青少年是处于身体发育成长和学习文化知识的最重要阶段,是人一生体格发育和智力发育最活跃的时期,此间,其生长速度、性发育、学习能力、学习效率都与营养状况密切相关。绝大部分青少年在精神上承受着中考、高考等巨大的竞争压力。在这个时期,膳食是否合理、营养是否适宜,对青少年的一生以及对今后社会的素质发展都有重要的影响,它不仅关系到一代人的健康水准,且关系到民族的繁衍昌盛。然而,目前青少年营养保健现状不容乐观,单纯追求升学率,追求出类拔萃的学习成绩,追求商业利益等功利思想导致对青少年健康的忽视。在繁重的学习任务以及高节奏的社会压力下,投入到青少年营养保健上的精力和时间较少,因此,如何能够方便安全有效地改善青少年营养健康状态,保证青少年的正常生长发育成为亟需解决的问题。

本发明还提供一种蚕蛹蛋白营养饮料的制备方法,包括如下步骤:
(1)将蚕蛹蛋白、苦荞多肽、乳清蛋白、柠檬酸、苹果酸、低聚麦芽糖和木糖醇按重量份混合,搅拌均匀;
(2)取CMC-Na和黄原胶,加入15~20mL水加热至完全溶解,加入到步骤(1)中搅拌均匀;
(3)将复合维生素、矿物质、柠檬酸钠、乙基麦芽酚混合后,加入步骤(2)最后所得的溶液中,搅拌均匀成饮料;
(4)将步骤(3)调配好的饮料置于75℃,20~30MPa下均质2次,再在121℃下杀菌3s;
(5)待料温降至85℃时,灌装,密封,再在121℃下灭菌15min,得到蚕蛹蛋白营养饮料。
本发明所述各主要功效成分作用如下:
蚕蛹含有丰富的蛋白质,其所含的蚕蛹蛋白是一种完全蛋白,含有18种氨基酸,其中人体必需的8种氨基酸含量较高,还含有钙、磷、铜、锰、锌、硒、铁等矿物质,丰富的维生素和激素等成分,可以增加脑细胞活力,提高思维能力。
苦荞中所含的生物类黄酮、硒、维生素C、维生素E具有较高的抗氧化性,能有效清除体内自由基,延缓衰老,苦荞多肽不仅可以增强免疫力,提高智力,促进生长发育,还可以促进眼部血液微循环,增进视力,改善青少年视力。
乳清蛋白的消化吸收率较高,具有很高的生物活性,可提高机体抗氧化能力,增强机体免疫力,促进骨骼肌蛋白质合成,还可以促进矿物质、维生素的吸收。

2、本发明采用水提-酶解法提取苦荞多肽,所得的苦荞多肽具有显著的抗氧化作用,将其添加至营养饮料中,制得的营养饮料能有效清除青少年体内自由基,增强青少年免疫力,提高智力,改善青少年视力,缓解青少年繁重课业中的视力疲劳与机体疲劳问题。

所述复合维生素由以下重量份的原材料组成:维生素B10.06~0.1份、维生素B20.03~0.06份、维生素B30.005~0.008份、维生素B50.008~0.015份、维生素D 0.05~0.1份。
所述矿物质由以下重量份的原材料组成:乳酸锌0.01~0.03份、乳酸钙0.1~0.5份、磷酸氢二钠0.05~0.08份、氯化钠0.1~0.2份、氯化钾0.1~0.2份、硫酸镁0.08~0.12份、亚硒酸钠0.0001~0.005份。
所述蚕蛹蛋白的制备方法为:取脱脂蚕蛹粉,按料液比为1:10加入水,用氢氧化钠调节pH为10,在60℃下水浴提取2次,每次90min,过滤,合并提取液,取提取液经4000r/min离心20min,取上清液用盐酸调节pH至4.5,置于4℃冰箱中静置12h,过滤,取沉淀真空干燥得到蚕蛹蛋白。

上述一种蚕蛹蛋白营养饮料的制备方法,包括以下步骤:
(1)将蚕蛹蛋白、苦荞多肽、乳清蛋白、柠檬酸、苹果酸、低聚麦芽糖和木糖醇按重量份混合,搅拌均匀;
(2)取CMC-Na和黄原胶,加入15~20mL水加热至完全溶解,加入到步骤(1)中搅拌均匀;

与实施例1的区别在于,原料配方中没有添加苦荞多肽,具体为:蚕蛹蛋白0.3份、乳清蛋白1份、低聚麦芽糖8份、木糖醇2份、乙基麦芽酚0.001份、柠檬酸钠0.01份、柠檬酸0.02份、苹果酸0.01份、CMC-Na 0.1份,黄原胶0.1份,复合维生素0.2份、矿物质0.4份、水至100份。
对比例3
与实施例1的区别在于,原料配方中没有添加乳清蛋白,具体为:蚕蛹蛋白0.3份,苦荞多肽0.5份、低聚麦芽糖8份、木糖醇2份、乙基麦芽酚0.001份、柠檬酸钠0.01份、柠檬酸0.02份、苹果酸0.01份、CMC-Na 0.1份,黄原胶0.1份,复合维生素0.2份、矿物质0.4份、水至100份。
功效验证
试验例1
取本发明实施例1-5和对比例1-3制备的营养饮料进行成分含量测试,实验结果如下表1所示:

通过实施例1与对比例1的对比可知,在本发明制备的饮料中添加蚕蛹蛋白,可将饮料中的蛋白质、氨基酸和矿物质的含量分别提高43.5%、83.3%和31.4%;通过实施例1与对比例2的对比可知,在本发明制备的饮料中添加苦荞多肽,可将饮料中的蛋白质、氨基酸和矿物质的含量分别提高20%、41.8%和28.4%;通过实施例1与对比例3的对比可知,在本发明制备的饮料中添加乳清蛋白,可将饮料中的蛋白质、氨基酸和矿物质的含量分别提高33.8%、47%和26%。
综上可知,在本发明制备的饮料中加入蚕蛹蛋白、苦荞多肽和乳清蛋白,可有效提高人体所需的蛋白质、氨基酸和矿物质等营养成分,使青少年体内营养均衡,改善因营养匮乏而引起的各种疾病。
试验例2
选择80例健康青少年进行试验,分成8组,每组10人,分别对以上人群采用本发明制备的饮料长期饮用,每天100ml,3个月后,对实验者进行临床化验测试,实验结果如下表2:

由上表,通过实施例1与对比例1的对比可知,在本发明制备的饮料中添加蚕蛹蛋白,可将实验者机体在代谢过程中产生过量的自由基消除率提高16.5%,将血清中超氧化物歧化酶、谷胱甘肽过氧化酶活性分别提高11.9%、18.5%;通过实施例1与对比例2的对比可知,在本发明制备的饮料中添加苦荞多肽,可将实验者机体在代谢过程中产生过量的自由基消除率提高22.7%,将血清中超氧化物歧化酶、谷胱甘肽过氧化酶活性分别提高16.8%、23.1%。
综上可知,本发明制备的营养饮料,具有消除机体在代谢过程中产生过量的自由基,提高血清中超氧化物歧化酶、谷胱甘肽过氧化酶的活性,从而提高机体抗氧化能力,增强机体免疫力,促进青少年的生长发育。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。
Claims (10)
1.一种蚕蛹蛋白营养饮料,其特征在于,由以下重量份的原材料组成:蚕蛹蛋白0.3~0.5份,苦荞多肽0.5~1份、乳清蛋白1~1.5份、低聚麦芽糖8~10份、木糖醇2~4份、乙基麦芽酚0.001~0.005份、柠檬酸钠0.01~0.02份、柠檬酸0.02~0.05份、苹果酸0.01~0.03份、CMC-Na0.1~0.2份,黄原胶0.1~0.2份,复合维生素0.2~0.4份、矿物质0.4~1份、水至100份。
2.根据权利要求1所述的一种蚕蛹蛋白营养饮料,其特征在于,由以下重量份的原材料组成:蚕蛹蛋白0.35~0.45份,苦荞多肽0.65~0.85份、乳清蛋白1.1~1.4份、低聚麦芽糖8.5~9.5份、木糖醇2.5~3.5份、乙基麦芽酚0.0015~0.0045份、柠檬酸钠0.012~0.018份、柠檬酸0.025~0.045份、苹果酸0.015~0.025份、CMC-Na 0.12~0.18份,黄原胶0.12~0.18份,复合维生素0.25~0.35份、矿物质0.6~0.8份、水至100份。
3.根据权利要求2所述的一种蚕蛹蛋白营养饮料,其特征在于,由以下重量份的原材料组成:蚕蛹蛋白0.4份,苦荞多肽0.75份、乳清蛋白1.25份、低聚麦芽糖9份、木糖醇3份、乙基麦芽酚0.003份、柠檬酸钠0.015份、柠檬酸0.035份、苹果酸0.02份、CMC-Na 0.15份,黄原胶0.15份,复合维生素0.3份、矿物质0.7份、水至100份。
4.根据权利要求1~3任一项所述的一种蚕蛹蛋白营养饮料,其特征在于,所述复合维生素由以下重量份的原材料组成:维生素B10.06~0.1份、维生素B20.03~0.06份、维生素B30.005~0.008份、维生素B50.008~0.015份、维生素D 0.05~0.1份。
5.根据权利要求4所述的一种蚕蛹蛋白营养饮料,其特征在于,所述复合维生素由以下重量份的原材料组成:维生素B10.08份、维生素B20.045份、维生素B30.0065份、维生素B50.0115份、维生素D 0.075份。
6.根据权利要求1~3任一项所述的一种蚕蛹蛋白营养饮料,其特征在于,所述矿物质由以下重量份的原材料组成:乳酸锌0.01~0.03份、乳酸钙0.1~0.5份、磷酸氢二钠0.05~0.08份、氯化钠0.1~0.2份、氯化钾0.1~0.2份、硫酸镁0.08~0.12份、亚硒酸钠0.0001~0.005份。
7.根据权利要求6所述的一种蚕蛹蛋白营养饮料,其特征在于,所述矿物质由以下重量份的原材料组成:乳酸锌0.02份、乳酸钙0.3份、磷酸氢二钠0.065份、氯化钠0.15份、氯化钾0.15份、硫酸镁0.1份、亚硒酸钠0.00255份。
8.根据权利要求1~3任一项所述的一种蚕蛹蛋白营养饮料,其特征在于,所述蚕蛹蛋白的制备方法为:取脱脂蚕蛹粉,按料液比为1:10加入水,用氢氧化钠调节pH为10,在60℃下水浴提取2次,每次90min,过滤,合并提取液,取提取液经4000r/min离心20min,取上清液用盐酸调节pH至4.5,置于4℃冰箱中静置12h,过滤,取沉淀真空干燥得到蚕蛹蛋白。
9.根据权利要求1~3任一项所述的一种蚕蛹蛋白营养饮料,其特征在于,所述苦荞多肽的制备方法为:取苦荞麦种子用粉碎机粉碎,过80目筛,按料液比1:9加入蒸馏水搅拌均匀,用0.1mol/L氢氧化钠溶液调节pH至9,浸提1h,取提取液经3800r/min离心10min,取上清液,加入0.1mol/L盐酸,调节pH至4.5,经3800r/min离心10min,所得沉淀物为苦荞麦复合蛋白物,取苦荞复合蛋白物加水配制成5%水溶液,pH值为9,加入1%复合蛋白酶,在55℃水浴恒温振荡器中进行酶解6h,每隔30min滴加氢氧化钠保持pH,酶解结束后,加热升温至85℃,保温10min灭酶,再置于4℃下,经4000r/min离心10min,取上清液浓缩至1g/mL苦荞多肽。
10.一种制备如权利要求1~9任一项所述的一种蚕蛹蛋白营养饮料的方法,其特征在于,包括以下步骤:
(1)将蚕蛹蛋白、苦荞多肽、乳清蛋白、柠檬酸、苹果酸、低聚麦芽糖和木糖醇按重量份混合,搅拌均匀;
(2)取CMC-Na和黄原胶,加入15~20mL水加热至完全溶解,加入到步骤(1)中搅拌均匀;
(3)将复合维生素、矿物质、柠檬酸钠、乙基麦芽酚混合后,加入步骤(2)最后所得的溶液中,搅拌均匀成饮料;
(4)将步骤(3)调配好的饮料置于75℃,20~30MPa下均质2次,再在121℃下杀菌3s;
(5)待料温降至85℃时,灌装,密封,再在121℃下灭菌15min,得到蚕蛹蛋白营养饮料。
