本发明公开了一种改善便秘的酵素组合物及其制备方法,其以苹果干细胞冻干粉、无花果、费约果、鹅莓、朝鲜蓟、小麦苗、洋车前子壳粉为原料,经原料预处理、发酵、过滤干燥、调配制得。所得酵素组合物的整肠通便功效较现有酵素进一步提高,可用于日常生活中便秘症状的快速改善。

本发明属于保健食品技术领域,具体涉及一种改善便秘的酵素组合物及其制备方法。
背景技术
随着生活节奏的加快、饮食结构的改变,便秘已成为严重影响现代人生活质量的常见疾病之一。据流行病学研究显示,我国成年人慢性便秘患病率为4%-6%,且呈逐年上升趋势。此外,研究显示,便秘与结肠癌、直肠癌的发生有着直接或间接的关系;便秘还会诱发或加剧冠心病、心绞痛等心血管疾病,导致其猝死;且长期便秘会并加剧肠道内有害细菌大量繁殖,肠道微生物环境失去平衡,并使有毒代谢产物增加,而有毒物质可能被重新吸收进入肝脏,进而造成肝脏功能损坏。
发明内容
本发明的目的在于提供一种改善便秘的酵素组合物及其制备方法,其通过多种原料的共同使用,使酵素原有的整肠通便功效得到进一步提高,从而可用于日常生活中便秘症状的快速改善。
为实现上述目的,本发明采用如下技术方案:
一种改善便秘的酵素组合物,其所用原料按重量份计包括:苹果干细胞冻干粉10-12份、无花果10-15份、费约果10-15份、鹅莓6-10份、朝鲜蓟8-10份、小麦苗6-8份、洋车前子壳粉5-8份、低聚糖粉13-16份。
其中,所述低聚糖粉为低聚果糖粉或低聚葡萄糖粉。
所述酵素组合物的制备方法包括以下步骤:
1)将朝鲜蓟浸入质量浓度5%-8%的盐水溶液中煮沸,再倒入无花果、费约果、鹅莓、小麦苗,在搅拌条件下继续煮制2-3min后捞出,沥干水分,得预处理物料;
2)将预处理物料与洋车前子壳粉一同倒入发酵罐中,加入预处理物料总重0.6-0.8%的复合发酵菌混匀,35-37℃下无氧发酵3-5天;所述复合发酵菌是由双歧杆菌、嗜热链球菌和保加利亚乳杆菌混合而成,三者重量比为3:1:(1~2);
3)发酵结束后,往发酵罐中加入预处理物料总重0.03-0.05%的果胶酶,间歇式搅拌混合1-2h后过滤,滤液冷冻干燥;所述间歇式搅拌采用搅拌25min、暂停5min的方式进行;
4)将步骤3)所得冻干粉与苹果干细胞冻干粉、低聚糖粉混匀,制得所述酵素组合物。
本发明酵素组合物的包装规格为12g/包,饮用时用150-200mL温开水冲泡。
苹果干细胞具有非凡的抗氧化能力,可协助肝脏细胞的解毒功能,并刺激肠道蠕动,提高排毒能力,且苹果干细胞具有较强的吸水溶胀能力,而洋车前子壳粉中由于含有无法被消化吸收的多聚糖,也可以通过吸收水分起到润肠通便的作用。故将苹果干细胞与洋车前子壳粉配合使用不仅可协同提高产品通便整肠的作用,还可增加人的饱腹感,并降低热量的摄取。
无花果含有丰富的蛋白质分解酶、脂酶、淀粉酶等,可促进蛋白质的分解,起到良好的消化作用。费约果中富含维生素C、叶酸、植物纤维等多种物质,具有降脂、排毒、养颜的功效。鹅莓中除富含维生素C外,还含有人体所需的18种氨基酸,且其生物黄酮含量很高,具有开胃、增强人体免疫力、降低血脂和血压的功效。朝鲜蓟风味鲜香,含丰富的维生素和矿物质,且其中的菜蓟素可帮助体内胆汁分泌,参与胆固醇和脂肪的代谢,进而分解脂肪,帮助消化。小麦苗不仅富含蛋白质、维生素、矿物质和活性酶等成分,并具有抗胆固醇、调节体内酸碱平衡、调节血糖浓度的作用。本发明中以无花果、费约果、鹅莓、朝鲜蓟等为原料制备酵素组合物,可综合利用各原料降脂、排毒、促消化的功能,且其中富含的各种营养成分可促进体内有益菌的生长,进一步起到整肠通便的功效。
总之,本发明产品含有大量膳食纤维,可增加肠胃蠕动,起到良好清理肠道、清便排毒的功效,且其显效快速,食用后3-5小时即可排便。同时,本发明产品食用后可增加饱足感,消食瘦身效果明显。
具体实施方式
为了使本发明所述的内容更加便于理解,下面结合具体实施方式对本发明所述的技术方案做进一步的说明,但是本发明不仅限于此。
所用复合发酵菌是由双歧杆菌、嗜热链球菌和保加利亚乳杆菌混合而成,三者重量比为3:1:1。
实施例1
1)将100g朝鲜蓟浸入质量浓度5%的盐水溶液中煮沸,再倒入150g无花果、100g费约果、80g鹅莓、60g小麦苗,在搅拌条件下继续煮制2min后捞出,沥干水分,得预处理物料;
2)将预处理物料与80g洋车前子壳粉一同倒入发酵罐中,加入2.94g复合发酵菌混匀,35℃下无氧发酵5天;
3)发酵结束后,往发酵罐中加入147mg果胶酶,采用搅拌25min、暂停5min的方式进行间歇式搅拌混合1h后过滤,滤液冷冻干燥;
4)将步骤3)所得冻干粉与100g苹果干细胞冻干粉、140g低聚果糖粉混匀,制得酵素样品1。
实施例2
1)将90g朝鲜蓟浸入质量浓度6%的盐水溶液中煮沸,再倒入120g无花果、150g费约果、60g鹅莓、70g小麦苗,在搅拌条件下继续煮制2min后捞出,沥干水分,得预处理物料;
2)将预处理物料与70g洋车前子壳粉一同倒入发酵罐中,加入3.43g复合发酵菌混匀,36℃下无氧发酵4天;
3)发酵结束后,往发酵罐中加入196mg果胶酶,采用搅拌25min、暂停5min的方式进行间歇式搅拌混合1h后过滤,滤液冷冻干燥;
4)将步骤3)所得冻干粉与110g苹果干细胞冻干粉、140g低聚果糖粉混匀,制得酵素样品2。
实施例3
1)将80g朝鲜蓟浸入质量浓度8%的盐水溶液中煮沸,再倒入100g无花果、120g费约果、100g鹅莓、80g小麦苗,在搅拌条件下继续煮制3min后捞出,沥干水分,得预处理物料;
2)将预处理物料与50g洋车前子壳粉一同倒入发酵罐中,加入3.84g复合发酵菌混匀,37℃下无氧发酵3天;
3)发酵结束后,往发酵罐中加入240mg的果胶酶,采用搅拌25min、暂停5min的方式进行间歇式搅拌混合2h后过滤,滤液冷冻干燥;
4)将步骤3)所得冻干粉与120g苹果干细胞冻干粉、160g低聚果糖粉混匀,制得酵素样品3。
对比例1
1)将90g朝鲜蓟浸入质量浓度6%的盐水溶液中煮沸,再倒入120g无花果、150g费约果、60g鹅莓、70g小麦苗,在搅拌条件下继续煮制2min后捞出,沥干水分,得预处理物料;
2)将预处理物料与70g洋车前子壳粉一同倒入发酵罐中,加入3.43g复合发酵菌混匀,36℃下无氧发酵4天;

对比例2
将110g苹果干细胞冻干粉、140g低聚果糖粉混匀,制得对照样品2。
功效试验
选取雄性昆明种小鼠60只,适应性饲养3天后禁食16h,不禁水,然后随机分为6组,将实施例1~3提供的酵素样品及对比例1~2提供的对照样品分别用水溶解后进行灌胃,灌胃剂量为1.0mL/只、0.1g/mL,剩余一组作为空白对照,灌胃给予等量水。
给药30min后灌胃给予一定量碳粉悬浮液,15min后脱颈处死小鼠,并快速解剖分离小肠,分别测量小肠全长及碳粉推进长度(碳粉最前端与十二指肠近端之间的距离),计算小肠推进率,结果见表1。

由表1可见,与对照样品1、2相比,本发明结合运用苹果干细胞冻干粉与果蔬原料制备的酵素组合物能够显著促进小肠蠕动。

1.一种改善便秘的酵素组合物,其特征在于:其所用原料按重量份计包括:苹果干细胞冻干粉10-12份、无花果10-15份、费约果10-15份、鹅莓6-10份、朝鲜蓟8-10份、小麦苗6-8份、洋车前子壳粉5-8份、低聚糖粉13-16份。
2.根据权利要求1所述改善便秘的酵素组合物,其特征在于:所述低聚糖粉为低聚果糖粉或低聚葡萄糖粉。
3.一种如权利要求1所述酵素组合物的制备方法,其特征在于:包括以下步骤:
1)将朝鲜蓟浸入质量浓度5%-8%的盐水溶液中煮沸,再倒入无花果、费约果、鹅莓、小麦苗,在搅拌条件下继续煮制2-3min后捞出,沥干水分,得预处理物料;
2)将预处理物料与洋车前子壳粉一同倒入发酵罐中,加入预处理物料总重0.6-0.8%的复合发酵菌混匀,35-37℃下无氧发酵3-5天;
3)发酵结束后,往发酵罐中加入预处理物料总重0.03-0.05%的果胶酶,间歇式搅拌混合1-2h后过滤,滤液冷冻干燥;
4)将步骤3)所得冻干粉与苹果干细胞冻干粉、低聚糖粉混匀,制得所述酵素组合物。
4.根据权利要求3所述酵素组合物的制备方法,其特征在于:步骤2)所述复合发酵菌是由双歧杆菌、嗜热链球菌和保加利亚乳杆菌混合而成,三者重量比为3:1:(1~2)。
5.根据权利要求3所述酵素组合物的制备方法,其特征在于:步骤3)所述间歇式搅拌采用搅拌25min、暂停5min的方式进行。
