本发明提供了一种玫瑰花酵素的制备方法。选择品质优良的干玫瑰花,加水制备玫瑰花水提液,再进行超声波细胞破壁技术处理,再加入白砂糖、红糖、葡萄糖,然后加一定量蛋白胨、三水合磷酸氢二钾、低聚果糖、七水合硫酸镁、乙酸钠、氯化钙、吐温,包扎封口湿热灭菌,湿热灭菌后,在无菌工作环境下冷却至37℃,进行接种种子液(植物乳酸菌、嗜酸乳杆菌、双歧杆菌),摇匀后,在28℃~37℃发酵40~80h,得到玫瑰花酵素发酵液,本发明的玫瑰花酵素保留了玫瑰花特有的香气及有益成分,同时提高了玫瑰花的活性成分,使玫瑰花的有益成分最大限度地释放,被人体吸收,并且含有大量对人体肠道有益的活菌。

步骤1,以重量份计,选3-8份干玫瑰花瓣,100份蒸馏水,于80℃下水浴加热20-80分钟,进行超声波破壁技术,在频率20-25KHz、500-950W、工作1s,间隔1s,总处理时间为5-20分钟,8层纱布过滤制得玫瑰花水提液;

实施例1
一种玫瑰花酵素的制备方法,包括以下步骤:
步骤1,以重量份计,选3份干玫瑰花瓣,100份蒸馏水,于80℃下水浴加热20分钟,进行超声波破壁技术,在频率20KHz、500W、工作1s,间隔1s,总处理时间为20分钟,8层纱布过滤制得玫瑰花水提液;
步骤2,以重量份计,加入重量比依次为0.8份蛋白胨,0.4份三水合磷酸钾,0.4份低聚果糖,0.056份七水合硫酸镁,0.25份乙酸钠,0.15份氯化钙,0.08份吐温,调节PH为6.5-7.0;

一种玫瑰花酵素的制备方法,包括以下步骤:
步骤1,以重量份计,选5份干玫瑰花瓣,100份蒸馏水,于80℃下水浴加热50分钟,进行超声波破壁技术,在频率23KHz、700W、工作1s,间隔1s,总处理时间为12分钟,8层纱布过滤制得玫瑰花水提液;
步骤2,以重量份计,加入重量比依次为1.0份蛋白胨,0.5份三水合磷酸钾,0.5份低聚果糖,0.058份七水合硫酸镁0.3份乙酸钠0.2份氯化钙,0.1份吐温,调节PH为6.5-7.0;
步骤3,以重量份计,在玫瑰花汁液每份中加入3份的白砂糖、3份红糖、4份葡萄糖,灭菌,接种种子液3份,所述接种种子液为重量比为1:1:1的植物乳酸菌:嗜酸乳杆菌:双歧杆菌,32℃发酵60h, 得玫瑰花酵素发酵液;
其中,步骤1中对原料使用智能超声波细胞破碎仪,用超声波细胞破壁技术进行处理。
实施例3
一种玫瑰花酵素的制备方法,包括以下步骤:
步骤1,以重量份计,选8份干玫瑰花瓣,100份蒸馏水,于80℃下水浴加热80分钟,进行超声波破壁技术,在频率25KHz、950W、工作1s,间隔1s,总处理时间为5分钟,8层纱布过滤制得玫瑰花水提液;
步骤2,以重量份计,加入重量比依次为1.2份蛋白胨,0.6份三水合磷酸钾,0.6份低聚果糖,0.060份七水合硫酸镁,0.35份乙酸钠,0.25份氯化钙,0.12份吐温,调节PH为7.0;
步骤3,以重量份计,在玫瑰花汁液每份中加入4份的白砂糖、2份红糖、4份葡萄糖,灭菌,接种种子液3份,所述接种种子液为重量比为1:1:1的植物乳酸菌:嗜酸乳杆菌:双歧杆菌,37℃发酵80h, 得玫瑰花酵素发酵液;
其中,步骤1中对原料使用智能超声波细胞破碎仪,用超声波细胞破壁技术进行处理。

1.一种玫瑰花酵素制备方法,包括以下步骤:
步骤(1),以重量份计,选3-8份干玫瑰花瓣,100份蒸馏水,于80℃下水浴加热20-80分钟,进行超声波破壁技术,在频率20-25KHz、500-950W、工作1s,间隔1s,总处理时间为5-20分钟,8层纱布过滤制得玫瑰花水提液;
步骤(2),以重量份计,加入重量比依次为0.8-1.2份蛋白胨,0.4-0.6份三水合磷酸钾,0.4-0.6份低聚果糖,0.056-0.060份七水合硫酸镁,0.25-0.35份乙酸钠,0.15-0.25份氯化钙,0.08-0.12份吐温,调节pH为6.5-7.0;
