发明概述

风味剂的非限制性实例包括可乐、柠檬、酸橙、橙子、葡萄柚、香蕉、葡萄、苹果、梨、菠萝、苦杏仁、肉桂、糖、棉花糖、香草香精,糖基化的甜菊醇糖苷,NSF02及其混合物。
其他食品成分的非限制性实例包括风味剂、酸化剂、有机酸和氨基酸、着色剂、填充剂、改性淀粉、树胶、组织形成剂、防腐剂、抗氧化剂、维生素、乳化剂、稳定剂、增稠剂、胶凝剂、咖啡因、茶氨酸、可可碱及其混合物。
以下实施例说明了本发明的一些实施方案。应当明白本发明不限于实施例中列出的材料、比例、条件和程序,其只是说明性的。
实施例1
甜菊醇糖苷组合物的制备
将14kg由PureCircle Sdn Bhd(马来西亚)制造的起始甜叶菊提取物(SSE;批次#C4-0001-1015-0011)加入112升75%(v/v)的乙醇中。将混合物加热至80℃,用于SSE的完全溶解。随后将溶液温度降至25℃,并且加入约3g晶体莱鲍迪苷M作为种子。将溶液在25℃下保持96小时,用于结晶。将获得的晶体与母液分离,并且在篮式离心机中用纯乙醇洗涤。将湿晶体在真空干燥机(70℃)中干燥。获得了约4kg粉末状的甜菊醇糖苷组合物(SGC-1)。所获得的组合物在20℃去离子水中的溶解度为0.05%(w/v)。
通过以下的HPLC方法分析了SSE和甜菊醇糖苷组合物(SGC-1)。
HPLC系统:配备有双泵的Agilent 1200系列系统,自动取样机,柱温箱和DAD检测仪。
柱:Poroshell 120SB-C18,4.6×150mm,2.7μm,40℃
移动相:
预混物1:乙腈中75%(v/v)10mmol/L(pH2.6)磷酸盐缓冲液
预混物2:乙腈中68%(v/v)10mmol/L(pH2.6)磷酸盐缓冲液

实施例2
甜菊醇糖苷组合物的制备
将14kg由PureCircle Sdn Bhd(马来西亚)制造的起始甜菊提取物(SSE;批次#C4-0001-1015-0011)加入112升75%(v/v)的乙醇中。将混合物加热至80℃,用于SSE的完全溶解。随后将溶液温度降至25℃,并且在25℃下保持144小时,用于结晶。没有加入晶体莱鲍迪苷M种子,因此与实施例1相比,结晶较慢。将获得的晶体与母液分离,并且在篮式离心机中用纯乙醇洗涤。将湿晶体在真空干燥机(70℃)中干燥。获得了约3.8kg粉末状的甜菊醇糖苷组合物(SGC-2),具有1.5%(w/w)含水量和0.16%(w/w)残余乙醇含量。SGC-2样品在20℃去离子水中的溶解度为0.5%(w/v),即比实施例1的SGC-1的溶解度高约10倍。
使用实施例1中所述的HPLC方法分析了SSE和SGC-2。HPLC分析结果提供于表2中。

实施例3
低卡路里橙汁饮料
将橙子浓缩物(35%)、柠檬酸(0.35%)、抗坏血酸(0.05%)、橙红色素(0.01%)、橙子香精(0.20%)和0.05%起始甜叶菊提取物(SSE)或实施例2的甜菊醇糖苷组合物(SGC-2)混合并完全溶于水中(高达100%),并且巴氏杀菌。
样品的感官评价概括于表3中。数据显示出通过使用根据实施例2获得的甜菊醇糖苷组合物可以获得最佳结果。特别地,用所述组合物制备的饮料呈现出全面完整的风味特征和口感。

实施例5
减肥饼干
将面粉(50.0%)、人造黄油(30.0%)、果糖(10.0%)、麦芽糖醇(8.0%)、全脂奶(1.0%)、盐(0.2%)、烘焙粉(0.15%)、香草(0.1%)和起始甜菊提取物(SSE)或实施例2的甜菊醇糖苷组合物(SGC-2)(0.03%)在面团混合机中充分捏合。将获得的面团用模具造形,并且在200℃的烤箱中烘烤15分钟。
通过20名专家评价了感官特性。在含有根据实施例2获得的甜菊醇糖苷组合物的样品中获得了最佳结果。专家注意到更全面完整的风味特征和口感。
实施例6
酸奶
将起始甜菊提取物(SSE)或实施例2的甜菊醇糖苷组合物(SGC-2)(0.03%)和蔗糖(4%)溶解于低脂奶中。在82℃下巴氏杀菌20分钟后,将奶冷却至37℃。加入起始培养物(3%),并且将混合物在37℃下孵育6小时,随后在5℃下孵育12小时。
由20名专家评价了感官特性。在含有根据实施例2获得的甜菊醇糖苷组合物的样品中获得了最佳结果。专家注意到更全面的风味特征和口感。

Claims (6)

1.用于生产甜菊醇糖苷组合物的方法,其包括下列步骤:
a)提供包含甜叶菊(Stevia rebaudiana)植物的至少一种甜菊醇糖苷的原料;
b)提供含水醇;
c)将原料溶解于含水醇中,以获得原料溶液;
d)在约1分钟至约240小时范围内的时间间隔期间将原料溶液保持在约-24℃至约80℃范围内的温度下,以获得结晶的甜菊醇糖苷组合物;
e)将结晶的甜菊醇糖苷组合物与母液分离,以获得分离的甜菊醇糖苷组合物;和
f)将分离的甜菊醇糖苷组合物干燥,以产生甜菊醇糖苷组合物,
其中所述甜菊醇糖苷组合物在20℃水中具有至少0.01%的溶解度。
2.包含通过权利要求1的方法制得的甜菊醇糖苷组合物和至少一种另外的甜味剂的甜味剂组合物,所述至少一种另外的甜味剂选自:莱鲍迪苷A、莱鲍迪苷B、莱鲍迪苷C、莱鲍迪苷D、莱鲍迪苷E、莱鲍迪苷F、莱鲍迪苷G、莱鲍迪苷H、莱鲍迪苷I、莱鲍迪苷J、莱鲍迪苷K、莱鲍迪苷L、莱鲍迪苷M、莱鲍迪苷N、莱鲍迪苷O、杜尔可苷A、甜菊双糖苷、悬钩子苷、甜叶菊植物中发现的其他甜菊醇糖苷及其混合物,甜菊提取物,糖基化的甜菊醇糖苷,通过化学、酶合成或通过重组微生物发酵而制得的甜菊醇糖苷,罗汉果提取物,罗汉果苷,糖基化的罗汉果苷,高果糖玉米糖浆,玉米糖浆,转化糖,低聚果糖,菊粉,菊粉寡糖,偶联糖,低聚麦芽糖,麦芽糖糊精,糊精,极限糊精,玉米糖浆干粉,葡萄糖,麦芽糖,蔗糖,乳糖,阿洛酮糖,塔格糖,阿斯巴甜,糖精,三氯蔗糖,糖醇及其混合物。
3.包含通过权利要求1的方法制得的甜菊醇糖苷组合物和至少一种另外的风味剂的香料组合物,所述至少一种另外的风味剂选自:可乐、柠檬、酸橙、橙子、葡萄柚、香蕉、葡萄、苹果、梨、菠萝、苦杏仁、肉桂、糖、棉花糖、香草香料,糖基化的甜菊醇糖苷,NSF02及其混合物。
4.包含通过权利要求1的方法制得的甜菊醇糖苷组合物和至少一种另外的食品成分的食品成分,所述至少一种另外的食品成分选自:香精、酸化剂、有机酸和氨基酸、着色剂、填充剂、改性淀粉、树胶、组织形成剂、防腐剂、抗氧化剂、维生素、乳化剂、稳定剂、增稠剂、胶凝剂、咖啡因、茶氨酸、可可碱及其混合物。
5.包含通过权利要求1的方法制得的甜菊醇糖苷组合物的食品、饮料、化妆品或药品。
6.权利要求1的方法,其中所述甜菊醇糖苷组合物是粉末状的甜菊醇糖苷组合物。
