本具体实施方式采用如下技术方案:
饲喂方法如下:试验动物及试验设计:采用单因子试验设计,饲喂玉米青贮和甜高粱青贮,选择体况良好的杜泊母羊(33.40±1.68 kg)14只,平均分为2组,即杜泊羊-甜高粱青贮组(DG)和杜泊羊-玉米青贮组(DY),每组7只。
饲养管理:试验开始前对所有试验羊进行驱虫处理,试验羊采用全舍饲单栏饲养,试验期三个月,正式期结束后进行屠宰;试验期间,青贮料自由采食,饲喂量根据前一天羊只的进食量进行调整,精料补充料和苜蓿颗粒根据动物体重的1%及0.5%分两次饲喂,所有试验羊自由饮水,并定期对圈舍进行消毒。正试期结束后,所有试验动物称重并记录采食量,禁食(24h)禁水(2h),从每个组里选择4只体重接近的试验羊进行屠宰,用于屠宰性能指标测定和样品采集。屠宰性能指标包括宰前活重、胴体重、屠宰率、眼肌面积、背膘厚;肉品质指标包括肉色、pH值、失水率、熟肉率、滴水损失、嫩度、氨基酸及脂肪酸。
测定指标与方法:
(1)屠宰性能指标:
宰前活重(kg):试验动物禁食24h后宰前的重量;
胴体重(kg):试验动物屠宰后放干净血,去头、蹄、尾,开膛除去(肾脏及周围脂肪以外)内脏,整个躯体静置30min后的重量;
屠宰率(%):试验动物明同体重/宰前活重)×100%;
眼肌面积(cm2):测量12-13肋骨之间脊椎上眼肌(背最长肌)的横切面积;
背膘厚:指第12对肋骨与第13对肋骨之间眼肌中部正上方脂肪厚度。
(2)肉品质的测定:
肉色:将色差仪镜头垂直置于最后肋骨处的背最长肌横断面上测定,镜口紧扣肉面(不能漏光),记录 L、a、b值;
pH值:在屠宰后45分钟内,取背最长肌测pH值;
失水率:截取背最长肌5cm肉样一段,平置在洁净的橡皮片上,用直径为2.532cm的圆形取样器,切取中心部分厚度约为1cm背最长肌样品一块并称重,肉样用纱布包好后上下各覆盖18层吸水性好的定性滤纸(中速9厘米),上下各加一块硬质塑料板放置在压力计平台上,加压至35Kg,保持五分钟,撤去压力后称其重量;
熟肉率:取100g剥离肌外膜所附着脂肪的样品放在锅中用沸水蒸45min,然后取出冷却后称重;
滴水损失:取背最长肌(厚度保证2cm),放入4℃冰箱熟化72h后,剔除表面的筋膜与脂肪,放入水浴锅80℃加热至中心温度为70℃,取出肉样吊挂于阴凉干燥处,凉至室温后放入4℃过夜。用直径1cm的取样器沿肌纤维方向取中心部肉样肌肉嫩度剪切力仪测定;
氨基酸测定:氨基酸含量采用盐酸水解法,用835-50型氨基酸自动分析仪使用手册进行测定;
脂肪酸测定:脂肪酸含量采用甲酯化法,制备好待测上清液后,用气相色谱仪(Trans1300)测定。
数据处理:采用SPSS19.0软件进行单因素方差分析且采用Duncan法进行多重比较,分别以P<0.05和P<0.01作为差异显著性和极显著性判断标准。
结果:

在本试验条件下,饲喂裹包甜高粱青贮和裹包玉米青贮对羊肉屠宰性能和肉品质指标基本无无显著影响,但对氨基酸和脂肪酸含量有显著影响,饲喂甜高粱青贮羊肉可提高羊肉中DAA、BCAA、TAA的含量,提高亚油酸(C18:2n6c)、γ-亚麻酸(C18:3n-6)、α-亚麻酸(C18:3n-3)及多不饱和脂肪酸含量,可用于生产对人体健康有积极作用的羊肉。
本具体实施方式以杜泊母羊为研究对象,提供一种可改善羊肉品质的方法,肉羊自由采食裹包型青贮,并根据体重搭配一定量的苜蓿颗粒和精料补充料。通过本发明试验得出:肉羊在饲喂甜高粱青贮时可提高羊肉中鲜味氨基酸(DAA)、支链氨基酸(BCAA)、总氨基酸(TAA)和亚油酸(C18:2n6c)、γ-亚麻酸(C18:3n-6)、α-亚麻酸(C18:3n-3))等多不饱和脂肪酸的含量,使得肉品质得到明显改善。应用此方法可以促进优质羊肉的产出,生产有利于人体健康的羊肉,例如可促进人体内合成代谢、降低患血脂的风险及预防梗塞,是生产优质风味羊肉的有效方法。

2.根据权利要求1所述的一种饲喂甜高粱青贮提高羊肉中功能性成分的方法,其特征在于饲喂管理方法如下:饲喂前先对羊崽进行驱虫处理,饲养时采用全舍饲单栏饲养,让羊自由采食甜高粱青贮,每天的饲喂量根据羊只前一天的进食量进行调整,精料补充料和苜蓿颗粒根据动物体重的1%及0.5%分两次饲喂,养殖中羊自由饮水,并定期对圈舍进行消毒。
