Abstract
本发明涉及一种养胃面粉、制备方法及面食制品,本发明所述面粉主要由以下原料制备而成:小麦粉100份、猴头菇粉10~20份、山药粉7~15份、黄精粉7~15份、粉末状冬虫夏草3~7份和灵芝粉3~7份。本发明所述面粉中,猴头菇、山药、黄精、冬虫夏草和灵芝搭配得当,配伍合理,具有协同增效作用,使得所述面粉具有极佳的养胃功效,适合胃病患者长期食用。

技术领域
本发明涉及食品加工领域,具体而言,涉及一种养胃面粉、制备方法及面食制品。
背景技术
面粉是我国国民的主粮之一,用于制作面条、馒头、饼干、糕点等多种面食,深受国民喜爱。但目前市场上的面粉一般由小麦粉制成,功效和口味单一,尤其缺乏针对特殊人群,例如胃病患者的面粉。
有鉴于此,特提出本发明。
发明内容
本发明的第一目的在于提供一种养胃面粉,所述面粉主要由小麦粉、猴头菇粉、山药粉、粉末状冬虫夏虫和灵芝粉制备而成,具有养胃、护胃和暖胃的功效,适合胃病患者长期食用。
本发明的第二目的在于提供一种前述养胃面粉的制备方法,所述方法简单易行,便于操作,可规模化生产。
本发明的第三目的在于提供一种由前述养胃面粉制成的面食制品,所述面食制品具有具有养胃、护胃和暖胃的功效,适合胃病患者长期食用。
为了实现本发明的上述目的,特采用以下技术方案:
一种养胃面粉,所述面粉主要由以下原料制备而成:小麦粉100份、猴头菇粉10~20份(例如,10份、11份、12份、13份、14份、15份、16份、17份、18份、19份或20份)、山药粉7~15份(例如,7份、8份、9份、10份、11份、12份、13份、14份或15份)、黄精粉7~15份(例如7份、8份、9份、10份、11份、12份、13份、14份或15份)、粉末状冬虫夏草3~7份(例如,3份、4份、5份、6份或7份)和灵芝粉3~7份(例如3份、4份、5份、6份或7份)。
猴头菇又叫猴头菌,齿菌科的菌类,菌伞表面长有毛茸状肉刺,长约1~3厘米,它的子实体圆而厚,新鲜时白色,干后由浅黄至浅褐色,基部狭窄或略有短柄,上部膨大,直径3.5~10厘米,远远望去似金丝猴头,故称“猴头菇”,又像刺猬,故又有“刺猬菌”之称。猴头菌是鲜美无比的山珍,菌肉鲜嫩,香醇可口,有“素中荤”之称。研究表明,干品猴头菇中每百克含蛋白质26.3g,含脂肪4.2g,是名副其实的高蛋白、低脂肪食品。猴头菇具有养胃中和的功效,能增进食欲,增强胃黏膜屏障机能,改善消化不良、胃和十二指肠溃疡及慢性胃炎的发病率。
山药,原名薯蓣,主产于我国河南、湖南、广东等地,其中最为著名的要数河南怀庆府出产的黄精药,故有时称山药为黄精。《神龙本草经》将其称为上品:主伤中,补虚赢、除寒热邪气,补中益气力,长肌肉。据古医籍加,山药具有健脾、补肺、固肾、益精等多种功效。现代医学研究表明:山药富有皂苷、粘液质、糖蛋白、甘露聚糖、植酸、尿囊素、山药素、胆碱、多巴胺、粗纤维、果胶、淀粉酶和多种微量元素,具有预防冠心病。脂肪肝的发生,刺激和调节人体免疫功能、促进消化的功能。
黄精,为百合科草本植物根茎,其性平,味甘,归肺、脾、肾经。《本草便读》记载:此药味甘如饴,性平质润,为补养脾阴之正品。《本经逢原》记载:黄精,宽中益气,使五脏调和,肌肉充盛,骨髓强坚,皆是补阴之功。因此,黄精具有养血补心,滋阴养肝、健脾补中,润肺生津、补肾纳气,补五脏之虚损,充气血阴阳之不足等功效。
冬虫夏草,是由肉座菌目蛇形虫草科蛇形虫草属的冬虫夏草菌寄生于高山草甸土中的蝠蛾幼虫,使幼虫身躯僵化,并在适宜条件下,夏季由僵虫头端抽生出长棒状的子座而形成的,即冬虫夏草菌的子实体与僵虫菌核(幼虫尸体)构成的复合体。冬虫夏草的主要化学成分包括甘露醇、虫草素、氨基酸、腺嘌呤、腺嘌呤核苷、尿嘧啶、胸腺嘧啶和次黄嘌呤核苷等,主要有调节免疫系统功能、抗肿瘤、抗疲劳、补肺益肾,止血化痰,秘精益气、美白祛黑等多种功效。
灵芝又称林中灵、琼珍(学名:Ganoderma Lucidum Karst)是多孔菌科真菌灵芝的子实体。灵芝入药于<神农本草>,列为上品,其味甘、微苦,性微温,归心、脾、肝、肺、肾经,具有滋补强壮、宁心益胃、调节免疫功能、补气安神、止咳平喘、延年益寿的功效,用于眩晕不眠、心悸气短、神经衰弱、虚劳咳喘。
除小麦粉外,本发明所述面粉以猴头菇用量最多,具有养胃护胃的作用,在所述养胃面粉中具有“君药”的地位。而山药和黄精的用量次之,二者性温味平,具有温阳、益气之功效,具有温阳暖胃之功效,在所述养胃面粉中具有“臣药”的地位。冬虫夏虫和灵芝的用量最少,主要具有滋补和增强免疫力的功效,能够进一步地对猴头菇、山药、黄精的养胃、护胃和暖胃之功效起到进一步加强和巩固的作用,在所述养胃面粉中作为“佐使药”。综上所述,本发明所述面粉中,猴头菇、山药、黄精、冬虫夏草和灵芝搭配得当,配伍合理,具有协同增效作用,使得所述面粉具有极佳的养胃功效,适合胃病患者长期食用。
在一些具体的实施方式中,按重量份计,所述面粉主要由以下原料制备而成:小麦粉100份、猴头菇粉15~20份、山药粉7~10份、黄精粉7~10份、粉末状冬虫夏草4~6份和灵芝粉4~6份。
在一些具体的实施方式中,按重量份计,所述面粉主要由以下原料制备而成:小麦粉100份、猴头菇粉18份、山药粉9份、黄精粉9份、粉末状冬虫夏草5份和灵芝粉5份。
在一些具体的实施方式中,按重量份计,所述原料还包括1~5份松花粉(例如1份、2份、3份、4份或5份)。
在一些具体的实施方式中,按重量份计,所述原料还包括2~4份松花粉。
在一些具体的实施方式中,按重量份计,所述原料还包括3份松花粉。
本发明所述养胃面粉的原料中加入松花粉,其具有使处于高度紧张状态的神经系统得以缓和、修复胃肠道损伤的功能。通过松花粉的加入,本发明所述面粉的养胃功能得到进一步增强。
在一些具体的实施方式中,所述猴头菇粉通过以下方法制备而成:取新鲜猴头菇,于清水中去除表面尘土和杂质,晾干至其表面不再滴水,切或撕成丝状,在其表面喷洒超氧化物歧化酶溶液,阴干后,粉碎成猴头菇粉。
在一些具体的实施方式中,超氧化物歧化酶在所述溶液中的浓度为20000~40000U/mL,所述溶液的喷洒量为20~30mL/Kg猴头菇。
猴头菇在从鲜品到干制品的制备过程中形成苦味物质,需要在盐水中反复浸泡挤压方能除去苦味物质,而猴头菇在浸泡和挤压过程中容易造成大量营养物质的流失,且费时费力。为解决上述技术问题,本发明提供猴头菇粉的新型制备方法,该方法将新鲜洗净的猴头菇加工成丝状,喷洒超氧化物歧化酶溶液,并且采取阴干方式进行干燥,避免新鲜猴头菇在干燥过程中将不具有苦味的物质转化为苦味物质,制成的猴头菇粉不会产生苦味,同时营养物质得以保存,不流失。
本发明还涉及一种前述养胃面粉的制备方法,将所述原料按比例混合均匀,即得所述养胃面粉。
本发明还涉及根据前述养胃面粉制成的面食制品,优选地,所述面食制品包括面条、饼干或糕点。
与现有技术相比,本发明的有益效果为:
(1)本发明所述面粉中,猴头菇、山药、黄精、冬虫夏草和灵芝搭配得当,配伍合理,具有协同增效作用,使得所述面粉具有极佳的养胃功效,适合胃病患者长期食用。
(2)本发明所述养胃面粉的原料中加入松花粉,其具有使处于高度紧张状态的神经系统得以缓和、修复胃肠道损伤的功能,通过松花粉的加入,本发明所述面粉的养胃功能得到进一步增强。
(3)本发明提供猴头菇粉的新型制备方式,其将新鲜洗净的猴头菇加工成丝状,喷洒超氧化物歧化酶溶液,并且采取阴干方式进行干燥,避免新鲜猴头菇在干燥过程中将不具有苦味的物质转化为苦味物质,制成的猴头菇粉不会产生苦味,同时营养物质得以保存,不流失。

下面将结合实施例对本发明的实施方案进行详细描述,但是本领域技术人员将会理解,下列实施例仅用于说明本发明,而不应视为限制本发明的范围。实施例中未注明具体条件者,按照常规条件或制造商建议的条件进行。所用试剂或仪器未注明生产厂商者,均为可以通过市购买获得的常规产品。
实施例1
一种养胃面粉,按重量份计,所述面粉由以下原料制备而成:
小麦粉100份;
猴头菇粉10份;
山药粉15份;
黄精粉7份;
粉末状冬虫夏草3份;
灵芝粉3份。
其中,所述猴头菇粉通过以下方法制备而成:取新鲜猴头菇,于清水中去除表面尘土和杂质,晾干至其表面不再滴水,切或撕成丝状,在其表面喷洒超氧化物歧化酶溶液(20000U/mL),阴干后,粉碎成猴头菇粉,其喷洒量为20mL/kg猴头菇。
实施例2
一种养胃面粉,按重量份计,所述面粉由以下原料制备而成:
小麦粉100份;
猴头菇粉18份;
山药粉9份;
黄精粉9份;
粉末状冬虫夏草5份;
灵芝粉5份。
其中,所述猴头菇粉通过以下方法制备而成:取新鲜猴头菇,于清水中去除表面尘土和杂质,晾干至其表面不再滴水,切或撕成丝状,在其表面喷洒超氧化物歧化酶溶液(30000U/mL),阴干后,粉碎成猴头菇粉,其喷洒量为25mL/kg猴头菇。
实施例3
一种养胃面粉,按重量份计,所述面粉由以下原料制备而成:
小麦粉100份;
猴头菇粉20份;
山药粉15份;
黄精粉15份;
粉末状冬虫夏草7份;
灵芝粉7份。
其中,所述猴头菇粉通过以下方法制备而成:取新鲜猴头菇,于清水中去除表面尘土和杂质,晾干至其表面不再滴水,切或撕成丝状,在其表面喷洒超氧化物歧化酶溶液(40000U/mL),阴干后,粉碎成猴头菇粉,其喷洒量为30mL/kg猴头菇。
实施例4
一种养胃面粉,按重量份计,所述面粉由以下原料制备而成:
小麦粉100份;
猴头菇粉20份;
山药粉15份;
黄精粉15份;
粉末状冬虫夏草7份;
灵芝粉7份;
松花粉3份。
其中,所述猴头菇粉通过以下方法制备而成:取新鲜猴头菇,于清水中去除表面尘土和杂质,晾干至其表面不再滴水,切或撕成丝状,在其表面喷洒超氧化物歧化酶溶液(20000U/mL),阴干后,粉碎成猴头菇粉,其喷洒量为20mL/kg猴头菇。

参照实施例2所述方法制备养胃面粉,区别仅在于,所述面粉中未加入猴头菇粉。
对比例2
参照实施例2所述方法制备养胃面粉,区别仅在于,所述面粉中未加入山药粉和黄精粉。
对比例3
参照实施例2所述方法制备养胃面粉,区别仅在于,所述面粉中未加入冬虫夏草和灵芝。
对比例4
参照对比例3制备养胃面粉,区别仅在于,所述猴头菇粉通过以下方法制备而成:于清水中去除表面尘土和杂质,晾干至其表面不再滴水,投入烘箱内烘干,粉碎成猴头菇粉。
实验例1
召集90名慢性胃溃疡患者,随机分为9组,连续6个月的主食为面粉,其中,第1组为市售普通面粉,第2~5组为实施例1~4所述面粉,第6~9组为对比例1~4所述面粉。6个月结束后,对60名患者中基本痊愈、好转、有效以及无效的患者人数进行统计,并评价所述面粉是否有苦味,具体检测结果如表1所示。

1.一种养胃面粉,其特征在于,按重量份计,所述面粉主要由以下原料制备而成:
小麦粉100份、猴头菇粉10~20份、山药粉7~15份、黄精粉7~15份、粉末状冬虫夏草3~7份和灵芝粉3~7份。
2.根据权利要求1所述的养胃面粉,其特征在于,按重量份计,所述面粉主要由以下原料制备而成:
小麦粉100份、猴头菇粉15~20份、山药粉7~10份、黄精粉7~10份、粉末状冬虫夏草4~6份和灵芝粉4~6份。
3.根据权利要求2所述的养胃面粉,其特征在于,按重量份计,所述面粉主要由以下原料制备而成:
小麦粉100份、猴头菇粉18份、山药粉9份、黄精粉9份、粉末状冬虫夏草5份和灵芝粉5份。
4.根据权利要求1所述的养胃面粉,其特征在于,按重量份计,所述原料还包括1~5份松花粉。
5.根据权利要求2所述的养胃面粉,其特征在于,按重量份计,所述原料还包括2~4份松花粉。
6.根据权利要求3所述的养胃面粉,其特征在于,按重量份计,所述原料还包括3份松花粉。
7.根据权利要求1~6任一项所述的养胃面粉,其特征在于,所述猴头菇粉通过以下方法制备而成:取新鲜猴头菇,于清水中去除表面尘土和杂质,晾干至其表面不再滴水,切或撕成丝状,在其表面喷洒超氧化物歧化酶溶液,阴干后,粉碎成猴头菇粉。
8.根据权利要求7所述的养胃面粉,其特征在于,超氧化物歧化酶在所述溶液中的浓度为20000~40000U/mL,所述溶液的喷洒量为20~30mL/Kg猴头菇。
9.权利要求1~8任一项所述养胃面粉的制备方法,其特征在于,将所述原料按比例混合均匀,即得所述养胃面粉。
10.根据权利要求1~8任一项所述养胃面粉制成的面食制品,优选地,所述面食制品包括面条、饼干或糕点。
