血脂,是人体血液中所含脂类的总称,包括甘油三酯、磷脂、胆固醇和游离脂肪酸等。血液中脂类含量与全身脂类总量相比只占极少的一部分,但它却运转于人体各部组织之间,一般可以反映出体内脂类代谢情况。高脂血症是指血脂水平过高,它可直接引起一些严重危害人体健康的疾病,如动脉粥样硬化、冠心病、胰腺炎等,高脂血症是一种常见病症,其严重性绝对不能忽视,高血脂症主要通过控制饮食、增加运动、服用药物等方式来控制治疗,治疗高脂血症的药物主要包括苯氧芳酸类药物、三羟甲基戊二酰-辅酶A还原酶抑制剂、烟酸类药物、多不饱和脂肪酸类、泛硫乙胺等,但是长期服用治疗高脂血症的药物会对肝脏有伤害,因此近些年来,寻找天然食用原料利用生物工程的方法加工成食用安全的降血脂产品成了本领域科研工作者研究的热点。

本发明的目的是提供一种口感好、果香浓郁、饮用安全的降血脂保健饮料的制作方法。
本发明的目的是这样实现的:
将山楂洗净、去核,称取一定质量的去核山楂,加入去核山楂质量50%的清水,用打浆机打成果浆得山楂果浆,将苹果洗净、去皮去核,用榨汁机榨成苹果汁,将冬瓜去皮、去瓤,用榨汁机榨成冬瓜汁。
按照质量比2:1:1的比例将山楂果浆、苹果汁和冬瓜汁混合均匀得混合果蔬汁,在混合果蔬汁中加入2%的可溶性淀粉和1%的大豆蛋白肽,搅拌均匀后将pH调整到5.6-6.0,在80-85℃条件下灭菌10分钟,降温到23-27℃,从斜面上接入香菇菌种,在23-27℃、160-200rpm的条件下摇床培养90-100小时得香菇发酵液,香菇发酵液经菌丝体胶体磨磨浆得营养浆液,营养浆液再经过滤、调配、灌装、封口、灭菌即得成品。

第五,本发明的降血脂保健饮料的原料含有山楂,山楂富含生物类黄酮、山楂酸、柠檬酸和丰富维生素C等成分,山楂黄酮能降低血清胆固醇及甘油三酯,通过提高血清中高密度胆固醇及其亚组分浓度,增加胆固醇的排泄,山楂酸、柠檬酸和维生素C等成分也具有扩张血管壁、降低胆固醇和甘油三酯等作用。
第六,本发明的降血脂保健饮料富含高活性的易被人体吸收的苷元型山楂黄酮,山楂黄酮具有降低血清胆固醇及甘油三酯的功效,但是山楂中的山楂黄酮大部分以糖苷的形式存在,不易被人体吸收,黄酮糖苷需要转化成苷元形式,才更易被人体吸收,而且苷元的生理活性远比其相应的糖苷高,香菇菌种代谢产生的β-葡萄糖苷酶可以将山楂中的糖苷型黄酮转化成苷元型黄酮,提高其生理活性,并使之更易被人体吸收。经过测定,本发明实施例的保健饮料中的黄酮糖苷转化成黄酮苷元的转化率为90%。
第七,本发明的降血脂保健饮料具有浓郁的苹果香气,苹果汁经过香菇发酵后,香菇代谢产生的β-葡萄糖苷酶可以将苹果中的结合态呈香物质转化成游离态呈香物质,增加本发明降血脂保健饮料的香气。
具体实施方式
本发明采用的香菇CICC50100采购于中国工业微生物菌种保藏管理中心。
将山楂洗净、去核,称取一定质量的去核山楂,加入去核山楂质量50%的清水,用打浆机打成果浆得山楂果浆,将苹果洗净、去皮去核,用榨汁机榨成苹果汁,将冬瓜去皮、去瓤,用榨汁机榨成冬瓜汁。
按照质量比2:1:1的比例将山楂果浆、苹果汁和冬瓜汁混合均匀得混合果蔬汁,在混合果蔬汁中加入2%的可溶性淀粉和1%的大豆蛋白肽,搅拌均匀后将pH调整到5.8,在83℃条件下灭菌10分钟,降温到25℃,从斜面上接入香菇菌种,在25℃、180rpm的条件下摇床培养96小时得香菇发酵液,香菇发酵液经菌丝体胶体磨磨浆得营养浆液,营养浆液再经过滤、调配、灌装、封口、灭菌即得成品。
本发明降血脂保健饮料实施效果试验:
筛选体检血脂四项 ( TC、TG、HDL-C、LDL-C ) 中有1-4项异常的受试者22人,让这22位受试者饮用本发明实施例的降血脂保健饮料,试验时间为2个月,试验期间每天早饭后和晚饭后各饮用250毫升,这期间不服用降血脂类药物,2个月后,测定其血液中TC、TG、HDL-C、LDL-C浓度,并与饮用本发明降血脂保健饮料前体检情况进行比较,结果显示,受试者总胆固醇( TC )平均下降了17.68%,甘油三酯( TG ) 平均降低28.44%,低密度脂蛋白胆固醇(LDL-C) 平均降低25.79%,高密度脂蛋白胆固醇(HDL-C) 水平没有变化,从以上数据可以看出,本发明的降血脂保健饮料具有明显的降血脂功效。
以下举例说明 :
韩××,男,48 岁,体检时总胆固醇、低密度脂蛋白、甘油三酯三项都超标,每天早饭后和晚饭后各饮用本发明实施例的降血脂保健饮料250毫升,连续饮用2个月后,体重减轻4kg,复查血脂恢复正常水平。
关×,女,59岁,体形肥胖,伴有胸闷、气短症状,上楼时需被动歇息,体检时总胆固醇、低密度脂蛋白、甘油三酯三项都超标,每天早饭后和晚饭后各饮用本发明实施例的降血脂保健饮料250毫升,连续饮用2个月后,体重减轻3 kg,复查血脂恢复正常水平,胸闷、气短症状消失,上楼也无需被动歇息。
Claims (1)
1.一种降血脂保健饮料的制作方法,其特征是经过如下加工过程制备而成:
⑴将山楂洗净、去核,称取一定质量的去核山楂,加入去核山楂质量50%的清水,用打浆机打成果浆得山楂果浆,将苹果洗净、去皮去核,用榨汁机榨成苹果汁,将冬瓜去皮、去瓤,用榨汁机榨成冬瓜汁;
⑵按照质量比2:1:1的比例将山楂果浆、苹果汁和冬瓜汁混合均匀得混合果蔬汁,在混合果蔬汁中加入2%的可溶性淀粉和1%的大豆蛋白肽,搅拌均匀后将pH调整到5.6-6.0,在80-85℃条件下灭菌10分钟,降温到23-27℃,从斜面上接入香菇菌种,在23-27℃、160-200rpm的条件下摇床培养90-100小时得香菇发酵液,香菇发酵液经菌丝体胶体磨磨浆得营养浆液,营养浆液再经过滤、调配、灌装、封口、灭菌即得成品。
