Abstract
本发明涉及一种可溶性搅拌勺,制备所述可溶性搅拌勺的原料包括聚葡萄糖、马铃薯变性淀粉、氯化钙和亚硫酸氢钙,以及可能的蔗糖。本发明的可溶性搅拌勺具有适当的溶解时间,满足各种冲调产品的加速溶解或混合均匀的目的,同时对冲调好的饮料的口感和气味方面不产生影响,将这种可食用、可溶性搅拌勺与冲调饮料组成套装进行出售,丰富市场产品种类。

技术领域
本发明属于食品领域,具体涉及一种可溶性的搅拌勺,以及包含该搅拌勺的冲调饮料套装。
背景技术
冲调饮料是目前市场上液体饮料替代食品,主要包括奶粉系列、麦片系列、咖啡系列、果珍系列、奶茶系列、豆奶系列、蜂蜜系列等,多采用独立小包装,饮用前注入水,一包一杯,携带方便。然而,目前市场上的冲调饮料大多无法达到即冲即溶的效果,在冲调时,会有一部分未溶解部分残留在杯子底部,更为严重的是,当冲调饮料表面湿润后会形成坨状,进一步延长了溶解时间,因此,通常需要使用勺子等工具进行搅拌,以加速溶解或混合均匀。
一般采用的勺子等工具多为金属制品、木制品或塑料制品,每次冲调后需要进行刷洗,而一次性勺子环保性能差,由于成本的限制,还可能带来食品安全等问题。
发明内容
为了解决上述技术问题,本发明人考虑采用可溶性食品原料制成具有勺子形状或能够实现搅拌功能的搅拌勺,使其溶解时间控制在一定范围内,在对冲调饮料进行冲调时,可直接采用搅拌勺进行搅拌,然后逐步溶解在饮料中,达到加速溶解或混合均匀的目的,同时对冲调好的饮料的口感和气味方面不产生影响,进一步地,还可以在可溶性搅拌勺中添加糖,作为调味剂加入冲调好的饮料中,将这种可食用、可溶性搅拌勺与冲调饮料组成套装进行出售,丰富市场产品种类。
因此,在一个方面,本发明提供了一种可溶性搅拌勺,制备所述可溶性搅拌勺的原料包括聚葡萄糖、马铃薯变性淀粉、氯化钙和亚硫酸氢钙。
聚葡萄糖是一种水溶性膳食纤维,无特殊味,可以补充人体所需的膳食纤维,进入消化系统后,产生特殊的生理代谢功能,从而防治便秘,脂肪沉积。在本发明的可溶性搅拌勺中主要用作增稠剂和填充剂,溶于水后无异味,甜味较轻,不影响冲调饮料原有的口感。
马铃薯变性淀粉粘度高、吸水性强,透明度好,增强了可溶性搅拌勺的稳定性,有利于控制搅拌勺的溶解速度。
氯化钙和亚硫酸氢钙主要用作固化剂,增强产品硬度,此外,还可以补充钙质。
优选地,制备本发明的可溶性搅拌勺的原料还包括蔗糖,溶解后增加冲调饮料的甜味,使冲调饮料口感更适应于满足不同消费者的口味。
进一步地,制备所述可溶性搅拌勺的原料包括80-90重量份聚葡萄糖、10-20重量份马铃薯变性淀粉、1-2重量份氯化钙、0.5-1.5重量份亚硫酸氢钙和0-5重量份蔗糖。
本发明的可溶性搅拌勺的制备方法包括如下步骤:
(1)向聚葡萄糖中加入水,升温至100-101℃,搅拌溶解后,趁热过滤;
(2)将滤液降温至60-70℃,加入马铃薯变性淀粉、氯化钙和亚硫酸钙,以及可能的蔗糖,搅拌均匀后,将混合液倒入模具;
(3)将模具转移至冷柜中迅速冷却,成型后脱模,获得可溶性搅拌勺。
本发明的搅拌勺一般性地由手柄和勺体组成,手柄的直径约为2-5mm,长约120-180mm,所述勺体可具有任意形状,能够实现冲调饮料的搅拌,加速溶解或混合均匀的目的即可。
在另一个方面,本发明还提供了包含了所述可溶性搅拌勺的冲调饮料套装,优选地,所述冲调饮料包括但不限于奶粉系列、麦片系列、咖啡系列、果珍系列、奶茶系列、豆奶系列、蜂蜜系列等。
本发明的可溶性搅拌勺具有可食用性,产品定型后硬度较高,可很好地实现搅拌作用,并且在80℃以上的水中完全溶解需要大约15s,在常温(约25-30℃)水中完全溶解需要大约30s,在冰水混合物中完全溶解需要大约80s,能够满足搅拌需要。溶于水中后,无异味,不会对冲调饮料本身的口感造成改变。
具体实施方式
下面结合具体实施例对本发明进行进一步说明。
实施例1
通过以下方法制备可溶性搅拌勺:
(1)向80kg聚葡萄糖中加入120L水,升温至100℃,搅拌溶解后,趁热过滤;
(2)将滤液降温至65℃,加入10kg马铃薯变性淀粉、1kg氯化钙和0.8kg亚硫酸钙,以及3kg蔗糖,搅拌均匀后,将混合液倒入模具;
(3)将模具转移至冷柜中迅速冷却,成型后脱模,获得可溶性搅拌勺,其中,搅拌勺由手柄和勺体组成,手柄直径约3mm,长约150mm。
实施例2
通过以下方法制备可溶性搅拌勺:
(1)向90kg聚葡萄糖中加入120L水,升温至100.5℃,搅拌溶解后,趁热过滤;
(2)将滤液降温至70℃,加入15kg马铃薯变性淀粉、2kg氯化钙和1kg亚硫酸钙,搅拌均匀后,将混合液倒入模具;
(3)将模具转移至冷柜中迅速冷却,成型后脱模,获得可溶性搅拌勺,其中,搅拌勺由手柄和勺体组成,手柄直径约3mm,长约150mm。
实施例3
通过以下方法制备可溶性搅拌勺:
(1)向80kg聚葡萄糖中加入120L水,升温至100℃,搅拌溶解后,趁热过滤;
(2)将滤液降温至60℃,加入20kg马铃薯变性淀粉、2kg氯化钙和0.5kg亚硫酸钙,搅拌均匀后,将混合液倒入模具;
(3)将模具转移至冷柜中迅速冷却,成型后脱模,获得可溶性搅拌勺,其中,搅拌勺由手柄和勺体组成,手柄直径约3mm,长约150mm。
溶解实验:
从实施例1-3中制备的搅拌勺各随机抽取九根进行溶解实验,具体而言,将搅拌勺手柄一端固定在以50r/min的旋转桨上,将搅拌勺完全浸没在0℃(冰水混合浴)、25℃(常温)和80℃的水浴中,观察各搅拌勺溶解情况,记录完全溶解的时间,结果如下表1所示:

由上表可以看出,本发明的可溶性勺具有适中的溶解速度,在80℃以上的水中完全溶解需要大约15s,在常温(约25-30℃)水中完全溶解需要大约30s,在冰水混合物中完全溶解需要大约80s,其溶解速度能够满足各种冲调饮料搅拌的需要。
应用例1
一种速溶咖啡套装,所述套装包含咖啡粉和实施例1制备的可溶性搅拌勺,其中,所述咖啡粉的配料包括即溶咖啡和植脂末,相较于市面出售的即溶咖啡产品而言不含糖。
取一包速溶咖啡套装,将咖啡粉倒入咖啡杯中,加入75mL沸水,用套装中的可溶性搅拌勺进行搅拌,底部无固态或半固态未溶物后,将搅拌勺丢入咖啡杯中,待咖啡温度降至不烫嘴的程度后,进行饮用,咖啡甜度适中,无不良异味,口感与市售产品基本一致。

Claims (7)
1.一种可溶性搅拌勺,制备所述可溶性搅拌勺的原料包括聚葡萄糖、马铃薯变性淀粉、氯化钙和亚硫酸氢钙。
2.根据权利要求1所述的可溶性搅拌勺,其特征在于,制备所述可溶性搅拌勺的原料还包括蔗糖。
3.根据权利要求1或2所述的可溶性搅拌勺,其特征在于,制备所述可溶性搅拌勺的原料包括80-90重量份聚葡萄糖、10-20重量份马铃薯变性淀粉、1-2重量份氯化钙、0.5-1.5重量份亚硫酸氢钙和0-5重量份蔗糖。
4.根据权利要求1或2所述的可溶性搅拌勺,其特征在于,所述可溶性搅拌勺由手柄和勺体组成,手柄的直径为2-5mm,长度为120-180mm。
5.权利要求1-4中任一项所述的可溶性搅拌勺的制备方法,所述方法包括如下步骤:
(1)向聚葡萄糖中加入水,升温至100-101℃,搅拌溶解后,趁热过滤;
