本发明公开了一种特制麻辣萝卜干的制作方法,其主要由:白萝卜、白糖、食醋、食盐、香油、花椒、辣椒粉等原料制成。加工好的萝卜干条外观鲜亮、脆嫩清香、微甜味美,萝卜干还含有一定数量的蛋白质、维生素等营养成份,以及钙、磷等人体不可缺少的矿物质,有降血脂、降血压、消炎、开胃、清热生津、防暑、消油腻、破气、化痰、止咳等功效。本发明配方简单合理、制作容易、易于推广。

本发明涉及一种特制麻辣萝卜干的制作方法。
背景技术
萝卜又名菜菔、罗服。我国是萝卜的故乡,栽培食用历史悠久,早在《诗经》中就有关于萝卜的记载。它既可用于制作菜肴,炒、煮、凉拌等俱佳;又可当作水果生吃,味道鲜美;还可用作泡菜,酱菜腌制。萝卜营养丰富,有很好的食用、医疗价值。萝卜含有能诱导人体自身产生干扰素的多种微量元素,可增强机体免疫力,并能抑制癌细胞的生长,对防癌、抗癌有重要意义。萝卜中的B族维生素和钾、镁等矿物质可促进胃肠蠕动,有助于体内废物的排出。常吃萝卜可降低血脂、软化血管、稳定血压,预防冠心病、动脉硬化、胆石症等疾病。萝卜还是一味中药,其性凉味辛甘,可消积滞、化痰清热、下气宽中、解毒。秋季萝卜价格便宜,制作萝卜干的成本较低,易于制作推广,用本方法制作的萝卜干麻辣可口,老少皆宜,成为人们饭桌上不可或缺的佐菜。
发明内容:
本发目的在于提供一种特制麻辣萝卜干的制作方法,成品外观鲜亮、麻辣可口,常吃可降低血脂、软化血管、稳定血压,预防冠心病、动脉硬化、胆石症等疾病,还可消积滞、化痰清热、下气宽中、解毒。
本发明主要由下列配比的材料制成:白萝卜15000-20000克、辣椒粉90-100克、白、糖300-500克、食盐400-500克、香油150-200克、花椒面50-150克、食醋100-150克、味精适量。
特制麻辣萝卜干的制作方法是:
将白萝卜去根须洗净,切成5-7cm、宽3-4cm左右的长条,然后用盐进行腌制,腌制至第三天,把萝卜取出置阳光下晾晒3-5天至七成干,然后用清水冲洗干净,空干水分,用醋、花椒面、辣椒面、白糖、香油均匀的拌入晾好的萝卜干中,即可食用。注意储存时应在密闭阴凉出储存。
本发明具有以下优点:
1、加工好的萝卜干条外观鲜亮、脆嫩清香、微甜味美;
2、配方简单合理、制作容易、易于推广;
3、萝卜干还含有一定数量的糖份、蛋白质、胡萝卜素、抗坏血酸等营养成份,以及钙、磷等人体不可缺少的矿物质;
4、有降血脂、降血压、消炎、开胃、清热生津、防暑、消油腻、破气、化痰、止咳等功效。
具体实例:
将白萝卜去根须洗净,切成5-7cm、宽3-4cm左右的长条,然后按照上述配比取白萝卜15000克用500克盐进行腌制,腌制时应先放一层萝卜再放一层盐,层层放入;萝卜入缸后,每天倒缸一次,倒缸时上下翻动,使萝卜吸盐均匀,腌至第三天,把萝卜取出置阳光下晾晒3-5天至七成干,晒时要勤翻动,同时要防止雨淋和灰尘污染;晒至七成干后用清水冲洗干净,空干水分,用150克食醋、90克辣椒粉、400克白糖、200克香油、150克花椒面、适量味精(各调料可根据自己的喜好酌量添加),均匀的拌入晾好的萝卜干中,即可食用。注意储存时应在密闭阴凉出储存。

1.一种特制麻辣萝卜干的制作方法,主要原料包括:白萝卜、白糖、食醋、食盐、香油、花椒、辣椒粉等;
其原料重量配比是:
白萝卜15000-20000克、辣椒粉90-100克、白、糖300-500克、食盐400-500克、香油150-200克、花椒面50-150克、食醋100-150克、味精适量。
2.根据权利要求1所述的一种特制麻辣萝卜干,其中各原料的优选重量配比是:
白萝卜15000克、辣椒粉90克、白糖400克、食盐500克、香油200克、花椒面150克、食醋150克、味精适量。
3.根据权利要求1、2所述的一种特制麻辣萝卜干的制作方法,其特征在于:将白萝卜去根须洗净,切成5-7cm、宽3-4cm左右的长条,然后用盐进行腌制,腌制至第三天,把萝卜取出置阳光下晾晒3-5天至七成干,然后用清水冲洗干净,空干水分,用醋、花椒面、辣椒面、白糖、香油均匀的拌入晾好的萝卜干中,即可食用,注意储存时应在密闭阴凉出储存。
