯以外其他必需营养元素的RNI(AI)的营养需求。
7-10岁人群,每日摄入3小份,可满足除能量、碳水化合物、脂肪、钠、钙、氟、氯以外其他必需营养元素的RNI(AI)的营养需求。
11岁及以上人群,每日摄入4小份,可满足除能量、碳水化合物、脂肪、钠、氟、氯以外其他必需营养元素的RNI(AI)的营养需求。
怀孕及哺乳期人群(18岁以上),日摄入4小份,可满足除能量、碳水化合物、脂肪、钠、氟、氯以外其他必需营养元素的RNI(AI)的营养需求。
除此之外,可以满足成人对于特定建议值中除大豆异黄酮、氨基葡萄糖(硫酸或盐酸氨基葡萄糖)外其余营养元素的需要。

综上所述:本发明可满足《中国居民膳食营养素参考摄入量2013版》中4岁及以上人群中大部分营养元素的摄入需求,可配合添一种或多种植物营养素、生物活性成分,有利于改善身体机能,提高抵抗力,预防疾病,延缓衰老等,不额外添加致敏原,适合大部分人使用补充营养,在正常摄入剂量下仅1168.9kcal(4891kJ)热量即可满足每日营养摄入。单独服用本产品可用于普通肥胖人群减重,也可通过额外摄入饮食来满足人体能量需求的热量差,满足营养和口味。成分额外添加含碘成分,按规定剂量服用即可满足日常碘元素需求,不额外添加钠元素,适用于低盐、无盐饮食人群,正常人群按需直接选择无碘盐即可,可有效控制碘摄入量。成分中不额外添加动物成分,可以满足素食及宗教人群的饮食习惯。本发明的配方按规定剂量服用,总碳水化合物含量低于对于成人碳水化合物的要求,其中膳食纤维含量高于膳食纤维特定建议值下限。不额外添加精制糖和淀粉,主要成分血糖生成指数低于55,血糖负荷低于10,富含必需脂肪酸,适用于包括低碳水饮食,低血糖指数饮食,低脂饮食等多种营养习惯的营养补充。使用相同配方,不同年龄使用人群的营养需求可根据不同使用量来满足。
【注1】:本配方中不考虑满足《中国居民膳食营养素参考摄入量(2013版)》中规定的脂肪、碳水化合物、能量、钠、氯、氟、大豆异黄酮、氨基葡萄糖(硫酸或盐酸氨基葡萄糖)摄入要求,原因如下:
(1)碳水化合物、能量主要作用是满足人体能量需求,现代人一般处于能量过剩状态,所以本配方不考虑满足碳水化合物、能量需求。脂肪、碳水化合物、能量的功能性作用本配方已经充分考虑,配方中含量可以满足日常需要。如果人群需要额外能量,可以配合添加日常饮食,且正常饮食条件下,营养摄入量在《中国居民膳食营养素参考摄入量(2013版)》范围内,不会造成营养过量。
(2)现代人日常饮食中钠含量容易超标,所以本配方不额外添加钠元素,如果人群需要足量钠元素,根据需要量直接选择适量无碘盐即可。
(3)人体在获得足量钠元素(以氯化钠计)后同时也会获得足量氯元素,且日常饮水中也含有微量氯元素,所以本配方不额外添加氯元素。
(4)中国本土大部分地区为高氟地区,且日常多使用含氟牙膏,所以本配方不考虑满足氟元素营养摄入需求。
(5)大豆异黄酮多为大豆制品,可能造成致敏原污染,且大豆异黄酮仅对绝经后妇女使用,所以本配方不考虑满足大豆异黄酮摄入量要求。
(6)氨基葡萄糖(硫酸或盐酸氨基葡萄糖):在中国国内作为保健品和药物,无法直接添加入食品,且自然界中天然成分含量较少,所以本配方不考虑氨基葡萄糖(硫酸或盐酸氨基葡萄糖)摄入量要求。
【注2】:由于致敏原成分可能存在于食品原料、辅料、生产、包装的方方面面,所以以现有手段,只能做到原则上不添加致敏原,但是在原料的生产,生产原料的辅料中可能会掺杂进微量致敏原。
【注3】:由于缺少检测混合产品中这些营养素的国标方法,仅以添加量标识。
【注4】:国标中缺少对胱氨酸、半胱氨酸的检测项目,根据供应商提供的检测报告,大米蛋白粉中胱氨酸+半胱氨酸含量约为23.7mg/g(以大米重量计),蛋白质含量为80%以上,根据实际大米蛋白粉添加量,实际含硫氨基酸含量应大于23mg/g。
尽管已经示出和描述了本发明的实施例,对于本领域的普通技术人员而言,可以理解在不脱离本发明的原理和精神的情况下可以对这些实施例进行多种变化、修改、替换和变型,本发明的范围由所附权利要求及其等同物限定。
Claims (12)
1.一种模块化不含常见致敏原的全营养饮料配方,其特征在于,包括如下百分比的配方原料:
植物蛋白粉:30-50%
油脂粉:20-40%
膳食纤维:5-20%
蔬菜、蘑菇及酵母粉:5-15%
特定建议值组合物:1-15%
混合维生素:0-2%
混合矿物质:0-15%
食用香精、食用色素、甜味剂:0-2%。
可选其他特定营养素部分(根据实际情况添加,不在前述百分比范围内)。
2.根据权利要求1所述的一种模块化不含常见致敏原的全营养饮料配方,其特征在于,所述植物蛋白粉包括大米蛋白粉(普通大米蛋白粉,糙米蛋白粉,发芽糙米蛋白粉中的一种或几种)、豌豆蛋白粉、氨基酸(盐)中的一种或几种组合。
3.根据权利要求1所述的一种模块化不含常见致敏原的全营养饮料配方,其特征在于,所述油脂(粉)包括红花籽油(粉)、亚麻籽油(粉)、藻油(粉)、磷脂(粉)、葵花籽油(粉)中的一种或几种的组合。
4.根据权利要求1所述的一种模块化不含常见致敏原的全营养饮料配方,其特征在于,所述膳食纤维包括非淀粉多糖类膳食纤维、抗性低聚糖类膳食纤维、抗性淀粉类膳食纤维、其他类膳食纤维中的一种或几种的组合。
5.根据权利要求1所述的一种模块化不含常见致敏原的全营养饮料配方,其特征在于,所述蔬菜、蘑菇及酵母粉包括西兰花粉、蘑菇粉、茶叶粉、酵母粉、海带粉、辣木叶粉、蛹虫草粉中的一种或几种的组合。
6.根据权利要求1所述的一种模块化不含常见致敏原的全营养饮料配方,其特征在于,特定建议值组合物包括叶黄素(酯)、姜黄(素)、番茄红素、葡萄皮红、葡萄籽提取物、植物甾醇(酯)、蓝莓粉(提取物)、桑葚粉(提取物)、血橙粉(提取物)、越橘(提取物)中的一种或几种组合。
7.根据权利要求1所述的一种模块化不含常见致敏原的全营养饮料配方,其特征在于,所述混合维生素包括维生素A,β-胡萝卜素,维生素D(D2和(或)D3),维生素E,维生素B1,维生素B2,烟酸(烟酰胺),泛酸,维生素B6,维生素B12,维生素C,叶酸中的一种或几种组合。
8.根据权利要求1所述的一种模块化不含常见致敏原的全营养饮料配方,其特征在于,所述混合矿物质包括钾、铁,钙,锌,镁一种或几种组合。
9.根据权利要求1所述的一种模块化不含常见致敏原的全营养饮料配方,其特征在于,所述食用香精、食用色素、甜味剂包括食用香精、叶绿素铜钠盐及甜菊糖苷中的一种或几种组合。
10.根据权利要求1所述的一种模块化不含常见致敏原的全营养饮料配方,其特征在于,可选其他特定营养素部分包括牛磺酸、左旋肉碱、(3R,3'R)-二羟基-β-胡萝卜素、雨生红球藻、表没食子儿茶素没食子酸酯、裸藻、β-羟基-β-甲基丁酸钙、西兰花种子水提物、γ-氨基丁酸、N-乙酰神经氨酸、顺-15-二十四碳烯酸、磷脂酰丝氨酸、人参(低于14岁配方不可使用)、L-赖氨酸、L-谷氨酰胺、橙皮素、甜菜碱、胡椒碱、留兰香提取物、L-苹果酸(盐)、改性柑橘果胶、6S-5-甲基四氢叶酸钙((6S)-5-甲基四氢叶酸,氨基葡萄糖盐)、维生素K2(合成)、益生菌、沙棘果油中的一种或几种组合。
11.根据权利要求1所述的一种模块化不含常见致敏原的全营养饮料配方,其特征在于,每份配方粉可平均分为4小份,其中:
4-6岁人群,每日摄入2小份
7-10岁人群,每日摄入3小份
11岁及以上人群,每日摄入4小份。
12.根据权利要求1所述的一种模块化不含常见致敏原的全营养饮料配方,其特征在于,每份配方粉中,所含必需全营养部分及可选其他特定营养素部分最终营养素含量或添加量范围包括:
蛋白质:≥85g;
每g蛋白质中必需氨基酸含量应符合以下数据:
组氨酸:≥16mg/g
异亮氨酸:≥30mg/g
亮氨酸:≥61mg/g
赖氨酸:≥48mg/g
含硫氨基酸(蛋氨酸+胱氨酸+半胱氨酸):≥23mg/g
