本发明公开了一种紫薯挂面,按照质量比由以下原料加工而成:面粉100~200、紫薯粉5~15、食盐1~4、食用碱0.1~0.5、瓜尔胶0.6~1.2、黄原胶0.3~0.8、Vc0.01~0.1、谷朊粉2~6。本发明提高了挂面的爽滑度,口感好,在不使用色素和护色剂的基础上,使生产的挂面能够保持紫薯的天然色泽、风味和营养,提高了挂面的健康性能和感官品质。在传统挂面中加入紫薯,使其富含蛋白质、淀粉、果胶、纤维素、氨基酸、维生素、多种矿物质、硒元素、铁元素和花青素,具有预防高血压、减轻肝机能障碍、抗癌、抗疲劳、抗衰老、补血等保健功效,适合不同年龄人群口味,而且安全无毒害,具有巨大的市场经济效益和开发应用前景。

本发明属于食品加工技术领域,涉及一种挂面。
背景技术
我国是面食生产与消费的大国,简单方便速食的挂面,当然极受广大人民的欢迎。随着生活水平的日益提高人们对挂面的营养价值的要求越来越高。 在追求营养和健康的当今社会,传统挂面由于其配料单一、口感欠佳、营养价值较低而渐渐失去往日之辉煌。 因此研制开发一种新型营养挂面势在必行。
发明内容
本发明的目的是提供一种紫薯挂面,以解决针传统挂面品种单一、营养价值较低的问题。
本发明的紫薯挂面按照质量比由以下原料加工而成 :面粉 100 ~ 200、紫薯粉5 ~ 15、食盐 1 ~ 4、食用碱 0.1 ~ 0.5、瓜尔胶 0.6 ~ 1.2、黄原胶 0.3 ~ 0.8、 Vc0.01 ~ 0.1、 谷朊粉 2 ~ 6。
紫薯在日本国家蔬菜癌症研究中心公布的抗癌蔬菜中名列榜首。 紫薯富含蛋白质、淀粉、果胶、纤维素、氨基酸、维生素及多种矿物质,除了具有普通红薯的营养成分外,还含有多糖、黄酮类物质,并且还富含硒元素、铁元素和花青素,营养丰富,具有一定预防高血压、减轻肝机能障碍、抗癌的功能。 其中的蛋白质、氨基酸都是极易被人体消化和吸收的,维生素 A可以改善视力和皮肤的粘膜上皮细胞,维生素 C 可使胶元蛋白正常合成,防治坏血病的发生,花青素是天然强效自由基清除剂。 紫薯中的硒和铁是人体抗疲劳、抗衰老、补血的必要元素,特别是硒被称为“抗癌大王” ,易被人体吸收,可留在血清中,修补心肌,增强机体免疫力,清除体内自由基,抑制癌细胞中 DNA 的合成和癌细胞的分裂与生长,预防胃癌、肝癌等癌病的发生。 紫薯富含纤维素,可增加粪便体积,促进肠胃蠕动,清理肠腔内滞留的粘液、积气和腐败物,排出粪便中的有毒物质和致癌物质,保持大便畅通,改善消化道环境,防止胃肠道疾病的发生。 另外,紫薯还可去皮烘干粉碎后加工成粉,色泽美观,营养丰富,是极好的食品加工原料,可作为各种糕点的主料或配料。 同时紫红薯还将成为花青素的主要原料之一。 紫薯从茎尖嫩叶到薯块,均具有一定保健功能,是当前无公害、绿色、有机食品中的食品。
本发明具有如下优点 : 1、提高了挂面的爽滑度,口感好,在不使用色素和护色剂的基础上,使生产的挂面能够保持紫薯的天然色泽、风味和营养,提高了挂面的健康性能和感官品质。

上述原料中,食盐和食用碱溶于水中添加 ;其他辅料预混于面粉中。

1. 一种紫薯挂面,其特征在于所述挂面按照质量比由以下原料加工而成 :面粉 100~ 200、紫薯粉 5 ~ 15、食盐 1 ~ 4、食用碱 0.1 ~ 0.5、瓜尔胶 0.6 ~ 1.2、黄原胶0.3 ~ 0.8、 Vc 0.01 ~ 0.1、谷朊粉 2 ~ 6。
